24 wonton wrappers
2 ounces pepperoni, 24 slices (turkey is less oily than the beef)
2 roma tomatoes, medium size
1 scallion, sliced
salt
cracked black pepper, to taste
4 ounces Fontina cheese, grated
1 teaspoon dried thyme

Steps:

  • Preheat oven to 375 degrees F.
  • Carefully fit wonton wrappers into mini muffin tins; no need to grease the pan. Bake for 6 to 7 minutes; remove from oven to cool. Can be done ahead.
  • If serving immediately, lower oven temperature to 350 degrees F.
  • Fold each turkey pepperoni slice into fourths, place one in bottom of baked wonton cups. Cut tomatoes in half, use your index finger to remove as many seeds as possible then finely chop tomatoes, place in a small bowl with the scallion and black pepper. Add a small amount of salt, do not use too much, the meat is spicy; mix well and spoon on top the pepperoni. Add the grated Fontina cheese and sprinkle with dried Thyme. Place in 350 degree oven for 2 to 3 minutes or until cheese is melted and serve.

2 3/4-3 cups all-purpose flour
1 teaspoon sugar
1 (1/4 ounce) packet fast rise yeast
1 cup very warm water (120 F to 130 F)
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1 pint cherry tomatoes
4 ounces Fontina cheese, shredded (1 cup)
3 tablespoons freshly grated parmesan cheese
12 kalamata olives, pitted and cut into slivers
fresh oregano leaves

Steps:

  • Mix 1 cup flour, sugar, and yeast in bowl. Stir in the water and oil until blended. Pulse 1 3/4 cups flour and salt in food processor to mix. Add yeast mixture and pulse until blended. With motor running, add remaining flour, 1 tablespoon at a time, until soft dough forms (you will need to process about 2 minutes). Dough is ready when it comes together in a ball.
  • Dust work surface lightly with flour. Turn out dough and knead until smooth, 1 to 2 minutes. Roll dough into 1 1/2-inch balls in your hands. Then flatten into 3-inch rounds. Cover with clean kitchen towel; let rest 10 minutes.
  • Preheat oven to 450°F Line two baking sheets with parchment paper. Divide dough into 4 pieces. Wrap 3 in plastic; refrigerate. Cut remaining dough into 12 equal pieces; shape each into 1 1/2-inch ball. Arrange on baking sheets; flatten into 3-inch rounds. Lightly coat with nonstick cooking spray.
  • Cut tomatoes into thin slices, then fan out slices. Top each pizza with 2 or 3 slices. Sprinkle with 1 teaspoon fontina, a little Parmesan, plus a few olive slivers and oregano leaves. Bake until bubbly and crust is golden, about 10 minutes. Repeat with remaining dough.
  • Cook's Clue:.
  • To keep dough from sticking to the food processor, lightly coat the inside of the bowl with nonstick cooking spray.

Adapted from Cheesemaking Made Easy, by Ricki Carroll and Robert Carroll, this is an easy way to make your own cheese! Queso blanco is a Latin American cheese. The name means white cheese. There are many variations of this cheese throughout Latin America. It is hard and rubbery, with a bland, sweet flavor. It is excellent for cooking, and has the unique property of not melting even if deep-fried. A similar cheese, Panir, is made in India, and there are many delicious Indian recipes using this cheese. It is easy to make, and is an excellent choice if you are in a hurry or if the weather is very hot, a condition which causes problems in the making of many cheeses. Queso blanco is often diced into half-inch cubes. That way it can be used in many ways, stir-fried with vegetables, added to soups or sauces (such as spaghetti), or used in Chinese cooking as a substitute for bean curd. It browns nicely and takes on the flavor of the food and spices in the recipe. Cook time is an estimate.

1 gallon whole milk
1/4 cup vinegar

Steps:

  • Over a direct source of heat warm 1 gallon of milk to 180 degrees F., stirring often to keep it from scorching. Maintain this temperature for several minutes. Slowly add vinegar until the curds separate from the whey. Usually 1/4 cup of vinegar will precipitate 1 gallon of milk.
  • Pour the curds and whey into a cheesecloth-lined colander. Tie the four corners of the cheesecloth into a knot and hang to drain for several hours or until the bag of curds stops dripping. Take the mass of curds out of the cheesecloth. It will be a solid bag of curd. It may be wrapped in plastic wrap and stored in the refrigerator until needed. It will keep up to 1 week.

2 (13 7/8 ounce) cans pillsbury refrigerated prepared pizza dough
8 ounces mozzarella cheese, cut into 48 cubes
48 slices pepperoni (I prefer turkey)
1/4 cup olive oil
1 teaspoon dried Italian seasoning
3 tablespoons grated parmesan cheese
2 cups pizza sauce or 2 cups marinara sauce, heated

Steps:

  • Preheat oven to 400º.
  • Spray 3 9-inch pie pans with cooking spray.
  • On lightly floured surface, roll out one pizza crust and pat into 12x8 rectangle.
  • Cut into 24 squares.
  • Place one pepperoni slice and one cube of cheese on each dough square. Wrap dough around, pressing to seal.
  • Place in pans, seamside down.
  • Repeat with remaining dough, pepperoni and cheese.
  • Mix together oil and Italian seasoning. Drizzle or brush over rolls.
  • Top with grated parmesan.
  • Bake at 400º for 16-20 minutes or until golden brown.
  • Serve with warmed pizza or marinara sauce.
  • To Freeze: Flash freeze on a cookie sheet until frozen solid, label and place in a ziplock bag.
  • To Reheat: Microwave approximately 30 seconds or more to heat through.
