JAMAICAN SEASONED RICE



Jamaican Seasoned Rice image

This flavorful Jamaican seasoned rice is easy to prepare with long grain brown rice, callaloo, ackee, cabbage, pumpkin, carrot, peas, carrot in a seasoned coconut broth.

3 cups brown rice (long grain) rinsed
2 tablespoons coconut oil
1 medium onion finely chopped
3 cloves garlic minced
1 green onion
1/2 medium red bell pepper
2 sprigs fresh thyme or 1/2 teaspoon dried thyme leaves
1/4 teaspoon ground allspice or 6 berries
1 small tomato chopped
1 medium carrot diced
1 cup pumpkin or butternut squash peeled and diced
1 cup cabbage or bokchoy chopped
1 cup callaloo chopped
1 15-ounce can coconut milk
4 cups vegetable broth or 2 vegan bouillon plus 4 cups water
1 Scotch Bonnet pepper or 1/4 teaspoon cayenne pepper
1/4 cup sweet corn kernels
1/4 cup green peas
1 (15-ounce) can ackee drained
Salt to taste

Steps:

  • Heat oil in a large pot on medium-high heat. Add onion, garlic, green onions, red bell pepper, thyme, and allspice. Cook stirring constantly until onion is soft, about 3 minutes.
  • Add tomatoes, carrot, pumpkin, cabbage, callaloo, brown rice and stir.
  • Add coconut milk, vegetable broth, and top with Scotch bonnet pepper. If using vegetable broth instead of vegan bouillon then you want to season with salt to taste now. It should actually have enough salt that when you taste it, it should taste how you want the finished rice to taste because the rice will absorb some of the flavors as it swells.
  • Cover pot and bring to a boil, reduce heat to simmer for 45 minutes.
  • Gently stir in sweet corn, green peas, ackee, cover the pot and cook for 5-10 minutes or until rice is tender.
  • Fluff with a fork, add additional cooked vegan protein and serve.

2 cups Mahatma® Jasmine Rice
1/4 cup canola oil
2 cloves garlic, minced
1 onion, diced
1 red pepper, diced
2 carrots, diced
1 red chili pepper, seeded and diced
2 tbsp fresh thyme, finely chopped
1 tbsp curry powder
1 tsp salt
1 tsp pepper
4 green onions, thinly sliced

Steps:

  • Step 1
  • Heat oil in a large saucepan set over medium heat; cook garlic, onion, red pepper, carrots, chili pepper and thyme for 3 to 5 minutes or until slightly softened. Stir in jasmine rice, curry powder, salt and pepper; cook for 2 to 3 minutes or until well coated. Step 2
  • Stir in 4 cups of water; bring to boil. Cover and reduce heat to low; cook for 15 to 20 minutes or until rice is tender and most of the liquid is absorbed. Remove from heat. Cover and let stand for 5 minutes; fluff with fork. Sprinkle with green onions. Serving Suggestions Serve with roast turkey, ham, chicken or fish.

2 tablespoons peanut oil
Salt and fresh ground pepper
6 to 8 chicken thighs, halved
2 tablespoons butter
1 medium onion, diced
1/4 cup scallions, chopped
2 sprigs thyme
2 bay leaves
3 cups long grain rice, rinsed
1 tablespoon garlic, chopped
1 1/2 cups butternut squash, small dice
1 1/2 cups frozen peas
5 cups water

Steps:

  • Heat oil in saucepan until just smoking. Salt and pepper chicken pieces and brown both sides in single layers. When all the pieces are browned off, remove chicken from the pan and set aside. Drain oil from pan. Add butter, onion, scallions, thyme, bay leaves, and saute for 4 minutes. Add rice and saute for 4 to 5 minutes more, then add garlic, chicken, squash, peas and water. Bring to a boil then reduce to a simmer and cover for 35 minutes.

  • Add the rice, coconut milk, garlic cloves, salt, allspice, cayenne, and reserved pineapple juice to a medium sauce pot. Use the coconut milk can to add 14 ounces of water to the rice. Stir well. Set over medium heat and cover. Bring to a boil, then stir and lower the heat. Cover and allow the rice to cook until the liquid is absorbed and air holes form in the surface of the rice, about 15-20 minutes. Remove from heat.
  • Meanwhile, add the butter to a large deep skillet and set over medium heat. Add the diced bell peppers and onions. Sauté for 2-3 minutes, to just barely soften. Then remove from heat and add the pineapple tidbits, Old El Paso Green Chiles and Sliced Jalapeños to the skillet.
  • Once the rice is tender and fluffy, dump it into the skillet and toss well to combine. Toss in the fresh chopped cilantro. Taste, then salt and pepper as needed. Serve warm as a side dish, or serve with shrimp or chicken on top!
