CARAMELIZED PANETTONE AND APPLE PUDDING

Panettone is a sweet Italian bread filled with all kinds of dried fruits. While you can broil the sugared top to caramelize the apples, this is the ideal occasion to use a mini blowtorch if you have one. Warning: I am not responsible for any injuries received to yourself if using a blowtorch! :D From Canadian Living 2003 Magazine.

2 1/4 cups milk
1 cup whipping cream
3 eggs
3 egg yolks
1/2 cup granulated sugar
1 tablespoon vanilla extract
6 cups cubed panettone bread (or hallah-egg bread)
2 apples, peeled, cored and sliced
2 tablespoons butter

Steps:

  • in a saucepan bring milk and cream to just a boil, remove from heat. in large bowl, beat together eggs, egg yolks, 1/4 cup of sugar and vanilla. strain milk mixture into egg mixture, gently stirring to blend. add panettone, gently lift and turn to soak cubes. let stand for 30 minutes, stirring gently once or twice.
  • spoon into 6 greased 1-cup ramekins or custard cups, pressing gently. place ramekins in large roasting pan. pour enough boiling water into pan to come halfway up the sides of ramekins. bake in centre of 325*F oven until knife inserted in centre comes out clean, about 40 minutes. remove from water, let cool to room temperature.
  • (Make-ahead) cover and refrigerate for up to 2 days.
  • peel apples, if desired, core and cut into slices. in large nonstick skillet, melt butter over med-high heat, cook apples just until tender and light golden, about 5 minutes.
  • run knife around edge of each pudding. invert onto parchment paper-lined rimmed baking sheet; turn right side up, if desired. arrange apples over puddings, sprinkle with remaining sugar,, broil 6-inches from heat until sugar bubbles and darkens, remove when done, 2 to 6 minutes.
  • serve.

Oh wow! This is seriously good! Slightly tart apples topped with a light sponge and drizzled (before cooking) with a caramel sauce that works its way through the whole dish! Real comfort food! I found this recipe in Australia's 'Delicious' Cooking Magazine and have adapted it slightly. It will serve 8 generously but could stretch to more if necessary.

6 large granny smith apples
250 g plain flour (all purpose)
2 teaspoons baking powder
250 g white sugar
200 ml milk
150 g butter, melted
2 eggs, beaten
1 cup brown sugar (200g)
1/2 cup golden syrup
300 ml water
icing sugar
heavy cream, to serve

Steps:

  • Preheat oven to 180°C (350°F).
  • Butter a large glass or ceramic baking dish approx 32cm x 23cm x 5cm (12" x 9" x 2").
  • Peel, core and slice apples 1cm (approx 1/2") thick.
  • Pile apples into the baking dish, adding more apple if necessary to generously cover the bottom of the dish.
  • Sift flour, baking powder and sugar into a large mixing bowl.
  • Make a well in the centre and add milk, butter and eggs and beat with an electric mixer until the mixture becomes pale and the beaters leave a trail.
  • Spoon batter evenly over the apples and smooth out with the back of a large spoon.
  • Combine brown sugar, golden syrup and water in a small saucepan.
  • Stir over medium heat until the mixture has become liquid and the brown sugar has melted.
  • Stop stirring and allow mixture to come to the boil.
  • Remove immediately from heat and pour evenly over the batter.
  • Place dish on the centre shelf of the preheated 180°C (350°F) oven.
  • Bake for 30-35 minutes or until the top is golden brown.
  • Dust lightly with icing sugar to serve and serve with thick cream.

Whipped cream desserts are a light and lovely affair, especially at the end of a big meal like Thanksgiving. Some people love crunch, but the particular joy of this pudding lies in its voluptuous softness, as it needs to sit in the fridge overnight for the layers to cohere: vanilla cookies, caramel-fried apples and salted cinnamon whipped cream. It's an airy fall dream in dessert form.

4 tablespoons unsalted butter
2 large crisp sweet-tart apples (1 pound), such as Fuji or Pink Lady, unpeeled and finely chopped (see Tip)
1/4 cup lemon juice (from 1 to 2 lemons)
1/4 packed cup dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt (Diamond Crystal)
2 cups very cold heavy whipping cream
1 packed tablespoon dark brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon kosher salt (Diamond Crystal)
1 (11-ounce) box vanilla wafers

Steps:

  • Make the caramel apples: Melt the butter in a large skillet over medium heat. Add the apples, lemon juice, brown sugar, cinnamon and salt and cook, stirring occasionally, until the apples are tender and the liquid is reduced but saucy with the consistency of chunky applesauce, 15 to 20 minutes. Set aside to cool slightly.
  • Meanwhile, make the whipped cream: In a large bowl, using a large whisk or an electric mixer, whisk the cream, brown sugar, cinnamon and salt until soft peaks form. (When you lift the whisk out of the bowl and turn it whisk-side up, a peak of cream should flop over onto itself.) Don't overbeat; you're looking for a soft-set whipped cream that drapes rather than plops.
  • Assemble the pudding: In a medium bowl or other serving vessel (preferably clear), arrange one-third of the vanilla wafers at the bottom, top with half of the caramel apples, then spread with half of the whipped cream. Repeat these layers once more and end with a final sprinkle of crushed vanilla wafers on top. (If you want crunch, save this final sprinkle for right before serving.) Cover and refrigerate until the cookies are soft, about 8 hours and up to 24 hours.

300g golden caster sugar
200ml hot water
about 175g panettone
about 50g unsalted butter , softened
50g golden caster sugar
6large eggs , well beaten
400ml whole milk
284ml carton double cream , plus more double cream to serve

Steps:

  • To make the caramel, put the sugar and hot water into a small, heavy pan over a low-medium heat. Stir occasionally until the sugar has dissolved then raise the heat and boil, without stirring, until the caramel is golden brown.
  • Immediately remove the pan from the heat and quickly pour the caramel into a wide, fairly deep, 1.5 litre/2¾ pint ovenproof dish, swirling it around to cover the base. Set aside.
  • Preheat the oven to 160C/Gas 3/fan oven 140C. Cut the panettone into 1cm/½in thick slices then remove the dark brown, bottom crust. Butter one side of the slices generously. Put in a single layer, butter-side-up, in the dish.
  • Using an electric whisk or food mixer, beat the sugar and eggs in a large bowl for 2 minutes, or until thickened. Heat the milk and cream in a saucepan to just below simmering point, then pour on to the egg mixture and stir to combine.
  • Pour this custard over the panettone, pressing the slices into the liquid. Soak for 10 minutes.
  • Put the dish on to the middle shelf of the preheated oven, and bake for 55-60 minutes. The pudding is ready when the top is pale gold and dry-looking and the custard set to a just-firm shiver - it should not be completely solid as the custard continues to set as it cools. Leave it to rest for 30 minutes before serving with cream.
