CARAMELIZED ONION AND GRAPEFRUIT SALAD

Steps:
- For the caramelized onions: In a large skillet, heat the oil over medium heat. Add the onions, balsamic vinegar, salt and pepper. Cook, stirring occasionally, until the onions are deep golden brown, about 20 minutes. Set aside to cool, about 10 minutes.
- For the dressing: In a small bowl, whisk together the red wine vinegar, lemon juice and honey. Slowly whisk in the olive oil until blended. Season with salt and pepper, to taste.
- For the salad: Peel and trim the ends from each grapefruit. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a large salad bowl. Add the lettuce, fennel, cucumber, scallions, and thyme.
- Pour the dressing over the salad and toss until all the ingredients are coated. Arrange the caramelized onions on top and serve.

- 1. Preheat the oven to broil. Slice a grapefruit in half then sprinkle both halves with sugar. Place in a baking dish and put it on the middle rack to broil. Watch it very carefully so it doesn't burn. Remove it from the oven once the sugar has caramelized, about 2-3 minutes. Eat immediately. Enjoy :)
- 2. (Side Note: Put a thicker layer of sugar on each half if you want a really caramelized crust)
- 3. you may also want to try to broil Ruby Red grapefruits without sugar, delicious either way :)

- In a small nonstick skillet over medium heat, cook and stir pecans and 2 tablespoons sugar for 2-4 minutes or until sugar is melted. Spread on foil to cool., Coat grapefruit segments with remaining sugar. Coat the same skillet with cooking spray; cook grapefruit over medium heat for 2-3 minutes on each side or until browned., In a large bowl, combine the salad greens, cucumber, onions, avocado and bacon. Drizzle with salad dressing and toss to coat. , Divide salad among four serving plates. Top with grapefruit and pecans; sprinkle with pepper.

GRAPEFRUIT "BRULEE"

- Cover a baking sheet with foil and arrange the four grapefruit halves in a single layer on top. Use a paring knife to cut in between the sections of each half, then trace around the edge. This will make the grapefruit pieces easy to remove and eat once the sugar is on top.
- In a medium stainless steel pan, combine the sugar with 1/4 cup water, then swirl over medium heat to blend. Heat until it forms a clear syrup, 3 to 5 minutes. (Do not stir with any utensils.) When the sugar and the water have melted together completely, raise the heat gently and watch as the caramel darkens slightly to amber, 2 to 3 minutes more.
- Pour the hot caramel over the tops of all the grapefruits halves and let cool, 3 to 5 minutes. The sugar should form a hard shell on top.
CARAMELIZED GRAPEFRUIT CHIPS

- Preheat oven to 175 degrees. Line two baking pans with Silpats. With a very sharp knife, slice grapefruit into 1/16-inch-thick slices. Place slices on prepared baking pans.
- Place confectioners' sugar in a strainer; sprinkle over grapefruit. Turn chips over, and coat with remaining sugar. Bake until chips glisten and have a syrupy coating, 1 1/2 to 2 hours.
- Remove baking pans from oven; with tongs, turn chips over. Return baking pans to oven, rotating shelves. Cook until lightly golden and crispy, 1 1/2 to 2 hours. Transfer chips to rack to cool and harden.
GRAPEFRUIT MIMOSAS

- Using a sharp knife, cut off tops and bottoms of grapefruits and oranges. Cut away peel, pith, and outer membranes; cut fruit segments from membranes, collecting juice and segments in bowl. Squeeze juice from membranes before discarding.
- Drain grapefruit and orange segments, reserving juice. Place each candied grapefruit bowl in a glass; fill with citrus segments. Pour champagne over each; garnish with grapefruit chips. Serve reserved juice in glasses with breakfast.

- Preheat oven to 200 degrees. Line a baking sheet with a Silpat baking mat or parchment paper; set aside.
- Using a mandoline or very sharp knife, slice pears lengthwise into very thin, translucent rounds (do not remove seeds or cores; they will soften after cooking).
- Place sugar on a plate; dip fruit slices in the sugar, turning to coat both sides. Transfer to a baking sheet, arranging slices in a single layer.
- Bake until pear edges begin to curl, about 1 hour. Turn slices over. Bake until golden brown, about 1 hour more.
- Transfer chips to a wire rack, in a single layer; let cool completely and harden.
