Let the caramel cool a bit before serving -- but not too much. Keep the fondue warm in a double boiler 10 to 30 minutes before you serve it. Dessert fondues are delectable with basic partners, including cookies, berries, marshmallows, and candied ginger.

2 cups sugar
1 cup heavy cream
1 vanilla bean, split lengthwise and seeds scraped
Assorted accompaniments for dipping

Steps:

  • In a saucepan, combine sugar and 1/4 cup water. Cook over medium-low heat, stirring with a wooden spoon, until sugar has dissolved. Cover; bring mixture to a boil. Keep covered, about 1 minute, to let condensation wash down inside of pan to prevent crystals from forming (or wash down sides of pan with a wet pastry brush).
  • Raise heat to medium-high. Without stirring, cook, swirling pan, until mixture turns a medium to dark amber. At arm's length, carefully add cream (it will spatter). Add vanilla-bean seeds to pan, and whisk to combine. Transfer to a fondue pot, and set over a warming candle. Serve immediately with assorted accompaniments, as desired.

1 cup heavy whipping cream, divided
3/4 cup sugar
1/2 cup light corn syrup
1/4 cup butter
1/4 teaspoon salt
1/2 teaspoon vanilla extract
Pound cake and assorted fresh fruit, cut into pieces

Steps:

  • In a heavy saucepan, combine 1/2 cup cream, sugar, corn syrup, butter and salt. Bring to a boil over medium heat until a candy thermometer reads 234° (soft-ball stage), stirring constantly. Cool to 220°; stir in remaining cream. Bring to a boil. Remove from the heat; stir in vanilla., Transfer to a fondue pot and keep warm. Serve with pound cake and fruit.

1/3 cup milk (or more if needed)
8 ounces soft cream cheese

Steps:

  • Combine caramels, milk, and cream cheese in a large Dutch oven; cook over low heat, stirring constantly, until caramels melt and mixture is smooth.
  • Add additional milk if mixture is too thick for dipping.
  • Spoon into fondue pot or chafing dish.

1 (16-ounce) bag semisweet chocolate morsels
1 cup store-bought caramel sauce
1/2 cup milk (preferably not skim)
Assortment of "dunking" ingredients:
Sliced bananas
Sliced apples
Sliced peaches
Angel food cake, cut into cubes
Marshmallows
Graham crackers

Steps:

  • Melt the chocolate in a double boiler or in a large bowl set over simmering water or in the microwave for a few minutes on HIGH (stirring every minute). Stir in the caramel sauce and milk until blended and smooth.
  • Remove from the heat and transfer to a serving bowl. Arrange the fruit, cake, and other goodies around the chocolate mixture and start dunking!

1 cup whipping cream
1/2 cup caramel topping

Steps:

  • Melt ingredients on stove top over med. heat, stirring until mixture is melted and smooth. Place in fondue pot and watch closely so that it doesn't boil or scorch.
  • Serve with dippers such as: strawberries, bananas, pretzels, pound cake or angel food cake, marshmallows, dried fruit. etc.

  • In a heavy 3-qt. saucepan, combine the butter, brown sugar, milk, corn syrup and water; bring to a boil over medium heat. Cook and stir until a candy thermometer reads 230° (thread stage), 8-10 minutes. Remove from the heat; stir in vanilla. , Transfer to a small fondue pot or 1-1/2-qt. slow cooker; keep warm. 2 cups sugar
1/2 cup corn syrup
1/4 cup water
1 1/2 cups heavy cream
2 ounces cups unsalted butter, cut into tablespoons
2 teaspoons pure vanilla extract
1 lb cake, angelfood cake,brownies,bananas,pineapple,pears and apples,for dipping
shaved chocolate, chopped nuts,grated coconut and minced dried fruit,for sprinkling

Steps:

  • In medium saucepan, combine the sugar with the corn syrup and water.
  • Cook over low heat, stirring occasionally, until the sugar dissolves, about 10 minutes.
  • Increase the heat to moderately high and simmer, brushing down the sides of the saucepan occasionally with a wet brush, ntil the syrup starts to turn golden.
  • Gently swirl the pan and continue to simmer until a deep amber caramel forms, about 40 minutes total from the time you started.
  • Remove the saucepan from the heat.
  • Carefullyl stir in the heavy cream, then stir in the butter until melted.
  • Return the saucepan to the heat and bring the caramel just to a simmer.
  • Remove from the heat and stir in the vanilla.
  • Let the caramel cool for 30 minutes, whisking occasionally.
  • Pour the caramel into a heatproof serving bowl or fondue pot set over low heat and serve with the cake, fruit and garnishes.
  • The caramel can be refrigerated for 1 week.
  • Rewarm gently over low heat.

I bought caramel candies before I looked on racipezaar for a recipe, but when I got home and looked for a recipe, I couldn't find one that called for caramel candies and only served a few people and didn't have lots of other ingredients that I did not have on hand. So this is what I came up with. It was very tasty. It is the right amount for one apple and one banana and some tortilla chips which, believe it or not, are delicious in the caramel sauce as it is like yummy warm caramel corn! I served this with other snack food for four adults and one young child. It seemed to be the right amount. Use caution with your fondue pot, mine sits over a candle and the caramel started to scorch on the bottom.

6 ounces caramel candies, I used Werther's Original Chewy Caramels
2 tablespoons butter or 2 tablespoons margarine
2 tablespoons milk

Steps:

  • Remove plastic wrap from caramels.
  • Slowly melt caramels with butter and milk in a small sauce pan over med. low heat, stirring often.
  • Add a little more milk if it is too thick.
  • When melted and mixed well, pour into a small fondue pot to keep warm.
  • Serve with sliced fruit and tortilla chips.
  • Stir occasionally and watch for scorching as it can become to hot near the heat source.
  • ENJOY!
