VIETNAMESE CARAMELISED PORK BOWLS
Recipe video above. An exciting way to use ground meat (mince) to make a quick stir fry that taste unbelievable! This is great made with chicken, turkey or pork. It also works with beef though it is better made with "white meats". Serve it over rice or vermicelli noodles to make rice bowls with shredded lettuce, carrots and cucumbers on the side (very classic Vietnamese meal!).

- Heat the oil in a large skillet over high heat.
- Add the onion, ginger, garlic and chili and cook for 2 minutes.
- Add the pork mince and cook for 2 minutes or so until white all over, breaking up the meat with a wooden spoon.
- Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts caramelised - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised to your taste.
- Serve over rice or vermicelli noodles, garnished with sliced scallions/shallots. For a low carb, low cal option, try Cauliflower Rice! I like to have chunks of plain cucumber and carrots on the side which is a classic way of making Vietnamese bowls.

- Preheat oven to 325 degrees. Place eight 4-ounce ramekins in a large roasting pan. Add 4 tablespoons water to a small pot. Add 1 cup sugar and stir to dissolve. Cook over medium-high, swirling occasionally, until caramel begins to turn amber, 6 to 8 minutes. Working quickly, divide caramel between ramekins, swirling ramekins to coat bottoms evenly, set aside.
- In a medium pot, heat milk over medium until hot, but not boiling. In a medium bowl whisk together whole eggs and yolks, salt, and remaining 1/2 cup sugar. While whisking, ladle some milk into the egg mixture. Whisk in remaining milk, one ladle at a time. Strain through a fine sieve into a large liquid measuring cup, and stir in vanilla. Divide custard evenly among ramekins.
- Transfer roasting pan to oven. Add enough boiling water to come halfway up the sides of the ramekins. Bake until custards are just set, about 35 minutes.
- With tongs, remove ramekins from hot water and let cool slightly. Cover and refrigerate until cold, at least 3 hours (or up to 3 days). To unmold, run a sharp knife around inside of each ramekins and invert onto a serving plate, gently shaking to release.
CARAMEL POPCORN BOWL

- For the caramel popcorn bowl: Spray the inside of a 4-quart glass mixing bowl with nonstick cooking spray. Spray the outside of a smaller (3-quart) glass mixing bowl. Set aside. In a large heatproof bowl, toss together the popcorn and peanuts.
- In a medium saucepan, melt the butter. Add the brown sugar, corn syrup and salt and stir until well combined, taking care not to get sugar crystals stuck to the sides of the pot. Bring to a boil and cook until a candy thermometer inserted in the mixture reads 300 degrees F.
- Pour the caramel mixture over the popcorn and peanuts. Stir with a rubber spatula to evenly coat all of the popcorn mixture. While still hot, pour the coated popcorn into the greased 4-quart mixing bowl. Use the smaller bowl to push the popcorn against and up the sides to form the walls of the bowl. Refrigerate to set.
- In the meantime, over a double boiler or in a microwave at intervals, melt the white chocolate together with the coconut oil, stirring to combine. Remove the popcorn bowl from the refrigerator. Use a rubber spatula, spoon and/or pastry brush to coat the inside of the bowl completely with the melted white chocolate. Place back in the refrigerator to set for at least 1 hour and up to overnight.
- For the popcorn filling: Remove the bowl from the refrigerator and fill with your favorite flavor of popcorn. Serve or wrap up for a gift.

- Lightly oil the outside of an eight-ounce ladle. Working over a piece of parchment or baking sheet drizzle the caramel coating from a tablespoon over the ladle, making thin intersecting lines. Turn ladle right-side up, and place 2 ice cubes inside the ladle. Swirl to cool the coating, being careful not to spill the ice or any drops of water on the caramel. Let the caramel set completely.
- Gently cup the ladle with your hand, and ease the hardened caramel off the ladle. Immediately transfer bowl to an airtight container. Empty ice, dry ladle, and re-oil; repeat with the remaining coating. If necessary, caramel coating can be reheated over low heat. Store in airtight container up to 2 days.

- Heat 1½ tbsp of oil in a large non-stick frying pan over high heat. Add pork and cook undisturbed for 1 minute. Add a pinch of salt and black pepper then cook for 4 minutes or until brown. Transfer the pork to a colander to remove the excess liquid and fat. Drain and set aside.
- Heat 1½ tbsp of oil in a large skillet over high heat. Add shallots, cook for 1 minute, then add ginger and chili and cook for 1 minute. Add garlic and cook for about 15 seconds. Keep stirring.
- Add the browned pork back into the pot and stir. Add fish sauce and brown sugar. Stir then let it cook undisturbed to caramelize for about 1 minute. Stir again for a few seconds and let it cook undisturbed for another 1 minute. Gently scrape up the burnt bits from the bottom of the pan to prevent burning. Repeat this process if necessary or until you reach the desired consistency or crispiness. The pork meat should turn into a golden brown with caramelized flavors and fully-cooked. Adjust seasoning with salt and pepper if necessary.
- Add chopped scallions, lime zest, and lime juice. Give it a quick stir for a few seconds, then turn off the heat. Serve with white rice or lettuce. Enjoy!
