FLUFFY CARAMEL APPLE SALAD

I don't remember where I originally got this recipe, but I am glad I have it! The ingredients sound strange, but trust me, it's delicious!!

4 granny smith apples, cut into bite-sized pieces
1/2 cup sugar
8 ounces crushed pineapple
2 tablespoons flour
2 tablespoons apple cider vinegar
1 egg
8 ounces Cool Whip
1 cup dry roasted peanuts, chopped

Steps:

  • Beat egg.
  • Combine egg, flour, sugar, juice from the can of pineapple and vinegar in a saucepan.
  • Stir on low heat until the consistency is like pudding.
  • Refrigerate until completely cool.
  • When cold, fold in Cool Whip.
  • Add apples and pineapple and stir gently until completely coated.
  • Just before serving, sprinkle chopped peanuts on top.

I got this recipe from my little sister. It was called Caramel Apple Salad, but I personally don't think butterscotch pudding tastes like caramel apples... nonetheless, it is a delightful sweet side dish/salad or dessert. Other recipes I've seen on 'Zaar all have pineapple, so I am posting this one as it does not. I prefer Granny Smith or another tart apple in this salad as it is quite sweet, but you can use whatever apples you have on hand. :) Prep time includes chilling time; may also be frozen.

1 (8 ounce) container Cool Whip
1 (4 ounce) box instant butterscotch pudding mix
3 cups diced apples
1 cup roasted peanuts
1 cup mini marshmallows
additional peanuts, chopped, for garnish

Steps:

  • In a medium mixing bowl, stir together Cool Whip and butterscotch pudding mix until smooth and uniform. (Note: you do NOT make the pudding prior to this step, you simply combine the dry mix with the whipped topping.).
  • In a large mixing bowl, combine diced apples, peanuts, and marshmallows. Add the Cool Whip mixture and fold together gently until completely combined.
  • Cover and refrigerate until ready to serve, or scoop into a lightly greased baking dish, cover with plastic wrap and freeze. Serve frozen salad cut into squares--you may need to defrost for a few minutes to half an hour so that it will cut neatly. Garnish with chopped peanuts.

I came up with the recipe after finding other caramel apple salads on here. I loved the idea, but I don't like cool whip or instant pudding so I substituted greek yogurt and dulce de leche, which you can make out of a can of sweetened condensed milk. Both of the stovetop method and the slow cooker method have worked for me. Here is the slow cooker recipe that I used: http://www.food.com/recipe/crock-pot-dulce-de-leche-420669. This recipe does provide a whole serving of yogurt and fruit.

1 quart Greek yogurt
2 cups chopped apples
1/2 cup peanuts, shelled (optional)

Steps:

  • Combine the dulce de leche and the greek yogurt until smooth.
  • Stir in the chopped apples and peanuts (if using) until well combined.
  • Let chill for a couple of hours before serving.

  • Stir whipped topping, pineapple, and butterscotch pudding mix together in a bowl until smooth. Fold apples and peanuts into pudding mixture until salad is well mixed.

2 large Red Delicious apples, diced and unpeeled
1 (8 ounce) container Cool Whip, thawed
1 cup dry roasted peanuts (not salted)
1 cup mini marshmallows
1/4 cup crushed dry roasted peanuts (for topping)

Steps:

  • In large bowl, add dry pudding mix to Cool Whip, and beat until blended, scraping bottom and sides of bowl.
  • Add remaining ingredients and mix well.
  • Turn into serving dish and sprinkle with crushed peanuts.
