A summer staple! The thing that sets this Caprese Salad apart from the usual is that it's tossed with a garlic-herb vinaigrette first then finished with a balsamic glaze. Keeps it looking "clean" with terrific flavour! Serve as a side, on toast with avocado or as a light meal with bread.

220 g/7oz bocconcini / baby or cherry mozzarella (, halved (Note 1))
500 g / 1 lb cherry or grape tomatoes (, halved)
1/2 cup basil leaves (, torn or roughly chopped)
Balsamic glaze / reduction (, for drizzling (Note 2))
1 small garlic clove (, minced)
1/2 tsp Dijon mustard ((or other non spicy mustard))
2.5 tbsp extra virgin olive oil
1 tbsp white wine vinegar ((Note 3))
1/4 tsp each dried oregano (, parsley, thyme (or rosemary))
1/2 tsp salt
Black pepper

Steps:

  • Place Dressing ingredients in a jar and shake very well. Adjust to taste.
  • Place tomatoes, bocconcini and most of the basil in a bowl. Drizzle over dressing, toss gently.
  • Transfer to shallow serving bowl. Just before serving, drizzle with balsamic glaze and sprinkle with remaining basil.
  • Serve immediately.

1 1-pound ball fresh mozzarella, sliced 1/4 inch thick
10 to 15 slices prosciutto (3 to 4 1/2 ounces)
2 to 3 large heirloom tomatoes, sliced 1/2 inch thick
1 1/2 cups heirloom cherry tomatoes, halved
3 tablespoons extra-virgin olive oil
2 tablespoons white balsamic vinegar
Flaky sea salt and freshly ground pepper
1/2 cup torn fresh basil

Steps:

  • Line a baking sheet with parchment paper. Wrap each mozzarella slice with prosciutto until mostly covered. Put on the prepared baking sheet and cover with plastic wrap. Freeze until firm, about 30 minutes.
  • Preheat a grill to medium high. Grill the prosciutto-wrapped mozzarella until the prosciutto is crisp and the cheese just starts to melt, about 1 minute per side.
  • Arrange the prosciutto-wrapped mozzarella and sliced tomatoes on a platter, overlapping slightly. Top with the cherry tomatoes. Drizzle with the olive oil and vinegar and season with salt and pepper. Top with the basil.

2 jars (7-1/2 ounces each) marinated artichoke hearts
2 tablespoons red wine vinegar
2 tablespoons olive oil
6 plum tomatoes, sliced
1 pound fresh mozzarella cheese, sliced
2 cups loosely packed fresh basil leaves
Coarsely ground pepper, optional

Steps:

  • Drain the artichokes, reserving 1/2 cup marinade. In a small bowl, whisk vinegar, oil and the reserved marinade. , On a large serving platter, arrange the artichokes, tomatoes, mozzarella cheese and basil. Drizzle with vinaigrette. If desired, sprinkle with coarsely ground pepper.

3 Tbs. STAR Extra Virgin Olive Oil
3 Tbs. STAR Red Wine Vinegar
1 large bunch basil leaves
6 roma tomatoes sliced lengthwise 1/4 inch thick
2 (8 oz.) balls fresh whole-milk mozzarella sliced 1/4 inch thick

Steps:

  • Drain marinated artichoke hearts and set aside, reserving marinade. In small bowl, whisk olive oil, vinegar and reserved marinade. Alternately layer basil leaves, tomatoes, cheese and artichoke hearts on platter. Rewhisk marinade and drizzle to taste over entire platter (use any remaining marinade as salad dressing). Serve immediately. Alternatively, salad can be composed on 6 small individual plates.

Best at the height of tomato season, it embellishes on the classic caprese, taking its five simple elements - mozzarella, tomatoes, basil, salt and olive oil - and adding roasted peppers, caperberries (or capers), olive and prosciutto. The result is a luscious lunch or light dinner that will make your dining companions swoon. You will wonder why you didn't think of it sooner. Serve with a crusty loaf of bread on the side.

2 ripe bell peppers, 1 red and 1 yellow if possible
Salt and pepper
Extra-virgin olive oil
1 pound fresh mozzarella, at room temperature
2 pounds ripe tomatoes, in assorted colors if possible
1/2 pound cherry tomatoes, in assorted colors if possible
Handful of caperberries, or 1 tablespoon large capers, rinsed
Handful of good-quality olives
6 thin slices of prosciutto, more if desired
Handful of basil leaves

Steps:

  • To roast peppers, set them directly in the flames of a stovetop gas burner turned to high, or over hot coals if you happen to be grilling. (You could also roast under the broiler, with peppers as close to heat source as possible.) Turn peppers with tongs until skins are blackened and blistered all over, 5 to 7 minutes. Remove to a plate and let cool. To peel, cut peppers lengthwise. Scrape seeds and veins away with your knife, then turn peppers over and scrape away charred skin. Slice peeled peppers into 1/2-inch ribbons and place in a small bowl. Season with salt and pepper, then add 1 tablespoon olive oil and toss. (Peppers may be roasted up to a day ahead.)
  • Cut mozzarella into 1/4-inch slices. Cut tomatoes into 1/2-inch slices and halve cherry tomatoes.
  • Arrange mozzarella slices in the center of a large platter. Surround with tomatoes and sprinkle lightly with salt. Add roasted pepper strips, caperberries and olives. Drape prosciutto around the platter. Garnish with basil leaves. Drizzle generously with olive oil and serve.
