SOUTH AFRICAN YELLOW RICE



South African yellow rice image

This easy and tasty side dish is the classic accompaniment to bobotie, but works well with much more.

Number Of Ingredients 6

1 cup basmati rice (200g)
2 tsp oil
1/2 tbsp brown sugar
1 tsp turmeric
2 tbsp raisins (or sultanas/golden raisins)
2 cup water (480ml)

Steps:

  • Rinse the rice well under running water until the water runs clear. Alternatively, put in a pot/bowl and cover with water, agitate the rice with your hands then drain. Repeat at least once.
  • Put the rinsed rice in a pot with the oil, sugar, turmeric and raisins. Pour in the water, stir to mix everything together then cover the pot.
  • Place the pot over a medium-high heat to bring to a boil, reduce to a simmer and allow to cook until all of the water has been absorbed, around 10minutes. Stir to mix before serving.

This is a traditional South African recipe, which comes from the great culinary tradition of the Cape Malays -- originally brought in as slaves in the 17th century. It's easy and plain, but great with meats like venison, corned beef tongue or any meat with gravy. Also usually served with Bobotie: There is a good recipe by Caryn on this site.

1 cup long grain white rice
½ teaspoon salt
1 ½ teaspoons ground turmeric
3 tablespoons white sugar
½ teaspoon ground cinnamon
½ cup black raisins
1 tablespoon butter
2 ½ cups water

Steps:

  • In a saucepan, combine the rice, salt, turmeric, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered. When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed. Remove from the heat and fluff with a fork. Keep warm until serving time.
