Butter, to grease the pie plate
2 cups fresh or frozen cranberries
1/2 cup sugar
1/2 cup walnuts, chopped
2 eggs
3/4 cup butter, softened
1 cup sugar
1 cup flour
1 teaspoon almond extract

Steps:

  • For the Filling: Preheat the oven to 350 degrees F.
  • Place the cranberries in a buttered, 10-inch pie plate. Toss the sugar and walnuts over the berries.
  • For the Topping: Cream the eggs and the butter with the sugar. Add the flour and almond extract to the mixture, lightly tossing with a fork.
  • Pour the topping over the cranberry mixture and bake for 35 to 40 minutes. Serve warm with whipped cream.

6 ounces ready shortbread crust
1 (8 ounce) package cream cheese, softened
1 pint whipping cream
1/4 cup sugar
1/2 teaspoon vanilla extract
1 (16 ounce) can whole berry cranberry sauce

Steps:

  • In a large mixing bowl, beat cream cheese until fluffy.
  • In small mixer bowl, beat whipping cream, sugar and vanilla until soft peaks form.
  • Gradually add to cream cheese, beating until smooth and creamy.
  • Set aside a few whole cranberries from sauce for garnish.
  • Fold remaining sauce into whipped mixture. Spoon into pi e crust. Freeze 4 hours until firm.
  • Garnish with reserved berries.
  • Remove from freezer 15 minutes before serving.

2 1/2 cups cranberries, fresh or frozen and thawed
1/2 cup sugar
3/4 cup chopped pecans
2 eggs
1 cup sugar
1 cup flour
1/2 cup butter, melted
1/4 cup shortening, melted

Steps:

  • Grease a 10-inch pie plate.
  • Add cranberries and spread out evenly.
  • Top cranberries with 1/2 cup sugar and pecans.
  • In a mixing bowl, add the eggs.
  • Gradually beat in 1 cup of sugar.
  • Add the flour, butter, and shortening, beating until just smooth.
  • Pour the batter over the cranberries.
  • Bake at 325 degrees for 1 hour or until the top is golden.
  • Serve warm with ice cream.

Dough for single-crust pie
3 tablespoons all-purpose flour
1/4 teaspoon salt
1 cup water, divided
3/4 cup sugar
6 cups fresh blueberries, divided
1/2 teaspoon white vinegar
Sweetened whipped cream or vanilla ice cream

Steps:

  • On a lightly floured surface, roll crust to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool completely on a wire rack., In a small bowl, mix flour, salt and 1/3 cup water until smooth. In a large saucepan, combine sugar, 1 cup blueberries and remaining water; bring to a boil. Stir in flour mixture. Return to a boil, stirring constantly; cook and stir until thickened, 4-6 minutes. Stir in vinegar and remaining blueberries; pour into crust., Refrigerate until filling is set, 4 hours. Serve with whipped cream.

1 1/4 cups fresh cranberries or 1 1/4 cups frozen cranberries
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons unsalted butter
3 tablespoons canola oil
3/4 cup sugar
2 large eggs, lightly beaten
2/3 cup orange juice
3/4 cup toasted walnuts, coarsely chopped

Steps:

  • Position racks in the upper and lower thirds of the oven; preheat oven to 375 degrees F.
  • Line 14 muffin cups with paper or foil cupcake liners.
  • Place the cranberries in a food processor and pulse until coarsely chopped; set aside.
  • In medium bowl, whisk together the flour, baking powder, baking soda and salt; set aside.
  • In small saucepan, combine the butter and oil and heat until the butter melts.
  • Stir in sugar; it will not dissolve.
  • In large bowl, use a wooden spoon to stir together the eggs and orange juice.
  • Stir in the sugar-butter mixture, then add the dry ingredients and mix until just moistened.
  • When the flour is almost incorporated, stir in the cranberries and walnuts.
  • Fill the muffin cups until almost full with batter, about 1/4 cup each.
  • Bake for 18-20 minutes, one pan on each shelf.
  • Halfway through baking, rotate the pans front to back and switch them from one shelf to the other.
  • Bake until the muffins are golden brown and the tops are springy to the touch.
  • Cool on a wire rack.
