This strawberry and cantaloupe salad is an easy and delicious summer side.

2 cups strawberries, chopped into quarters
1 cantaloupe, scooped into balls
zest of one lime
juice of one lime
3 teaspoons cane sugar
1/4 cup mint, roughly chopped

Steps:

  • Combine the strawberries and cantaloupe into a medium mixing bowl.
  • Mix the lime zest, lime juice, sugar, and mint in a small bowl till thoroughly combined.
  • Top the fruit with the lime mixture and stir to combine.
  • Serve immediately or allow to chill in the refrigerator for one hour before serving, to allow the flavor to develop.

4 cups cantaloupes, cubed, room temp
2 1/2 cups halved strawberries, room temp
1 tablespoon orange juice
8 ounces vanilla yogurt, drained
1/2 cup graham cracker crumbs
1/2 cup dark brown sugar
1/4 cup all-purpose flour
1/4 cup butter, cut in 4 pieces
1/2 cup chopped pecans
ice cream or frozen yogurt

Steps:

  • Adjust the oven rack 8 to 10" below the broiler element. Preheat the broiler. Spread fruit in bottom of a two-quart gratin pan and sprinkle with orange juice.
  • Spread yogurt evenly over fruit in a thin layer.
  • In a food processor fitted with metal blade, add crumbs, sugar and flour.
  • Pulse two to three times.
  • Add butter and pulse until the consistency of coarse meal.
  • Add nuts and pulse once.
  • Sprinkle over yogurt.
  • Place under broiler for about 2 to 3 minutes or until browned.
  • Watch carefully because topping burns easily.
  • Serve immediately with ice cream or frozen yogurt.

¾ cup chopped pecans
½ cup brown sugar
½ cup all-purpose flour
3 tablespoons butter, softened
1 cup white sugar
½ cup vegetable oil
2 eggs
1 cup pureed cantaloupe
1 ½ teaspoons vanilla extract
1 ½ cups all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
½ teaspoon salt
½ cup finely diced cantaloupe
1 teaspoon lemon zest, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 10 jumbo muffin cups or line with paper muffin liners.
  • Mix pecans, brown sugar, 1/2 cup flour, and softened butter together in a bowl until mixture is crumbly.
  • Beat 1 cup white sugar and oil together in a bowl with an electric mixer until smooth. Add eggs one at a time, beating well after each addition. Beat pureed cantaloupe and vanilla extract into sugar mixture.
  • Whisk 1 1/2 cup flour, baking powder, cinnamon, and salt together in a mixing bowl. Stir flour mixture into cantaloupe puree mixture; gently fold in cantaloupe chunks and lemon zest. Pour batter into prepared muffin cups.
  • Bake in the preheated oven for 25 minutes. Remove from oven and sprinkle pecan mixture over the top of each muffin. Continue baking until a toothpick inserted into the center comes out clean, about 10 more minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.

1/3 cup sugar
1/4 cup butter, softened
1 egg
2 1/3 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1 1/2 cups fresh strawberries or 1 1/2 cups frozen strawberries, chopped
1/4 cup sugar
1/8 cup flour
1/2 teaspoon cinnamon
1/8 cup butter

Steps:

  • Cream butter and sugar together in a bowl.
  • Add egg, mix well.
  • In a separate bowl, combine flour, baking powder and salt.
  • Add to creamed mixture, together with milk.
  • Stir in vanilla, followed by strawberries.
  • Fill 12 paper-lined muffin cups with batter.
  • In a small bowl, mix together sugar, flour and cinnamon, then cut in butter until mixture is crumbly.
  • Sprinkle over muffins.
  • Bake at 375 F for 25-30 minutes or until browned.

1 9-inch baked pie crust
1 (3 ounce) package cream cheese
1 tablespoon milk
1 cup ripe strawberry
1/2 cup water
1/2 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
1 tablespoon butter
1 teaspoon grated lemon, rind of
red food coloring
3 cups fresh cantaloupe balls

Steps:

  • Combine cream cheese and milk and spread over the bottom of the pre-baked pie shell.
  • Crush strawberries slightly and combine with water; simmer for 5 minutes then press throgh a sieve.
  • Discard the seeds.
  • Blend sugar, cornstarch, and salt, then stir into strawberry mixture.
  • Cook over a medium heat, stirring constantly until the mixture comes to boil.
  • Continue stirring over low heat for 2 minutes.
  • The mix will be thick and translucent.
  • Remove from heat and stir in butter and lemon peel.
  • Add a few drops red food coloring, mix inches.
  • Cool until lukewarm.
  • Place cantaloupe balls in pie shell on top of cream cheese mix.
  • Spoon strawberry glaze over them.
  • Let glaze set before serving.
