GREEN BEANS-CANNING-RAW PACK

Steps:
- Wash beans.
- Drain.
- Remove strings and trim ends.
- Cut into 2 inch pieces.
- Pack beans into a hot quart jar leaving 1 inch head space.
- Add Salt.
- Ladle boiling water over beans-again leaving 1 inch head space.
- Wipe rims and adjust 2 piece caps.
- Process quarts for 25 minutes at 10 pounds pressure.
- **Shouldyou wish to use pints use 1/2 t salt and process 20 minutes at 10 pounds pressure.
CANNED GREEN OR WAX BEANS (WATER BATH METHOD)

Steps:
- Pack beans loosely in sterilized jars, leaving an inch of headroom.
- Bring remaining ingredients to a boil in a large pot.
- Pour over beans, to within 1/2 inch of the top. Wipe edges of jars with a clean cloth and seal with sterilized lids.
- Process in hot water bath for 30 minutes.
- Can be served heated in the liquid from the jar or drained and rinsed, then heated.

EASY CANNED GREEN BEANS
These green beans don't taste like they came out of a can. They are full of flavor and a family favorite. The vinegar gives them a real twist!

- Add Water, Vinegar, Boulion cube and Oil.
- Bring to a boil.
- Turn down to medium.Simmer for approximatly 45 minutes, or until most all the liquid has evaporated.

Steps:
- Cut green beans to fit inside pint canning jars.
- Place green beans in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, for 3 minutes. Plunge beans into ice water. Drain well.
- Pack the beans into four hot, sterilized pint jars. Place 1 clove garlic and 2 sprigs dill weed in each jar, against the glass. Add 1 teaspoon of salt to each jar.
- In a large saucepan over high heat, bring vinegar and water to a boil. Pour over beans.
- Fit the jars with lids and rings and process for 10 minutes in a boiling water bath.

- Begin the Pressure-Canning Process. While maintaining the highest heat setting, let the steam flow (exhaust) continuously for 10 minutes. Then place the weight on the vent port or close the petcock.
- Remove Jars from Canner and Cool. When the processing time is complete, turn off the heat, remove your canner from the heat (if possible), and let the canner depressurize naturally.
