Candied pumpkin is a delicious dessert that has its roots wet in Mexican cuisine. It is also known as Calabaza En Tacha. It is sweet, and tenderly cooked pumpkin pieces that taste rich and are utterly delicious.

2 pounds pumpkin deseeded and cut into wedges
2 cups water
1 orange zest and juice
1 cup organic brown sugar or coconut sugar
2 teaspoons vanilla
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt

Steps:

  • On a stovetop, place a skillet.
  • Add water, orange juice, orange zest, organic brown sugar, vanilla extract, cinnamon powder, nutmeg, and pink Himalayan salt.
  • Mix well using a wooden spoon until the sugar is dissolved.
  • Once the sugar is dissolved, place pieces of pumpkin in the liquid in such a way that one side should be submerged in it.
  • Cook the pumpkin for 15 minutes on high heat, flipping every 3 minutes or so. Flipping the pumpkin often will help in creating an even color.
  • Cook for another 15 minutes, the sauce should be reduced to syrup and the pumpkin will be soft and tender.

Number Of Ingredients 12

1 - 15 oz candied yams - drained & pureed
1 - 15 oz can - pumpkin - not pie mix
3/4 c sugar
3/4 tsp cinnamon
2 tsp fresh grated ginger
1/4 tsp nutmeg - optional
1 tsp salt
1/4 c maple syrup
1 c each - milk & heavy cream
1 tsp vanilla
3 eggs + 2 yolks
1 prebaked warm pie crust

Steps:

  • 1. In a food processor or blender - add the yams and puree. In a large sauce pan or dutch oven, add the pumpkin, ginger, pureed yams, sugar, cinnamon, nutmeg and salt. Cook for 20 minutes. Stirring constantly.
  • 2. Remove from burner and cool to luke - warm. In a bowl whisk eggs, cream and vanilla.
  • 3. Whisk in the egg mixture to the pumpkin mixture, until well blended.
  • 4. Preheat oven to 400 degree F. Now, pour the yam - pumpkin filling into the prepared warm pre - baked pie crust and baked for 10 minutes. Reduce oven temp to 300 and bake until pie is set around the edges and center is just a little jiggly... about 30 - 35 minutes or longer depending on oven. If crust begins to get too dark, cover the crust with foil.
  • 5. Cool for at least 4 hours and serve alone or with a big dollop of whipped cream.

¼ cup unsalted butter
3 cups fresh pumpkin, cut into 1/2-inch cubes
⅓ cup white sugar
¾ cup maple syrup
1 tablespoon minced fresh ginger
½ teaspoon ground cinnamon

Steps:

  • Melt the butter in a large skillet over medium-low heat. Cook the pumpkin in the butter until tender, about 20 minutes. Add the sugar and stir until dissolved. Stir in the syrup, ginger, and cinnamon; remove from heat and allow to cool. Transfer to a bowl and cover. Refrigerate at least 2 hours before serving.

  • Make the Pie Crust: Process ¾ cup flour, sugar and salt in a food processor until combined, about two 1-second pulses. Add the butter and shortening and process until homogenous dough just starts to collect in uneven clumps, about 10 seconds; dough will resemble cottage cheese, but there should be no uncoated flour. Scrape the bowl with a rubber spatula and redistribute dough evenly around the blade. Add the remaining ½ cup flour and pulse until the mixture is evenly distributed around the bowl and the mass of dough has been broken up, 4 to 6 quick pulses. Turn the mixture into a medium bowl.
  • Sprinkle the vodka and ice water over the mixture. With a rubber spatula, use a folding motion to mix, pressing down on the dough until the dough is slightly tacky and sticks together. Flatten the dough into a 4-inch disk. Wrap in plastic wrap and refrigerate for at least 45 minutes or up to 2 days.
  • Remove the dough from the refrigerator and roll it out on a generously floured work surface to a 12-inch circle. Roll the dough loosely around the rolling pin and unroll into pie plate, leaving at least 1-inch overhang on each side. Ease the dough into the plate by gently lifting the edge of dough with one hand while pressing into plate bottom with other hand. Refrigerate for 15 minutes.
  • Trim the overhang to ½ inch beyond lip of pie plate. Fold overhang under itself; folded edge should be flush with edge of pie plate. Using thumb and forefinger, flute the edge of dough. Refrigerate the dough-lined plate for at least 2 hours.
