CANDIED BACON GOAT CHEESE BLUEBERRY GRILLED CHEESE
Brown sugar candied bacon, fresh blueberries and creamy goat cheese are combined in this decadent, gluten free Grilled Cheese Sandwich Recipe!

Steps:
- Preheat the oven to 400°F.
- Place the bacon and brown sugar in a plastic bag.
- Toss to coat.
- Lay the bacon strips across a wire rack on top of a baking sheet.
- Place in the oven for 20 minutes.
- Remove the bacon from the oven and allow to cool for 10 minutes.
- Meanwhile, begin preparing the sandwiches.
- Place ½ tbsp of butter on each side of bread.
- Flip the bread and place ½ tbsp of goat cheese on the other side of the bread.
- Place 2 strips of bacon on one side of the bread and a few blueberries on the other side.
- Sandwich together and place in a skillet over medium heat.
- Cook for 5 minutes per side or until the bread is browned.

This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

- Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
- Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
- Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

- In a medium bowl, combine the sugars with the pepper, mixing until well blended. Line two cookie sheets with parchment paper or quick-release foil (regular foil works just as well) and spread the sugar mixture over the sheets. Press one strip of bacon at a time into the sugar mixture, then flip it over to coat the other side. Place the bacon strips side by side on the sugar as you finish, to form a single layer in the pan.
- Repeat with the remaining bacon on the other cookie sheet. Preheat the oven to 400 degrees. Place the cookie sheets in the oven and bake for 15 to 20 minutes, or until the bacon is darkened and cooked through. Remove sheets from oven and let cool for 5 to 7 minutes.
- Once the bacon has cooled and hardened, cut the strips in half and top each with a dollop of goat cheese.

- 1. Preheat the oven to 400° F. Line a baking sheet with parchment paper.2. On the baking sheet, toss together the bacon, 1 tablespoon rosemary, the brown sugar, 1 teaspoon honey, and the cayenne. Arrange in an even layer. Tear the dates and scatter them around the bacon. Bake 8-10 minutes, until the bacon is crisping.3. Meanwhile, combine the goat cheese, cream cheese, olive oil, and a pinch of salt in a food processor and pulse until smooth and creamy. The goat cheese mix can be kept in the fridge for up to 3 days, but bring to room temp before serving. 4. In a small bowl, combine 1/3 cup honey, 1 tablespoon rosemary, a pinch of cayenne - to taste, and a pinch of salt. 5. CANDIED BACON GOAT CHEESE TOASTS W/ HONEY LAVENDER DRIZZLE

- Pre-heat oven to 350F. Fit a wire rack inside a baking sheet, then line with strips of bacon. Using a pastry brush, coat the bacon strips on both sides with approximately 3 tablespoons of the maple syrup, then bake on oven middle rack for 25 minutes until crisp but not overdone. Once cooked, immediately coat the bacon on both sides with the remaining maple syrup, then allow to cool. Meanwhile, in a small mixing bowl combine the honey and lavender oil. Start with 1/4 cup honey, then add more if the lavender taste is a bit strong for your liking. Toast the sourdough bread to your desired level of crispiness. When ready, compose the toasts with a thick schmear of goat cheese, candied bacon, and drizzles of lavender honey. Eat immediately!
BACON WRAPPED GOAT CHEESE
Our local supermarket sells this fantastic little appetizer which they make in neighboring France. Seasoned goat cheese is rolled up in bacon and baked until gooey and the bacon browned. Serve with Baguettes, or baked potatoes. Even my wife who won't come near goat cheese likes this recipe. Easy to whip up and makes a great party appetizer.

Steps:
- Preheat oven to 400°F.
- Freeze the goat cheese for five to ten minutes if too soft and gooey so you can roll it into 8 lumberjack-thumb sized logs.
- Sprinkle with salt and pepper, and roll in the chives.
- Wrap with bacon so that the whole log is covered.
- Place in an aluminum foil boat, or a shallow glass pan (i.e. a pie tin).
- Bake for ten minutes, or until the bacon is golden brown and the cheese bubbly.
- You can do these on the grill too if you have an aluminum grill pan. Or in a pan on the stove over medium heat turning occasionally so that it is evenly browned.
