APPLE TART
For 15 years my husband, daughter and I owned and operated an apple orchard, where we raised 27 variations of apples on 2,200 trees. This easy apple tart recipe is my personal favorite. - In a 10-in. cast-iron or other ovenproof skillet, heat 3/4 cup sugar, stirring constantly until it is liquefied and golden brown. Remove from the heat. , In a small bowl, combine the flour, cinnamon and remaining sugar. Arrange half the apples in a single layer in skillet. Sprinkle with half the sugar mixture. Arrange half the remaining apples in circular pattern over sugar; sprinkle with remaining sugar mixture. Place remaining apples over all, keeping the top as level as possible. Dot with butter. , Roll out dough to 11-in. circle; place over apples, pressing gently to completely cover. Do not flute. Bake at 400° until apples are tender and golden brown, about 50 minutes. Cool 5 minutes before inverting onto a serving plate.

CANDY APPLE PIE

- Preheat oven to 400°. In a large bowl, toss apples with lime juice. Combine sugar, flour, cinnamon and salt; add to apples and toss lightly. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake until golden brown and apples are tender, 40-45 minutes., For topping, melt butter in a small saucepan. Stir in brown sugar and cream; bring to a boil, stirring constantly. Remove from the heat and stir in pecans. , Pour over top crust. Bake until bubbly, 3-4 minutes longer. Place on a wire rack. Serve warm.

APPLE TART WITH TOSSED GREENS, CANDIED WALNUTS AND SHERRY VINAIGRETTE

- Clean the greens and dry them with paper towels and/or a salad spinner to remove excess moisture.
- Preheat oven to 400 degrees F.
- Lay the pastry on a parchment lined baking sheet, and cut into 6 (4-inch) circles, removing the excess dough. In a small bowl toss the apple slices with cinnamon, nutmeg, brown sugar and juice. Brush the puff pastry with the egg wash and arrange the apple slices daisy-petal style on top of each circle. Bake for 12 to 15 minutes, remove to a rack and let cool.
- Place the vinegar, onion, chives, and oil in a container and shake to combine. Toss the greens, tomatoes and candied walnuts in the dressing to coat, and season with salt and pepper.
- Arrange the seasoned greens on top of the puff pastry and serve immediately.
CANDIED APPLE PIE
I like to use a lattice top crust because the red apples show through the crust and make a beautiful presentation. At Christmas I sprinkle green decorating sugar on the lattice crust (any other time plain sugar).

- Preheat oven to 350 degrees F.
- Filling: Place apples, red hots, sugar and water in large saucepan. Bring apple mixture to a boil until red hots and sugar are dissolved (apples should not be completely cooked). Take off heat. Add almond extract and tapioca to mixture. Let cool till room temperature.
- Crust: Using food processor, pulse flour, pecans, salt, butter and sugar together. When you can't see large butter chunks, add water one tablespoon at a time. When dough forms, wrap in plastic wrap and place in refrigerator for 1/2 hour to 1 hour. Roll out on lightly floured board. Place bottom crust in buttered pie pan. Spoon room temperature apple mixture into bottom pie crust. Roll out remaining crust.
- Bake for 45 minutes.
- Serve with whipped cream, vanilla ice cream or all by itself.
CANDY APPLE PIE
Now for something a little different...I hope you enjoy this lovely recipe as much as we do. You can use any type of apple that you like, but we prefer the tart ones with this dish. Real comfort food for the soul.

- Preheat oven to 400 degrees Prepare crust for a double crust pie.
- Set aside.
- In a large bowl combine all ingredients for filling.
- Blend well and pour into pie shell.
- Dot with butter cubes and top with remaining pie crust.
- Cut three of four steam vents on top of pie.
- Bake in a 400 degree oven for 45 minutes.
- Pie Topping Put butter, brown sugar and cream in small pot and bring to a boil, remove and add pecans.
- Then pour over pie crust and return pie to oven for 5 minutes, until bubbly.
- This pie is wonderful served with sharp cheddar cheese or French vanilla bean ice cream.
