Canadian bacon is a lean, smoked meat that is more similiar to ham than to bacon. It comes from the loin cut. A buttery California Chardonnay with an oaky smokiness will echo the richness of the cream and Cheddar cheese and the saltiness of the bacon here. Try the 2000 Acacia Carneros or the 2000 Chateau St. Jean Sonoma County.

2 tablespoons unsalted butter
1/2 lb white mushroom, stems discarded, caps thinly sliced
5 ounces thickly sliced Canadian bacon, cut into 1/2-inch dice (1 cup)
2 tablespoons chopped flat leaf parsley
1 1/2 teaspoons fresh ground pepper
10 large eggs
1 quart heavy cream
1 teaspoon kosher salt
cayenne pepper
6 ounces sharp cheddar cheese, shredded (2 cups)

Steps:

  • Preheat the oven to 350°. Butter a 9-by-13-inch glass baking dish. In a large skillet, melt the butter. Add the mushrooms and cook over moderate heat until their liquid evaporates, about 5 minutes. Raise the heat to moderately high and cook, stirring, until browned, about 3 minutes. Transfer the mushrooms to the prepared baking dish. Toss the bacon, parsley and pepper in the baking dish, then spread in an even layer.
  • In a large bowl, whisk the eggs well. Whisk in the cream, salt and a pinch of cayenne. Slowly pour the custard over the mushrooms and bacon and sprinkle the cheese over the top. Bake the custard for 50 minutes, or until just set. Transfer to a rack to cool for 15 minutes, then cut into squares and serve hot or warm.

1 cup heavy cream
1/2 cup diced Canadian bacon
1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
8 ounces shredded sharp cheddar cheese
1 pie crust, store bought or homemade

Steps:

  • Pre-heat oven to 350 degrees. Whip the eggs, heavy cream, salt and pepper in a large bowl, then mix in the Canadian bacon and cheese. Fit pie crust into a pie pan. Pour in egg mixture. Bake for 35 - 45 minutes until golden brown and quiche is just set in the center. Remove from oven, let cool 5 minutes before slicing.

½ cup chopped onion
5 slices peppered bacon
6 eggs, lightly beaten
⅔ cup sour cream
¼ teaspoon salt
1 ½ cups fresh or frozen corn (thawed if frozen)
¾ cup shredded Cheddar cheese
Reynolds Wrap® Aluminum Foil

Steps:

  • Preheat oven 325 degrees F. Wrap tortillas in Reynolds® Aluminum Foil and bake for 10 minutes or until soft. Arrange the tortillas to make a crust in a Reynolds® Bakeware Pie Pan, overlapping and trimming as needed, and making sure the edges stay below the top edges of the pan.
  • Cook onion and bacon in a large skillet until onion is tender and bacon is crisp. Drain on paper towels.
  • Whisk together eggs, sour cream, and salt in a large bowl. Add onion mixture, corn, and cheese; mix well. Pour egg mixture into tortilla-lined pie pan.
  • Bake 35 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover edge of crust with aluminum foil to prevent overbrowning.
  • Let stand 10 minutes before serving.

1 cup all-purpose flour
3/4 teaspoon salt, divided
1/2 cup plus 3 tablespoons cold butter, divided
1/2 cup 4% small-curd cottage cheese
3 large sweet onions, sliced (about 6 cups)
4 ounces Canadian bacon, diced
1/4 teaspoon pepper
3 large eggs, lightly beaten
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a small bowl, mix flour and 1/4 teaspoon salt; cut in 1/2 cup butter until crumbly. Gradually add cottage cheese, tossing with a fork until dough holds together when pressed. Shape into a disk., On a floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge., In large skillet, heat remaining butter over medium heat. Add onions; cook and stir until golden brown. Stir in Canadian bacon, pepper and remaining salt. Remove from heat; add eggs and cheddar cheese. Pour into crust., Bake on a lower oven rack 40-45 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

A delicious make ahead that you can freeze for later-- how convenient is that. More time to enjoy my family! Timing does not include chilling pastry. Hope you like as much as we have. I have changed the original method for making pastry and think it works much better.

7 tablespoons cold unsalted butter
1/2 cup 4% large curd cottage cheese
3/4 cup flour
1 tablespoon flour
1 1/2 teaspoons unsalted butter
1/2 cup onion, diced
1/2 garlic clove, minced
1 cup cheddar cheese, shredded
4 ounces Canadian bacon, diced
6 eggs
1/4 teaspoon black pepper
1 dash cayenne pepper

Steps:

  • In mixing bowl, use beaters to cream butter, add cottage cheese and beat with mixer, using spoon gradually stir in flour.
  • Form into disk, cover with plastic wrap, and chill for at least 1 hour or up to two days. I cut plastic wrap big enough so that I can later roll pastry out on it so clean up is easy.
  • Roll out pastry to fit a 9 inch pie plate.
  • Transfer pastry to greased pie pan.
  • Trim pastry to 1/2 inch beyond edge of plate; flute edges.
  • In skillet, sauté onions in remaining butter (1 1/2 t.) until golden brown. It is important to get the onions done to your preference because the baking steps do not cook it much more than this step does.
  • Remove skillet from heat.
  • Stir in garlic and set aside.
  • Put cheese at bottom of pastry, top with Canadian bacon.
  • in large bowl, add egg and peppers, lightly beat, stir in onion mixture from skillet.
  • Pour into pastry shell.
  • At this point, either wrap well and freeze or bake at 350 degrees for 40 to 45 minutes or until a knife inserted near the center comes out clean. (After 25 minutes, I peek to see if crust is browned enough and cover just the crust with foil so it is browned just enough. I hate real dark crust. It is not easy to do but worth it IMO.) Let sit for 10 minutes before cutting.
  • TO USE FROZEN QUICHE: Remove frozen quiche from freezer 30 minutes before baking. Put rack in middle. Preheat oven to 350 degrees. Place pie on a baking sheet. Bake at 350 degrees for 40 minutes, then cover with foil and move to lowest shelf and bake another 25 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.

Nonstick vegetable oil spray
1 1/4 pounds russet potatoes, peeled, sliced into 1/4-inch rounds
1 tablespoon olive oil
1 cup chopped onion
1 cup chopped red bell pepper
1/2 teaspoon dried thyme
1 cup diced Canadian bacon
8 large eggs
1/4 teaspoon salt
1/4 teaspoon ground black pepper
4 ounces smoked cheddar cheese, grated (about 1 cup packed)

Steps:

  • Preheat oven to 350°F. Spray 10-inch glass pie dish with vegetable oil spray. Steam potato rounds until just tender, about 6 minutes. Transfer to rack and cool. Line prepared pie dish with enough potato rounds to cover, overlapping slightly (reserve any remaining potatoes for another use).
  • Heat olive oil in heavy large saucepan over medium-high heat. Add onion, red bell pepper and thyme and sauté 5 minutes. Add Canadian bacon; sauté until heated through, about 1 minute. Spoon bacon mixture over potatoes in pie dish.
  • Whisk eggs, salt and pepper in large bowl to blend. Mix in cheese. Pour egg mixture over bacon mixture in dish. Bake quiche until set in center, about 35 minutes. Cool 20 minutes. Cut into wedges. Serve warm or at room temperature.

1 (3 ounce) can bacon bits
½ cup chopped onion

1 cup half-and-half cream

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
  • Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
  • Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.
