Low Country Boil is a Southern favorite that's a great crowd pleaser! Tender shrimp are boiled with hearty potatoes, smoked sausage, sweet corn, and the delicious old bay seasoning. This easy one-pot meal is perfect for a party as well as a casual weeknight dinner!

Steps:
- Fill a large pot with about 4 quarts of water. Add old bay seasoning, quartered lemons, smashed garlic, potatoes, and onions. Then bring to a boil.
- Boil for about 10 minutes or until potatoes are just beginning to become tender.
- Add the corn and sausage. Cook for 4-5 more minutes.
- Add the shrimp and cook for about 2 minutes until the shrimp becomes pink and opaque.
- Turn off the heat and reserve 1 cup of the broth.
- Drain the liquid, and transfer the shrimp and vegetables to a platter or dump onto newspaper.
- Serve with reserved broth, optional melted butter, and chopped parsly.

LOW COUNTRY BOIL
This dish is indigenous to Savannah and our lifestyle. Calling up a dozen friends for a cookout is a great casual way to entertain, especially if the food is cooked outside over an open flame (you can also use a portable gas fish cooker). Once the Low Country Boil has been cooked and drained, I like to pour it out on a table covered with newspaper.

- Fill a large pot with enough water to cover all ingredients. Add crab boil and heat until boiling. Adjust crab boil to suit your taste. When boiling, add potatoes and sausage. Cook on medium heat for 20 minutes. Add corn and cook for an additional 10 minutes. Add shrimp and cook for no more than 3 minutes (do not overcook!). Drain and serve with piping-hot bread and ice-cold beer.

- Spray 7-quart slow cooker with cooking spray. Place potatoes in slow cooker. Add water, beer, seafood seasoning, celery and onion. Squeeze lemons over mixture in slow cooker; add lemon halves to slow cooker.
- Cover; cook on Low heat setting 3 hours. Add sausage and corn. Cover; cook 2 hours longer.
- Increase heat setting to High. Add shrimp to slow cooker; stir gently. Cover; cook 15 minutes or until shrimp are pink. Turn off slow cooker; let stand 15 minutes. Drain. Serve with cocktail sauce.
