Gold Chanterelles with Sun Dried Tomato Pesto image

1 large onion
2 teaspoons olive oil
1 pound fresh chanterelles
1 ounces dry white wine, plus 1 ounce
1 large red bell pepper
3 ounces pitted, brined, black olives
2 to 3 cloves garlic
1 ounce Marsala
1 teaspoon tamari
6 tablespoons sundried tomato pesto, or approximately 1/3 cup rehydrated sundried tomatoes
French bread rounds
Grated Parmesan

Steps:

  • Chop the onion into small pieces. Preheat pan or skillet, add 2 teaspoons olive oil to heat, add onions, and begin to saute. While onions are cooking, clean the chanterelles (preferably without water, by using a brush, paring knife, and damp cloth), and cut into small pieces.
  • Keep an eye on the onions, adding 1 ounce of wine as they begin to stick. Clean and chop the pepper, drain, rinse, and chop the olives and peel and chop (or use press) the garlic.
  • After about 1/2 hour of cooking, the onions will be partially caramelized. Add the garlic to the onions, then mix in the chanterelles, with a splash of wine. Stir the mushrooms frequently. They should begin to release their own natural moisture into the pan after a few minutes of cooking. If the liquid builds up more than 1/2 inch in the pan, carefully pour off the excess liquid, reserving it for later use. Simmer for about 10 minutes, then add the pepper and olives and 1 ounce of marsala. If there's extra chanterelle liquid, add it back at this time. Cover and simmer another 5 minutes. Everything should be tender. Add tamari and sun dried tomato pesto, mix well, and serve over small French bread rounds. Garnish with grated Parmesan.

2 (28-ounce) cans whole peeled tomatoes, drained
4 scallions
1/4 seedless cucumber, unpeeled and seeds removed
1 large red onion
6 garlic cloves
1/2 cup red wine vinegar
1/2 cup good olive oil, plus extra for toasts and drizzling
1/2 teaspoon celery salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons tomato paste
1 1/2 cups tomato juice, preferably Sacramento
Kosher salt and freshly ground black pepper
1 baguette
4 ounces garlic and herb goat cheese, such as Montrachet

Steps:

  • Cut the tomatoes, scallions, cucumber, and onion in large pieces and place them in a food processor fitted with the steel blade. Add the garlic and pulse until the soup is coarsely pureed. Place it in a large bowl and whisk in the vinegar, olive oil, celery salt, red pepper flakes, tomato paste, tomato juice, 1 tablespoon salt, and 1 1/2 teaspoons pepper. Cover with plastic wrap and chill for 4 hours or overnight.
  • When ready to serve, preheat the broiler and place the top rack 5 to 7 inches from the heat. Cut 6 (1/2-inch-thick) diagonal slices from the baguette. Place on a sheet pan, brush with olive oil, and broil for 1 to 2 minutes on one side. Turn the slices, spread with the goat cheese, and broil for another minute, until the cheese is warm and the bread is toasted. Serve big bowls of cold soup with a warm goat cheese crouton and a drizzle of olive oil.

Mixed Greens with Roasted Cherry Tomatoes and Fried Goat Cheese Croutons image

1 cup cherry tomatoes, halved
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
1 cup pecans
6 to 8 cups mixed greens
1 ripe pear, such as D'anjou, cored and sliced into 1/4-inch slices
1/4 cup champagne vinegar
1/4 cup freshly squeezed orange juice
1 teaspoon honey
1 teaspoon country Dijon mustard
1 small shallot, finely chopped
1/2 cup olive oil
Kosher salt and freshly ground black pepper
3/4 cup vegetable oil
One 8-ounce log goat cheese
1/4 cup all-purpose flour
1 large egg, slightly beaten
3/4 cup panko breadcrumbs

Steps:

  • For the salad: Place the tomatoes on a baking sheet, drizzle with some olive oil and sprinkle with salt and pepper. Roast until tender and starting to brown, about 20 minutes. Let cool.
  • Meanwhile, toast the pecans in a large skillet over medium heat, tossing occasionally, until fragrant, 3 to 4 minutes. Let cool, then chop.
  • For the vinaigrette: Whisk together the champagne vinegar, orange juice, honey, Dijon and shallot in a medium bowl. Slowly whisk in the olive oil; season with some salt and pepper.
  • For the goat cheese croutons: Heat the vegetable oil in a medium skillet over medium-high heat. Slice the goat cheese into 8 equal rounds. Add to 3 shallow dishes, the flour, egg and panko. Coat each goat cheese round with flour, then egg and then panko, shaking off excess, and fry until golden on both sides, about 1 minute per side. Transfer to a paper-towel lined rack or plate.
  • To assemble the salad, toss the greens, pear, pecans and tomatoes in a large bowl. Drizzle with some vinaigrette and gently toss to fully combine. Divide the salad among 4 salad plates, top each with 2 goat cheese croutons, and serve.

3 cups dry red wine
2 cups beef stock or canned broth
1/4 cup Marc de Bourgogne or good-quality brandy
1 large onion, chopped
2 small carrots, chopped
4 garlic cloves, sliced
1 teaspoon dried thyme
1 teaspoon dried rosemary
10 peppercorns
12 parsley stems
4 whole cloves
4 allspice berries
1 bay leaf
3 pounds beef chuck, cut into 2 inch pieces
Salt and pepper
1/4 pound slab bacon (rind removed and reserved) sliced lengthwise 1/4 inch thick, crosswise into pieces 1/2inch wide
2 tablespoons butter
1 tablespoon oil
1 tablespoon tomato paste
1 pound pearl onions
4 tablespoon butter
Pinch of sugar
1 pound button mushrooms
Beurre Manie (equal parts flour and softened butter, mixed together, about 1 tablespoon each)
6 slices firm white bread, crusts removed, cut into heart shapes
3 tablespoons unsalted butter, melted
1/4 cup minced fresh parsley

Steps:

  • In a large bowl combine marinade ingredients and beef. Chill, covered, overnight. Drain beef, reserving marinade and vegetables separately; pat beef dry and season with salt and pepper.
  • Preheat oven to 275/F. Cover bacon and rind with cold water, bring to a boil and simmer 3 minutes. Drain. In a large casserole set over moderate heat cook bacon lardons in butter and oil, stirring often, until golden. With a slotted spoon transfer lardons to paper towels to drain.
  • In casserole over moderately high heat brown beef in bacon fat, in batches. Pour off all but 1 tablespoon of fat from casserole. Add reserved vegetable mixture and cook, stirring, for 5 minutes. Add reserved marinade liquid, tomato paste, reserved bacon rind and salt and pepper, bring liquid to a boil and cook in oven, covered, 3 hours. Skim fat from stew and drain meat and vegetables, reserving cooking liquid. Return liquid and meat to casserole.
  • Meanwhile make vegetable garnish: In a skillet cover onions with water, add 1 tablespoon of butter, sugar and salt and pepper to taste. Simmer onions until almost tender. Raise heat to high and reduce cooking liquid to 2 tablespoons. Continue to cook onions, shaking pan over heat, until golden brown and glazed. In a skillet set over moderately high heat, melt remaining butter and add mushrooms and salt and pepper to taste. Cook mushrooms, tossing often, for 7 minutes, or until firm. Add the onions and mushrooms to the casserole. Bring liquid in casserole to a simmer and add enough Beurre Manie, bit by bit, stirring constantly, to lightly thicken sauce.
  • Make croutons: Brush both sides of bread with melted butter, arrange on a baking sheet and bake in a 400 F. oven until golden brown. Dip edges of bread in Bourguignon sauce and then in parsley.
  • To serve: spoon meat and vegetables into shallow serving dishes and garnish with croutons.

SHIITAKE AND CHANTERELLE PIZZAS WITH GOAT CHEESE



Shiitake and Chanterelle Pizzas with Goat Cheese image

Dough
2 1/2 cups unbleached all purpose flour or bread flour
1/2 cup white whole wheat flour or bread flour
3 tablespoons vital wheat gluten flour or bread flour
1 1/2 teaspoons coarse kosher salt
1 teaspoon sugar
1 cup plus 2 tablespoons warm water (105°F to 115°F)
1 1/2 teaspoons active dry yeast
3 1/2 tablespoons extra-virgin olive oil, divided
Additional unbleached all purpose flour (for kneading and shaping)
Topping
3 tablespoons extra-virgin olive oil plus additional for brushing
6 ounces fresh shiitake mushrooms, stemmed, thinly sliced
6 ounces fresh chanterelle mushrooms, thinly sliced
1 cup (packed) coarsely grated whole-milk mozzarella cheese
2/3 cup freshly grated Parmesan cheese
6 ounces chilled soft fresh goat cheese, coarsely crumbled
2 tablespoons sliced fresh chives

Steps:

  • For dough:
  • Combine all flours, coarse salt, and sugar in processor. Stir 1 cup plus 2 tablespoons warm water and yeast in 2-cup measuring cup. Let stand until yeast dissolves, about 5 minutes. Stir in 3 tablespoons oil. With machine running, pour yeast-oil mixture through feed tube. Blend until ball of slightly sticky dough forms, about 1 minute.
  • Transfer dough to lightly floured surface; knead until smooth and elastic, adding more flour if very sticky, about 5 minutes. Rub with 1/2 tablespoon oil; place in resealable 1-gallon plastic bag. Seal bag. Let dough rise at room temperature until doubled, about 2 hours. Open bag; punch down dough in bag. Reseal. Chill overnight, punching down occasionally. Divide into thirds. DO AHEAD Wrap pieces separately; freeze up to 1 week. Thaw 2 pieces in refrigerator before continuing. Let 2 wrapped pieces stand at room temperature 1 hour before shaping.
  • For topping:
  • Heat 3 tablespoons oil in large skillet over medium-high heat. Add mushrooms; sprinkle with salt. Sauté until tender, about 5 minutes. do ahead Can be made 1 day ahead. Cool, cover, and chill.
  • Sprinkle 2 large sheets of parchment with flour. Roll out 2 dough pieces, each on separate parchment sheet, to 10-inch rounds, letting dough rest a few minutes if springing back. Brush with oil; sprinkle each with 1/2 cup mozzarella and 1/3 cup Parmesan. Top with mushrooms, then dot with goat cheese. DO AHEAD Slide pizzas on parchment onto baking sheets; cover with plastic. Chill up to 4 hours. Let stand at room temperature 30 minutes.
  • Position 1 rack in bottom third and1 rack in top third of oven; place heavy baking sheet on each and preheat oven to 450°F for at least 30 minutes. Slide 1 pizza on parchment onto each hot baking sheet. Bake 8 minutes; reverse sheets. Bake pizzas until crusts are brown at edges and on bottom, about 10 minutes. Sprinkle with chives.

Rather decadent if you had to actually pay for your Chanterelles but since all we do is pick them out of our woods here's our newest creation: Creamy, and delicate, celebrating the flavor of the funghi with an accent of thyme! Perfect over crostini topped with an herbed goat cheese served with a full-bodied Cabernet Sauvignon shared with friends on a Saturday night. I used Creole Cream Cheese but if you can't find that just use Creme Fraiche. And, if you happen to have any sea salt with truffle bits use a sprinkle of that when seasoning.

1 lb chanterelle mushroom, cleaned
2 tablespoons olive oil
2 tablespoons butter
1 large shallot, minced
3 garlic cloves, minced
kosher salt & freshly ground black pepper
1/2 cup dry white wine
1/2 cup veal stock
1 cup creole cream cheese
1 cup whipping cream
1 teaspoon fresh thyme leave
1 bunch parsley, chopped
1 loaf French bread, sliced and toasted
4 ounces herb and garlic goat cheese

Steps:

  • If your mushrooms are large, cut them in half. Otherwise just use them whole.
  • Heat a large saute pan and add the oil and butter.
  • When bubbling, add the shallot and saute until soft, and then add the garlic.
  • Stir and cook another minute then add the mushrooms and season liberally with salt and pepper.
  • Over medium heat, stir the mushrooms occasionally and then add the thyme.
  • About 10 minutes later as the mushrooms are nice and soft, add the wine and decrease by 1/2.
  • Add the veal stock and reduce by half.
  • Lower the heat and Stir in the parsley and creole cream cheese, or the creme fraiche, and incorporate completely.
  • Taste and reseason with salt and pepper as needed.
  • Add the cream, a little at a time.
  • *You may not need all the cream, just keep adding and stirring until you get the consistency you'll want as a topping to your crostinis.
  • Remove from the heat and serve in a warmed bowl alongside a basket of toasted french bread rounds and the goat cheese.
  • I like to spread a little goat cheese on a bread round and top with a dollop of mushroms. Yum!

1/4 cup fresh goat cheese, softened to room temperature
1 tablespoon butter, softened
4 slices 7-Grain (or any whole-grain) bread
Madeira Cream
2 tablespoons shallots, finely chopped
1 cup Madeira (such as Rainwater or Sercial)
1 cup heavy cream
Wild Mushrooms
1/2 pound wild mushrooms (preferably a mix of oyster mushrooms, shiitakes, and/or chanterelles)
2 tablespoons butter
1 garlic clove, minced
Madeira Cream
Salt and pepper
2 teaspoons snipped fresh chives, plus extra for garnish
Goat Cheese Croutons

Steps:

  • Goat Cheese Croutons
  • In a small bowl, use a fork to combine the goat cheese and butter. Lightly toast the bread. Spread equal portions of the goat cheese mixture on the toast. Trim the crusts and cut the squares in half. (The toasts will have a cleaner edge if you trim the crusts after spreading on the goat cheese.) Set aside.
  • Madeira Cream
  • In a small saucepan, simmer the shallots in Madeira until the liquid is reduced to 1/4 cup. Add the cream, bring to a boil, then lower the heat and simmer 5-10 minutes, until the cream thickens slightly. Set aside.
  • Wild Mushrooms
  • Turn on the broiler. Remove the tough stems from the mushrooms and discard. Slice or tear the mushrooms into pieces. Melt the butter in a large skillet over medium-high heat. When the butter is bubbling but not browned, add the mushrooms and cook until they're golden brown and crispy, 4-5 minutes. Stir in the garlic and Madeira cream. Turn the heat to high and boil for about 2 minutes, until the mushrooms have absorbed most of the cream. Season with salt and pepper and fold in the 2 teaspoons chives.
  • Broil the goat cheese croutons until bubbly and lightly browned. Arrange the croutons on plates and spoon the mushroom mixture over them. Garnish with chives.
