I got this recipe from the back of a spaghetti box. One time, I made it as is. The next time, I added our family favorites to suit our own tastes. The family liked it much better, although they did like it as is.....just not as much! It is easily tailored to suit anybody's tastes and easy to make. We love canadian bacon and pepperoni so it was a pretty safe bet that we would like this recipe. Also, it is a nice change from regular old spaghetti.

Number Of Ingredients 15

16 ounces mission spaghetti (golden grain or any brand you like)
6 ounces pepperoni, cut into thin strips
10 ounces Canadian bacon, cut into thin strips
3 cups canned whole tomatoes, undrained
3/4 tablespoon garlic powder or 1 1/2 tablespoons minced garlic
1 1/2 tablespoons crushed red pepper flakes
1/2 teaspoon black pepper
1 tablespoon dried basil
1 tablespoon dried oregano
1/3 cup grated parmesan cheese
1/2 cup chopped onion
1/2 cup chopped celery
8 button mushrooms, chopped
1 cup sliced black olives
1 3/4 cups chopped green peppers

Steps:

  • Cook pasta and drain.
  • Meanwhile, in a large preheated skillet, saute pepperoni, canadian bacon, green pepper, mushrooms, celery, onion, olives and tomatoes (including juice) breaking up the tomatoes with spoon.
  • Mix in garlic and spices and simmer on low for about 6 minutes.
  • Toss in cooked pasta.
  • Sprinkle with parmesan cheese (the kind you grate) and let sit on low until cheese melts (about 5 minutes).
  • Serve hot with a green salad and garlic bread.

Butter, for greasing casserole
2 1/2 cups large-diced cooked chicken
3 cups cooked rice
1 cup sliced celery
1 cup sliced green bell pepper
1 cup sliced onion
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons freshly squeezed lemon juice
1 tablespoon chili powder
2 teaspoons fine salt
1/2 teaspoon garlic powder
1/2 teaspoon hot sauce
3 tomatoes, cut into wedges
1 1/2 cup corn chips, crushed

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
  • In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

1 pound refrigerator pizza dough
2 cups leftover Spaghetti with Meatballs, recipe follows, chopped
1/4 cup leftover Tomato Sauce, recipe follows
1/4 cup shredded mozzarella cheese
1/4 cup milk
2 slice white bread, cut into cubes
1 pound 80 percent lean ground beef
1/2 medium onion, diced
1 egg
1 tablespoon chopped garlic
1 tablespoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 sticks mozzarella string cheese, cut into small cubes or 1/2 cup shredded mozzarella
Nonstick cooking spray
1 (16-ounce) box spaghetti
2 tablespoons olive oil
1/2 medium onion diced
1 tablespoon chopped garlic
1 (28-ounce) can diced tomatoes
2 tablespoons freshly chopped basil leaves
2 tablespoons freshly chopped parsley leaves
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with parchment paper or if you have a nonstick baking sheet, lining is not necessary.
  • Divide the dough in 4 equal portions. Place on a floured work surface and using a rolling pin, roll out the dough into a small round about 6 to 8 inches in diameter. Repeat with remaining pieces of dough. Set aside.
  • Place about a quarter of the leftover Spaghetti with Meatballs in the center of the dough round. Top with 1 tablespoon of sauce and sprinkle with a tablespoon of cheese. Brush the edges of the dough with a bit of water. Fold the dough over to make a half circle and crimp the edge with a fork. Place on prepared baking sheet. Repeat with remain filling and dough.
  • Place in oven and bake for 35 minutes or until golden brown. Serve hot with a side of Tomato Sauce.
  • Preheat oven to 400 degrees F.
  • In a large bowl combine the milk and bread. Let the bread absorb the milk. Add remaining meatball ingredients except the cheese. Using your hands, gently combine all the ingredients until they are thoroughly mixed. Take about 3 tablespoons of the meat mixture and roll into a ball and press into a patty. Place a mozzarella cube or 1 tablespoon shredded cheese onto the patty and bring up the sides around the cheese and roll between hands to form a ball. Place onto a nonstick baking sheet or a baking sheet sprayed with nonstick cooking spray. Repeat process with remaining meat and cheese. Place the meatballs into the oven and cook for 12 minutes. Remove baking sheet from the oven and set aside.
  • Cook the spaghetti in a large pot of boiling salted water until al dente, about 8 minutes. Drain and place the pasta on a large serving platter.
  • In a medium pot heat olive oil over medium heat. Add onion, garlic and saute for 3 minutes. Add remaining ingredients and simmer for 10 minutes. Gently stir in the meatballs and any pan drippings from baking sheet and simmer for another 5 minutes.
  • Place the meatballs over the spaghetti, pour the sauce on top and serve immediately.

SPICY SAUTEED CALAMARI OVER PASTA

I found this recipe on eastvillagekitchen.com and made it with my wife. It came out so good I had to add to my cookbook. If you like Fra Diavolo you'll love this! The version we just made was a little too spicy - I might try cutting down on the red pepper next time - but it was still really delicious. Great over pasta, or on its own as an appetizer (double the serving count for appetizer).

1 lb squid
3 tablespoons red pepper flakes
4 tablespoons tomato paste
3 garlic cloves, chopped (or more to taste)
1 bunch Italian parsley
2 tablespoons extra virgin olive oil
salt
pepper

Steps:

  • Give the squid a good rinse after you cut them into 1/2 inch rings. Be sure to drain out the rinse water in a strainer.
  • Heat the extra virgin olive oil in a wok or shallow saute pan.
  • Add chopped garlic to the oil and cook until the garlic begins to become translucent or browns up a little.
  • Add the calamari.
  • Add tomato paste, red pepper, salt, pepper,
  • Saute on medium heat for 8 minutes.
  • Add a handful of italian parsley.
  • Saute on medium heat for 2 more minutes.
  • Serve with some additional parsley over pasta.

3 (6 ounce) sirloin steaks
2 cups mushrooms, sliced
2 garlic cloves, minced
2 cups zucchini, sliced
1 (18 ounce) jar spaghetti sauce
4 cups cooked spaghetti

Steps:

  • Cup up steak into bite size pieces. Brown in pan until tender.
  • Add sauce, mushrooms, garlic, and zucchini to pan and cook for 10 minutes over medium heat; until zucchini and mushrooms are tender.
  • Pour sauce over cooked spaghetti and enjoy.
