BAKED CALICO RICE
I FOUND this pretty rice dish in a salad oil ad in the Ladies' Home Journal back in 1948. It's a favorite not only for its good taste, but for its simplicity of preparation. A potluck and picnic pleaser, this side dish travels well. -Dorothy Lama, Lindsay, California

Steps:
- In a 2-qt. baking dish, combine all ingredients. Cover and bake at 350° for 1 to 1-1/4 hours or until rice is tender, stirring occasionally. Discard bay leaf.

CALICO RICE
I made this up a while back. It is one of my favorite rice dishes. It goes well with any kind of meat. I have also stir fried chicken pieces in for a one bowl meal.

Steps:
- 1. Cook rice according to package directions; set aside.
- 2. In a wok, combine all veggies and olive oil; cook till tender adding 1 sprig of fresh rosemary. Add rice to mixture. Add more olive oil, rosemary and sage. Season with salt & pepper. Toss till combined.
- 3. Serve with any kind of meat. I have stir fried chicken pieces in this as well. I have also made it with brown rice.
CALICO BEANS
Calico beans (aka cowboy beans or trucker beans) get their name from the variety of bean colors in the dish. Here we use a trio of canned beans: white navy beans, deep red kidney beans and light brown pork and beans. They're baked with bacon and ground beef in a tangy-sweet sauce until bubbling, resulting in the perfect summer side dish to accompany grilled meats. Calico beans are also great on their own as a main course, topped with shredded cheese and hot sauce.

- Position an oven rack in the middle of the oven and preheat to 325 degrees F.
- Put the bacon in a large skillet and cook over medium heat, stirring occasionally, until crispy, 8 to 10 minutes. Remove the bacon with a slotted spoon to a paper-towel lined plate. Pour off all but 1 tablespoon of the bacon fat from the skillet. Add the onion and ground beef and cook, breaking up the beef, until the onion is softened and the beef is crumbled and fully cooked, about 5 minutes. If necessary, drain any excess moisture released from the meat. Add the cooked bacon, kidney beans, navy beans, pork and beans, ketchup, brown sugar, dry mustard, vinegar and salt. Stir together and then transfer to a 9-by-13-inch baking dish.
- Bake until bubbling and caramelized on top, 35 to 40 minutes.
CALICO SALAD
This is the ultimate in bean salads. It has a tangy sauce and is not in the slightest boring. I like to serve this with any kind of BBQ.

CALICO WILD RICE SOUP

Steps:
- In a medium sauce pan cook rice in 6 cups water until cooked through and tender.
- In a large saucepan or stock pot combine broth, cooked rice, corn, green onions, red and green bell pepper, parsley and tarragon. Mix well and cook over medium heat until mixture boils. Reduce heat and simmer 5 minutes or until corn is tender.
- In a small bowl, mix cornstarch and water. Add to soup mixture and cook for 5 minutes. Stir occasionally and serve once soup has thickened.

- In a large mixing bowl, combine the flour and granulated garlic; dredge each pork cutlet on both sides in the prepared flour mixture, shaking off the excess flour over the bowl, placing the cutlets onto a plate in a single layer. Discard the flour mixture.
- Meanwhile, in a large heavy-bottomed skillet that is oven-proof (I prefer a 12" cast iron skillet), heat 2 Tbs. of vegetable oil over medium high heat; add the garlic, cumin and chili powder to the oil, stirring to combine.
- When the oil is nicely hot, add the prepared pork cutlets to the skillet and sauté for 1-2 minutes per side, until nicely golden browned, working in batches as to not over crowd the skillet. Remove the browned cutlets from the skillet as you work; reserve.
- In the same skillet, whisk together the broth, vinegar, salsa, corn, black beans and rice; season with salt and pepper, to taste. Place the prepared pork cutlets directly on top of rice mixture overlapping them a bit on top of each other. Cover the skillet with a lid or foil, cooking over low heat for 20-25 minutes or until the rice is tender and pork cutlets are cooked to 140 degrees F. internal temperature.
