CAJUN-SPICED GRILLED SHRIMP WITH REMOULADE

Steps:
- For the shrimp: Add the lemon juice, olive oil, Cajun spice and 1/2 teaspoon of salt to a medium bowl and whisk to combine. Add the shrimp and toss to coat them in the spice mixture. Allow the shrimp to marinate while you make the remoulade. Do not marinate shrimp longer than 20 minutes.
- For the remoulade: Add the mayonnaise, sour cream, Cajun spice, ketchup, mustard, parsley, lemon zest and 1/4 teaspoon salt to a bowl and whisk to combine. Refrigerate until ready to serve.
- Preheat a grill pan over medium-high heat. When the pan is hot, add the shrimp in an even layer. Allow the shrimp to cook for 2 minutes, then flip them and cook until they are just opaque and the tails are pink, about another minute. Remove the shrimp to a serving platter, garnish with parsley and lemon wedges and serve with remoulade.
CAJUN SHRIMP
Steps:
- Combine paprika, thyme, oregano, garlic powder, salt, pepper, and cayenne pepper in a sealable plastic bag; shake to mix. Add shrimp and shake to coat.
- Heat oil in a large non-stick skillet over medium high heat. Cook and stir shrimp in hot oil until they are bright pink on the outside and the meat is no longer transparent in the center, about 4 minutes.

BOURBON SHRIMP FLAMBé RECIPE
Steps:
- Melt 2 ounces butter in a long-handled frying pan over medium heat. Add 1 pound peeled and deveined shrimp and sauté for 1 minute.
- Remove from burner and carefully add 1/4 cup bourbon to the pan. Ignite with a long fireplace match and return to heat. Shake until flames burn down and go out. Remove the shrimp with a slotted spoon and keep warm.
- Add 1/4 cup heavy cream and 1 medium diced tomato to the pan. Boil and reduce until thickened, then add 1 tablespoon fresh lemon juice. Season to taste with salt and pepper.
- Return shrimp to the pan and gently reheat only until warmed through. Do not overcook or the shrimp will become tough.
- Sprinkle with 1/4 cup minced chives and toasted pecans, if using. Serve with a side of rice.

CAJUN FRIED SHRIMP

- Peel shrimp leaving tail and one section of shell on shrimp. de-vein shrimp by slicing them halfway through the back and remove vein. Rinse shrimp after de-veining. Open to form butterfly. Beat eggs and milk together. Add buttermilk. Mix well. combine yellow cornmeal and flour. Coat shrimp with Cajun spice. Dip shrimp in egg and milk mixture. Bread shrimp with cornmeal and flour mixture. Heat canola oil in medium frying pan. When oil reaches 350 degrees, fry shrimp for about 3 to 5 minutes until golden brown.
CAJUN SHRIMP FLAMBE
This is a great appetizer or side dish to go with any seafood/cajun feast. You can adjust the spice by decreasing the amount of cajun seasoning or you can substitute chili powder.

Steps:
- Heat olive oil in a large skillet.
- Add shrimp.
- Cook 1 minute on each side, then add garlic and onion, stirring continuously for 1 minute.
- Add tequila and cilatro and flambe until flame subsides.
- Add cream and turn heat down to medium-low.
- Add cajun seasoning.
- Stir, then take shrimp out and set aside while sauce thickens.
- Check sauce for flavor, and add salt and pepper to taste.
- Place shrimp in a baking dish.
- Cover with sauce then top with cheese.
- Place in 350 degree oven until cheese is bubbly.
- Approx 5 minutes.
- Garnish with whole cilantro leave if desired and serve immediately.
