CAJUN SALMON SANDWICH WITH GOAT CHEESE AND LEMON MAYONNAISE ON CIABATTA



Cajun Salmon Sandwich with Goat Cheese and Lemon Mayonnaise on Ciabatta image

8 ounces salmon
2 tablespoons Seafood Cajun seasoning, recipe follows
1 tablespoon butter
1 ciabatta roll
Goat Cheese and Lemon Mayonnaise, recipe follows
2 to 3 leaves green leaf lettuce
1/2 tomato, sliced thin
1/2 red onion, sliced thin
1 teaspoon cayenne pepper
1 tablespoon kosher salt
2 teaspoons paprika
1 teaspoon freshly ground black pepper
2 teaspoons granulated garlic
1 teaspoon onion powder
1 teaspoon gumbo file
1 teaspoon crab boil seasoning, optional (recommended: Old Bay) if using cut salt to 1/2 tablespoon
3 ounces goat cheese
4 ounces mayonnaise
1 1/2 tablespoons freshly squeezed lemon juice
3 sprigs parsley
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Season salmon with Seafood Cajun Seasoning. In a medium saute pan, saute salmon in butter on medium-high heat, fat side down, until golden brown. Using a metal spatula turn salmon over and cook until golden brown. Transfer salmon onto a sizzle plate or small sheet tray and place in oven for 4 to 6 minutes. Remove from oven and let rest.
  • Slice ciabatta roll lengthwise and place under broiler until lightly golden. Spread Goat Cheese and Lemon Mayonnaise on roll. Arrange salmon, lettuce, tomatoes and onions on roll.
  • In a medium bowl, combine cayenne pepper, kosher salt, paprika, black pepper, garlic, onion powder, gumbo file and crab boil seasoning.
  • In a medium bowl, mix goat cheese, mayonnaise, lemon juice, parsley, salt and freshly ground black pepper, to taste.

4 (4 ounce) salmon fillets
4 rolls, split and lightly toasted (6-inch)
1 cup shredded cabbage
8 slices tomatoes
3 tablespoons low-fat mayonnaise
3 tablespoons powdered cajun spices
nonstick cooking spray
salt and pepper
lemon wedge

Steps:

  • Heat a heavy skillet over high heat for 15 to 20 minutes.
  • Mix mayonnaise and enough Cajun spice to reach desired hotness.
  • Lightly spray both sides of salmon filets with nonstick cooking spray and sprinkle with Cajun spice.
  • Place salmon in the hot skillet to blacken; cook 2 to 3 minutes per side.
  • Cooking time will vary with thickness of filets and heat of pan, salmon is done when it flakes easily with a fork.
  • Spread mayonnaise mixture onto each roll, top with blackened salmon, tomato and 1/4 cup shredded cabbage.
  • Squeeze with lemon juice and serve.

This super-zingy salmon supper is perfect for those on a low-salt diet

2 salmon fillets , about 140g/5oz each
juice 1 lime
pinch chilli powder
½ tsp ground cumin
½ tsp smoked paprika
½ tsp ground coriander
pinch of soft brown sugar
drizzle of sunflower oil
steamed rice , to serve
1 ripe avocado , peeled and diced
handful cherry tomatoes , quartered
2 spring onions , sliced
juice 1 lime
splash of olive oil
bunch of coriander , half roughly chopped, half picked into sprigs

Steps:

  • Put the salmon in a bowl, pour over the lime juice and leave the salmon to 'cure' for 5 mins. Meanwhile, mix all the spices together with the sugar. Lift the salmon out of the lime juice and roll in the spices so it's completely coated.
  • Heat grill to high. Grease a baking tray, then sit the salmon, flesh-side up, on the tray. Grill for 5 mins, until the salmon is cooked through and the edges are starting to blacken. While the salmon is cooking, gently mix all the salsa ingredients together with the roughly chopped coriander. When the fish is cooked, serve with the salsa, some rice and the coriander sprigs.
