This is a mildly hot Cajun spice mix you make yourself with common spices from your pantry. For those who like it hotter, add the optional crushed red pepper. This makes a great oven Cajun hashbrowns!

2 teaspoons salt
2 teaspoons garlic powder
2 ½ teaspoons paprika
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon cayenne pepper
1 ¼ teaspoons dried oregano
1 ¼ teaspoons dried thyme
½ teaspoon red pepper flakes

Steps:

  • Stir together salt, garlic powder, paprika, black pepper, onion powder, cayenne pepper, oregano, thyme, and red pepper flakes until evenly blended. Store in an airtight container.

5 tablespoons kosher salt
2 tablespoons cayenne pepper
2 tablespoons garlic powder
2 tablespoons sweet paprika
1 tablespoon dried oregano
1 tablespoon dried thyme
1 tablespoon freshly ground black pepper
1 tablespoon onion powder

Steps:

  • Stir all ingredients in a small bowl to blend. DO AHEAD: Can be made 1 month ahead. Store airtight at room temperature.

1/3 cup kosher salt ( not table salt)
1/4 cup chili powder
1/4 cup Hungarian paprika
1 Tablespoon onion powder
1 Tablespoon coarsely ground black pepper
1 Tablespoon dried basil
1 Tablespoon dried oregano
1 Tablespoon ground coriander
1/2 teaspoon cayenne pepper
2 teaspoons dried thyme
1/4 teaspoon cumin
1/4 teaspoon white pepper

Steps:

  • Gather the ingredients.
  • Combine salt, chili powder, paprika, onion powder, black pepper, basil, oregano, coriander, cayenne pepper, thyme, cumin, and white pepper until well-mixed.
  • Place the spice mix in a glass jar and seal tightly. Store in a cool, dark place up to three months.
  • Use this mixture for barbecue ribs, chicken, blackened fish, Cajun soups or sauces, blackened steaks, and blackened pasta.
  • Enjoy.

1 tsp sea salt flakes
1 tsp paprika
1 tsp cayenne pepper
1 tsp ground cumin
1 tsp garlic granules
1 tsp dried thyme
1 tsp dried oregano

Steps:

  • Measure out all the ingredients in a small bowl and stir together well. They can also be lightly mixed in a blender or crushed using a pestle and mortar to create a finer powder, if you prefer. Sprinkle over chicken as a seasoning before baking, roasting or frying.

2 cups Crispix cereal
1 cup small pretzels
1 cup mixed nuts
1/2 cup butter or 1/2 cup margarine, melted
1 tablespoon dried parsley flakes
1 teaspoon celery salt
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/4 teaspoon hot sauce

Steps:

  • Combine cereals, pretzels and nuts.
  • Pour into an ungreased 15x10 inch baking pan.
  • Mix remaining ingredients; pour over the cereal mixture and stir to coat.
  • Bake at 250 degrees for 40-60 minutes, stirring every 15 minutes.
  • Store in air-tight containers.
