Cajun Cutlets With Sweet Potato Mash and Tomato Chilli Jam image

Proof that low fat and low cholesterol can be delicious! Lamb is horribly expensive in Australia at the moment, so I just use whatever cut is cheapest at the supermarket that week! Easy to make and looks great; taken from the best Aussie food magazine, Super Food Ideas.

8 lamb cutlets, trimmed of all visible fat
2 -3 tablespoons cajun seasoning
2 sweet potatoes, peeled and chopped (kumera)
2 tablespoons margarine
2 garlic cloves, crushed
1 red onion, chopped
2 garlic cloves, crushed
6 tomatoes, chopped
1/4 cup red wine vinegar
1/4 cup brown sugar
1 red chili pepper, chopped
salt and pepper

Steps:

  • Sprinkle lamb on both sides with Cajun seasoning, set aside.
  • Make tomato chilli jam: Spray a hot pan with olive oil, saute onion and garlic until onion is tender.
  • Add tomatoes, vinegar, sugar, chilli and seasonings; bring to the boil then reduce heat and simmer, stirring occasionally, for 15-20 minutes or until liquid evaporates and mixture is pulpy. Set aside.
  • While chilli jam simmers, cook kumera in boiling water for 15 minutes or until tender.
  • Drain well, mash with margarine and garlic.
  • Grill lamb for 2-3 minutes each side, or until cooked to taste.
  • Serve on a bed of kumera mash, topped with rocket or other lettuce.
  • Accompany with jam.

This sweet chilli jam has been sent by post all over Australia and I cannot keep up with the demand.Try it once and you will be addicted..Great with everything from pork chops to cheese platters

1 kg tomatoes, blanched skinned and chopped
500 g sugar
3 tablespoons lemon juice
1/3 cup white wine vinegar
6 -10 red chilies
2 teaspoons salt
2 tablespoons fish sauce (nam pla)

Steps:

  • To peel tomatoes, put in large bowl and cover with boiling water for 10 minutes.This helps the skin to peel so much easier. Chop the tomatoes and mix with the sugar. This must stand for several hours or overnight.
  • When settled, add all ingredients to big pot and simmer until thick.
  • This can vary from 40 minutes to 1.5 hours depending on juice in tomatoes etc.
  • Pour into warm sterile jars. This will keep for at least 6 months, although we always eat it before much time has elapsed!

8 pork cutlets
1/4 teaspoon black pepper
1/4 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon powdered oregano
1/4 teaspoon powdered thyme
1/4 teaspoon ground ginger
2 tablespoons butter
1 onion, sliced
1 green pepper, in thick strips
1 red pepper, in thick strips
2 tablespoons flour
1 1/2 cups chicken broth, heated
1 teaspoon honey
salt

Steps:

  • mix herbs and spices together, rub half of mixture into meat.
  • heat butter in large frying pan over med heat, add pork and cook 3 minutes on each side, season with salt and remove from pan, set aside.
  • add onions to hot pan and cook 3 minutes over med heat, add peppers and remaining spice mixture, mix and cook for 7 minutes.
  • sprinkle in flour, mix well and cook 3 minutes.
  • add chicken broth and honey. cook 5 minutes over low heat. return pork to pan and simmer 2 minutes.
  • Serve.

I have not made (or tasted) this-yet. I usually do not post a recipe that I haven't made or tried, but I am posting this because a few others members were interested in it. Prep and cooking time are guesses. This recipe came from a website...don't remember the name of it-sorry. ----IMPORTANT: PLEASE NOTE----This jam is rather perishable, so it is best to store even the sealed jars in the refrigerator. Once opened, the jam should be served within 4 to 5 days.----

1 lemon
4 whole cloves
4 cups water
1 1/2 lbs sweet potatoes, peeled and finely diced
2 cups sugar
1 cinnamon stick, 3 inches long
1/2 vanilla bean, cut in half lengthwise
1/4 teaspoon freshly grated nutmeg

Steps:

  • Remove 4 strips lemon zest from lemon-if you don't have a zester, you can use a vegetable peeler.
  • Tie lemon zest and cloves in a small piece of cheesecloth.
  • Squeeze the juice from the lemon into a large saucepan.
  • Remove any lemon seeds.
  • Add 4 cups water to saucepan.
  • Add sweet potatoes to lemon water in saucepan.
  • Add sugar, cheessecloth and contents, cinnamon stick, vanilla bean, and nutmeg.
  • Bring mixture to a boil.
  • Reduce heat and simmer until thick and jam like, about 30 minutes.
  • Using a spoon, skim off any foam that may rise to the surface as the jam cooks.
  • Remove from heat.
  • The potatoes should be soft enough to fall apart on their own, but if they don't, mash them with the back of a wooden spoon.
  • Remove and discard cheesecloth and contents.
  • You may leave the vanilla bean and cinnamon stick in the jam if you prefer, if not-remove them.
  • Ladle jam into hot, clean jars---filling to 1/4 to 1/8 inch from the top.
  • Wipe rim of jar clean.
  • Place canning lids that have been preheated in hot water on jars and tighten rings as tight as possible.
  • Process in water bath canner for 10 minutes. If you prefer not to process it, store in refrigerator and use within 10 to 14 days.

5 medium-size potatoes, washed thoroughly
2 teaspoons salt
2 tablespoons garam masala
2 tablespoons coriander powder
2 tablespoons black pepper
10 cilantro leaves, chopped
6 tablespoons bread crumbs
oil for frying

Steps:

  • Place unpeeled potatoes in a large saucepan, fill with water, and place over high heat. Bring to a boil; cook until potatoes are soft and tender. Drain, cool, and peel potatoes.
  • Place potatoes in a large bowl. Add salt, garam masala, coriander powder, pepper, and cilantro. Mash with a large fork or potato masher until there are no lumps. Shape potatoes into flat cutlets, about 2 or 3 inches in diameter and 1 inch thick. Coat each cutlet lightly in bread crumbs, and set aside.
  • Heat about 2 tablespoons oil in a large skillet over medium heat. Fry potato cutlets in batches until golden brown on both sides. Between batches, add oil as needed.

This one's for you if you like sweet chilli sauce, only it's ten times nicer. Very easy to make and it keeps for a while in the fridge too. Spices up stir-fries any day!

10 long chilies, chopped and deseeded
4 tablespoons vegetable oil
1 sweet red pepper, chopped
1 head garlic, chopped
200 g shallots, chopped
100 g palm sugar or 100 g brown sugar, grated
2 tablespoons tamarind pulp or 2 tablespoons lime juice

Steps:

  • Process chillies, oil, capsicum, garlic and shallots until smooth.
  • Heat wok on medium, and add chilli mixture. Stir occasionally for 15 minutes.
  • Add sugar and tamarind and simmer for 10 minutes.
  • Use as a stir-fry sauce or grilling marinade.
