CAJUN CRAB SPREAD (USING IMITATION CRAB)
This is one of my favorite snacks. It can be served with crackers, or I like to eat it with the big corn chips (Scoops) or serve it in jumbo pasta shells. It's easily doubled if you want to use a whole brick of cream cheese and a pound of imitation crabmeat. This is fairly chunky; if you want it to be more spreadable, increase the amount of cream cheese/mayonnaise. Cook time is chill time.

Steps:
- In a small mixing bowl, beat cream cheese, mayonnaise, paprika, black pepper, garlic powder and ground red pepper with an electric mixer on medium speed till well combined.
- Stir in the imitation crab, chopped tomato and green onions.
- Cover and chill for 3-24 hours.

Steps:
- Combine cream cheese, mayo, 3 teaspoons prepared horseradish, 3 teaspoons Cajun seasoning and hot sauce then mix until smooth and creamy. Taste for seasoning then add more horseradish, Cajun seasoning and/or salt if desired.
- Gently fold crab meat into cream cheese mixture. Refrigerate until ready to serve. Serve with crackers.

This makes a lot, but it's so good, and a little different from most cheese dips. If you can't find crawfish tails, sub with lump crabmeat drained and rinsed and drained. Sure to be a hit at your next get together with family and friends

Steps:
- In medium pot over medium high heat, saute garlic and white parts of scallions in butter until slightly tender.
- Mix in crawfish or crab and cook for about 5 minutes on low.
- Pour mixture in bowl and set aside.
- Add cheese and tomatoes to empty pot and cook over medium low heat until melted and combined.
- Stir in reserved scallion mixture.
- Heat on low until well blned and very warm.
- Season with salt and pepper to taste.
- Garnish with sliced green scallion tops.

- In a large bowl, combine the cream cheese, garlic, cream, 1 teaspoon seafood seasoning, horseradish and Worcestershire sauce. Gently stir in crab and half of the green onions. , Transfer to a greased 2-cup baking dish. Bake, uncovered, at 350° for 23-27 minutes or until edges are bubbly. Sprinkle with Monterey Jack cheese and remaining seafood seasoning. Bake 5 minutes longer or until cheese is melted., Sprinkle with remaining green onions. Serve warm with crackers.

I was looking for a recipe similar to the dip we purchase at the grocery store. This is fairly close. Be careful your Cajun Seasoning is not too salty.

- Mix cream cheese, sour cream, hot sauce, Worcestershire Sauce, Cajun Seasoning, garlic and Italian Seasoning in processor or with electric mixer.
- Gently fold in cheddar cheese, onions and crab.
- Refrigerate at least 2 hours and adjust seasonings as desired.
