- Peel onions and cut into very thin strips.
- Trim, rinse and cut the cabbage into very fine strips.
- Mix onions and cabbage in a bowl with some salt and let stand for 10 minutes. Squeeze lemon.
- Mix together yogurt, cream cheese, 2 tablespoons lemon juice, and Worcestershire sauce. Season with salt and pepper.
- Rinse apples, cut into quarters, remove seeds and cut into very thin slices.
- Drain accumulated water from the cabbage and mix the cabbage with apples and yogurt dressing.
- Pat dry pork medallions and season with salt and pepper. Crush fennel seed in a mortar and sprinkle on the meat.
- Chop walnuts coarsely and fry in a non-stick skillet. Remove, wipe out pan and heat oil in it.
- Add pork medallions. Depending on thickness, fry on each side for 3-5 minutes.
- Take medallions from the pan, wrap in aluminum foil and let rest for 5 minutes. Serve with the salad and garnish with walnuts.

FANTASTIC CABBAGE AND APPLE WALDORF SALAD
Plan ahead this needs to be refrigerated for 6 hours or overnight. This is an amazing cabbage salad! If you purchase a very large cabbage, you can increase the mayo/yogurt dressing if desired.

- In a small bowl whisk togther mayonnaise, yogurt, mustard, oil, 1 teaspoon salt (or to taste) and vinegar until smooth.
- In a very large bowl mix together, cabbage, apple strips, celery and walnuts.
- Pour the dressing over the cabbage mixture; toss to combine.
- Season with salt and pepper if desired.
- Cover and refrigerate for a minimum of 6 hours or overnight (toss a couple of times during chilling time to combine the cabbage with the dressing) .
- Just before serving sprinkle with the blue cheese and red onions on top, then garnish with apple slices around the outside of the bowl.
- Sprinkle with more walnuts if desired.
- Delicious!

- Dice the apples. Place them in a salad bowl and toss with the lemon juice. Finely shred the cabbage. Dice the celery.
- In a small bowl, combine the mayonnaise, yogurt, cider and mustard. Add the cabbage, celery, raisins, walnuts and dressing to the apples in the salad bowl and toss to combine. You could also add turkey or chicken to it as well. Enjoy!
