1 tablespoon canola oil
1 small onion, chopped
1 teaspoon minced garlic (can use more or less)
1 (10 ounce) can rotel diced tomatoes and green chilies, undrained
1 teaspoon sugar
4 cups sliced cabbage (I used from premade packaged coleslaw mix)
fresh ground pepper
sea salt
1/8 teaspoon hot sauce (optional, can use more or less, we used Franks)

Steps:

  • Heat oil in large skillet over medium heat. Add onion and garlic. Cook and stir until crisp tender.
  • Add tomatoes, undrained, and sugar. Bring to boil and simmer 3 minutes.
  • Add cabbage, pepper, salt and hot sauce.
  • Simmer 15 minutes, stirring occasionally. Serve immediately.

1 medium onion, sliced thin
2 tablespoons butter or 2 tablespoons margarine
3 cups shredded cabbage (approx 1/2 small head)
1 cup shredded carrot (approx 3 medium)
1/2 teaspoon salt
1/4 teaspoon oregano

Steps:

  • In large skillet saute onions in butter until clear, approximately 5 minutes.
  • Stir in cabbage, carrots and salt.
  • Cover and cook over medium heat for 10 minutes.
  • Stir in oregano just before serving.

1 small cabbage, minced
2 medium eggplants, cubed
2 large red peppers, sliced into little strips
4 tablespoons extra virgin olive oil
1 large sweet onion, sliced garlic,
salt and pepper
bean sprouts (optional)

Steps:

  • 1. Heat the extra-virgin olive oil in a large deep skillet on medium heat. 2. Add onions, peppers and sauté until soft. 3. Add eggplant and cook on medium for 5 minutes. 4. Add the chopped cabbage gradually. The cabbage will cook down and open space up for more. 5. Add seasoning to taste and stir until all cabbage is cooked down, After about 20-25 minutes the mixture should be soft.

1 Tbsp. vegetable oil
1 medium onion, sliced
1/2 head green cabbage, grated or finely chopped
1/2 cup water
3 1/2 cups cooked noodles (I prefer whole wheat noodles for this recipe)
Salt and pepper to taste

Steps:

  • In a large frying pan, heat the oil over medium heat. Saute the onion in the oil for a few minutes, then add the cabbage and the water. Steam the cabbage mixture, covered, until soft, about 15 minutes. Add the noodles, salt and pepper. Cook over low heat until the noodles are hot, about 5 minutes more. Serve immediately.
