Anyone who has ever lived in Utah Valley near Brigham Young University has had and loves these brownies. They are made by a bakery called Sugar N Spice in the Cougareat Food Court. They can be found at BYU events and at most any social event in that area because you can purchase them. This recipe is from the BYU website as the official recipe they use.

1 cup margarine
1/2 cup cocoa
2 tablespoons honey
4 eggs
2 cups sugar
1 3/4 cups flour
1/2 tablespoon baking powder
1/2 teaspoon salt
1 cup chopped walnuts
12 ounces chocolate icing (Use your own icing recipe or purchase some chocolate frosting. You can also search the Internet for )
mint icing
5 tablespoons margarine
1 dash salt
3 tablespoons milk
1 tablespoon light corn syrup
2 1/3 cups powdered sugar
1/2 teaspoon mint extract
1 -2 drop green food coloring

Steps:

  • Melt margarine and mix in cocoa. Allow to cool. Add honey, eggs, sugar, flour, baking powder, and salt. Mix well. Add nuts. Pour batter into a greased 9-by-13 baking pan. Bake at 350°F for 25 minutes. Cool.
  • Prepare mint icing: Soften margarine. Add salt, corn syrup, and powdered sugar. Beat until smooth and fluffy. Add mint extract and food coloring. Mix. Add milk gradually until the consistency is a little thinner than cake frosting.
  • Spread mint icing over brownies. Place brownies in the freezer for a short time to stiffen the icing. Remove from the freezer and carefully add a layer of chocolate icing.

1 cup butter
1/2 cup cocoa
2 tablespoons honey
4 eggs
2 cups sugar
1 3/4 cups flour
1/2 tablespoon baking powder
1/2 teaspoon salt
5 tablespoons butter
3 tablespoons milk
1 tablespoon corn syrup
2 1/3 cups powdered sugar
1/2 teaspoon mint extract
1 -2 drop green food coloring
12 ounces chocolate chips
1 cup whipping cream
1 teaspoon corn syrup

Steps:

  • Brownie: Melt butter in medium saucepan and mix in cocoa and honey. Let cool and beat in the eggs. Add sugar and the dry ingredients, mix sparingly. Just until the flour is combined. Spread in a 9x13 pan and bake for 25 minutes at 350 degrees. Cool completely and top with the mint topping. Refrigerate at least one hour and frost with icing.
  • Mint topping directions: Soften butter and mix everything together until light and fluffy.
  • Chocolate Icing directions: Melt chocolate slowly over the lowest heat, add the whipping cream in when the chocolate is partially melted. Add the corn syrup and mix. Dribble over the mint topping, spread out evenly and chill. Cut into small pieces, these are rich.
