This is an easy frosting to make and it uses one of my favorite products Sweetened Condensed Milk.. great for cookie sandwiches, cupcakes,bars, 2 and 3 layer cakes, or a sheet pan cake or bars....Give it a try the next time you want a special frosting.

14 oz can sweetened condensed milk not evaporated milk
1/4 c vanilla or white chocolate chips
1/2 c butter or margarine
1 1/2 c flaked coconut
1 1/4 c chopped pecans or walnuts
1/4 tsp grated orange peel
1 tsp vanilla extract

Steps:

  • 1. In a heavy bottomed saucepan or double boiler, combine the sweetened condensed milk. margarine and white chips..stir until chocolate has melted and mixture is smooth and shinny.Remove from heat.
  • 2. Add in the orange peel, vanilla, coconut and nuts; stir until well blended..Cool slightly..Spread on cooled cake or other dessert.

This tasty crust can be made for any type of custard or cream pie. In fact, it goes well with anything. It can be made with coconut or chopped nuts. Pecans or walnuts work best. Delicious! A special treat!

½ cup chopped pecans
¼ cup brown sugar
1 cup all-purpose flour
½ cup butter, melted

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, mix together pecans, sugar, and flour. Stir in melted butter or margarine. Reserve 1/2 of the mixture for topping the pie, then press the rest evenly into a 9 inch pie pan.
  • Bake in preheated oven for 12 to 15 minutes, until golden brown. Allow crust to cool before filling.

This Creamy Coconut frosting was made to fill and ice my Almond Joy Cake. Then when done frosting you can press into the sides of the cake with some shredded toasted coconut.

1/3 cup butter, softened
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon coconut extract
1 lb sifted confectioners' sugar
3 -4 tablespoons coconut milk

Steps:

  • Cream butter, salt, and extracts, beating until light and fluffy.
  • Add sugar gradually, beating after each addition.
  • Add 3 tablespoons milk, beating until smooth. Beat in more milk until desired spreading consistency is reached.

Perfect cupcakes to add to your lunch box. Very buttery with a yummy coconut and walnut topping. These never last more than an hour when I take them for my husbands co-workers. They are great served warm or cool.

1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
⅓ cup butter, at room temperature
1 cup white sugar
1 large egg
1 teaspoon vanilla extract
¾ cup milk
¼ cup butter, room temperature
⅓ cup packed brown sugar
2 tablespoons milk
1 cup flaked coconut
⅔ cup chopped walnuts
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 12 cup muffin tin with paper bake cups. Sift together the flour, baking powder, salt, and 1 teaspoon cinnamon.
  • In a large bowl, cream together 1/3 cup butter and white sugar until light and fluffy. Add the egg and vanilla and mix well. Pour in the flour mixture alternately with 3/4 cup milk; beat well. Fill the prepared muffin cups evenly, about half full.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, 20 to 25 minutes. Remove from the oven and set aside to cool slightly.
  • Meanwhile, cream 1/4 cup butter with brown sugar until light and fluffy. Blend in 2 tablespoons milk until well combined and fold in the coconut, walnuts, and 1 teaspoon cinnamon.
  • With the warm cupcakes in the muffin pan, carefully spread about 2 teaspoons of the frosting on the center of each one. Do not spread the frosting all the way to the edge.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Broil the tops of the cupcakes in the preheated oven until coconut is lightly browned, 2 to 3 minutes.

Steps:

  • In a small bowl, combine the flour and brown sugar; cut in butter until mixture resembles coarse crumbs. Add coconut and nuts. Spread in a greased 15x10x1-in. baking pan. Bake at 400° for 10-15 minutes or until golden brown, stirring occasionally. Cool. Store in the refrigerator. Top ice cream with apple pie filling; sprinkle with topping.

1/2 cup butter, melted
1 cup all-purpose flour
1-1/4 cups sweetened shredded coconut
1/4 cup packed brown sugar
1 cup slivered almonds
2-2/3 cups cold milk
1/2 teaspoon coconut extract
2 packages (3.4 ounces each) instant vanilla pudding mix
2 cups whipped topping
Fresh strawberries, optional

Steps:

  • In a large bowl, combine the first five ingredients; press lightly into a greased 13-in. x 9-in. baking dish. Bake at 350° for 25-30 minutes or until golden brown, stirring every 10 minutes to form coarse crumbs. Cool. , Divide crumb mixture in half; press half into the same baking pan. In a large bowl, whisk the milk, extract and pudding mixes for 2 minutes. Let stand for 2 minutes or until soft-set. , Fold in whipped topping; spoon over the crust. Top with remaining crumb mixture. Cover and refrigerate overnight. Garnish with fresh strawberries if desired.
