BUTTERSCOTCH SNACK CAKE
This is a great, super simple, recipe from my friend Kristen. I make it often for BBQ's. It always is gone!

Steps:
- Bring the milk and the butterscotch pudding mix to a boil over medium heat. Stir often so it doesn't scorch. Remove from heat and stir in the cake mix.
- Pour the cake mix into a greased 9x13 pan. Sprinkle the cake with the butterscotch chips and nuts. Bake at 350 degrees for 35-40 minutes. Let cool completely and cut into pieces to serve.

- In a large saucepan, combine pudding mix and milk. Bring to a boil over medium heat, stirring constantly. Remove from the heat; stir in dry cake mix. , Pour into a greased 13x9-in. baking pan. Sprinkle with butterscotch chips and nuts. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

PEANUTTY BUTTERSCOTCH SNACK MIX
This snack mix recipe was modified from one i read on the back of a cereal box to suit my anti-raisin tastes. You can substitute raisins for the M&M's...but i think that's unnatural. it's kind of like a butterscotchy puppy chow.

Steps:
- In a large bowl, combine cereal, peanuts and M&M's.
- Combine chocolate chips, butterscotch chips, and butter in a saucepan.
- Melt over low heat, stirring constantly until mixture is smooth.
- Stir in peanut butter and vanilla until melted.
- Pour over cereal mixture and stir to coat evenly.
- Let cool 5 minutes, stirring occasionally.
- Add 1 cup powdered sugar and toss to coat evenly.
- Continue to add powdered sugar and toss until all pieces are coated well.
- Store in a tightly covered container.

This is a recipe I acquired when I was a teen, from a neighbor. It is always well accepted when I take it to a potluck.

- Sift dry ingredients.
- Melt butter and add brown sugar. Stir over low heat, until sugar has melted. Remove from heat and add dry ingredients. Add eggs and vanilla; stir in walnuts.
- Spread in an ungreased 9" x 13" baking pan and bake at 300° for 25-30 minutes.
