Yield Serves 2 as a main or 4 as a side

Number Of Ingredients 12

2 tbsp sunflower oil
1 tsp nigella seeds
thumb-sized piece ginger , grated
2 garlic cloves , grated
200g pumpkin or butternut squash, peeled and chopped into 1-2cm cubes
200g cabbage , chopped (sweetheart or pointed cabbage works well)
1 tsp turmeric
1 tsp ground coriander
1 tsp ground cumin
1 tsp chilli flakes
2 tsp lime juice
dhal , chutney and rice or roti to serve (optional)

Steps:

  • Heat the oil in a frying pan and add the nigella seeds. When they start popping, add the ginger and garlic, and cook for 1 min. Add the squash, cabbage, spices and 1 tsp salt, then mix everything together well with a splash of water, covering the pan with a lid. Leave to steam for 7-8 mins over a low heat.
  • After this time, lift the lid to check if the squash is cooked. If not, replace the lid quickly and leave to cook a little longer. Add the lime juice and check for seasoning before serving with dhal, chutney and rice or roti, if you like.

You can just cook these vegetables in a skillet and serve them with grains for a great vegan dinner, or turn them into a hearty vegetarian (but not vegan) Provençal-style gratin.

Yield The sautéed vegetables alone serve 4; the gratin serves 6.

Number Of Ingredients 13

2 tablespoons extra virgin olive oil
1 pound winter squash, peeled and shredded
1/2 cup chopped onion
3/4 pound green cabbage, shredded
2 garlic cloves, minced
2 teaspoons finely chopped fresh sage
2 teaspoons chopped fresh thyme leaves
3 eggs
1/2 cup low-fat milk
Salt and freshly ground pepper
1 cup cooked barley, rice (preferably brown) or quinoa
2 ounces Gruyère, grated (1/2 cup)
1 ounce Parmesan, grated (1/4 cup)

Steps:

  • If serving the vegetables with grains, begin cooking the grains of your choice first.
  • Heat 1 tablespoon of the olive oil over medium heat in a large, heavy skillet or a wok and add the onion. Cook, stirring, until it begins to soften, about 3 minutes. Add the shredded winter squash and the garlic and a generous pinch of salt. Cook, stirring often, until not quite tender, about 10 minutes, and add the remaining oil, the cabbage, sage, thyme, and salt and pepper to taste. Continue to cook, stirring often, until the vegetables are tender and fragrant, 8 to 10 minutes. Serve with grains or use the vegetables for the gratin below.
  • If making a gratin, preheat the oven to 375 degrees and oil a 2-quart baking dish or gratin dish. In a large bowl, whisk together the eggs and milk. Add salt to taste (about 1/2 teaspoon) and freshly ground pepper, and stir in the cooked grains (I used cooked purple barley, and it was a beautiful and tasty combination with lots of texture) and the cooked vegetables. Add the cheeses and stir everything together, then scrape into the prepared baking dish.
  • Bake 40 to 45 minutes, or until the top is lightly browned and the gratin is set. Allow to cool for 15 minutes or longer before cutting into wedges and serving. The gratin is good hot, warm or at room temperature, and you can cut it into smaller pieces to serve as an hors d'oeuvre.

I made this up the other day, and it was so good that I decided to keep it. You can serve it with bread or potatoes, if you wish, but it's meant to be a lower carb dinner, and it is perfectly filling without bread or potatoes.

1 small head cabbage, about 1.5 pounds
1 small butternut suqash
1 tart apple
1 shallot
3 oz bacon bits
12 oz ground beef
1 c beef broth
1 Tbsp worcestershire sauce
2 Tbsp dijon mustard
2 Tbsp cider vinegar
1 tsp honey
1 tsp salt
1 tsp pepper
1 Tbsp butter

Steps:

  • 1. Shred cabbage, peel and dice butternut squash (1 inch cubes), chop shallot.
  • 2. In a large skillet, fry ground beef with bacon bits, season with salt and pepper, then add cabbage and squash.
  • 3. Add broth, mustard, vinegar and let simmer on low.
  • 4. In a smaller skillet, melt butter. Peel, core and slice the apple and fry in butter until soft and turning golden, then add honey and gently continue frying while checking the cabbage.
  • 5. If cabbage and squash are soft, add apple, mix well, heat though and taste test, then serve immediately.
  • 6. If cabbage and squash are not soft yet, set apples aside and let cabbage mixture simmer until soft, then add apples. Mix well, heat through and serve.

SKILLET COLLARDS AND WINTER SQUASH

Barley water is used to make nutritious beverages in many cuisines. I discovered that it can be useful as a sort of sauce when I used the water I'd drained from my purple barley to moisten a pan of vegetables. The barley water added rich flavor and texture to the already delicious vegetables.

Number Of Ingredients 10

1 cup barley (regular or purple)
1 quart water
Salt to taste
2 tablespoons extra virgin olive oil
2 pounds butternut squash, peeled and diced
1 generous bunch collard greens (about 1 pound), stemmed, washed thoroughly in 2 changes of water and sliced crosswise in ribbons
2 garlic cloves, minced
Freshly ground pepper
2 teaspoons slivered fresh sage
Lemon juice to taste

Steps:

  • Combine the barley and water in a medium saucepan, add salt to taste and bring to a boil. Reduce the heat and simmer 50 minutes to an hour (longer for purple barley), until the barley is tender. There should still be plenty of water in the pot. Place a strainer over a bowl and drain the barley. Measure out 1 cup of the cooking water. Transfer the barley to a serving bowl and keep warm.
  • Heat 1 tablespoon of the oil over medium-high heat and sear the squash for 5 to 10 minutes, until it is lightly colored. Add the greens and cook, stirring, until they are wilted, about 5 minutes. Add the garlic, salt, pepper and sage and cook, stirring, for a couple of minutes, until the mixture is fragrant, then add the stock or barley water and bring to a simmer. Reduce the heat to low, cover and simmer 10 minutes, until the squash and greens are tender. Add lemon juice to taste, drizzle on the remaining olive oil, adjust seasoning and serve with the barley.

Trim ends, halve lengthwise, and scoop out seeds. Tear or cut squash into large pieces; discard skin (it will come off easily as you tear).
  • Meanwhile, mix yogurt, grated garlic, and 1 Tbsp. lemon juice in a medium bowl; season with salt and pepper.
  • Heat 2 Tbsp. oil in a large skillet, preferably cast iron, over medium-high. Cook chickpeas, shaking skillet often, until starting to brown and crisp, about 5 minutes. Add onion and chopped garlic and cook, stirring often, until onion is translucent, about 5 minutes. Sprinkle in vadouvan and cook, stirring, until chickpeas and onion are coated and mixture is fragrant, about 1 minute. Season with salt and pepper and transfer to a medium bowl. Wipe out skillet.
  • Heat 2 Tbsp. oil in same skillet over medium-high. Cook squash pieces, cut side down, undisturbed, until browned and caramelized, about 5 minutes. Turn pieces over, remove from heat, and season with salt and pepper. Spoon chickpea mixture over squash, then dollop reserved lemon-garlic yogurt around.

  • Preheat the oven to 375°. In a small saucepan or skillet, cook the garlic with 1/2 cup of the olive oil over moderately low heat until the garlic is softened, about 15 minutes. Transfer the garlic to a small bowl and mash to a paste. Reserve the oil for another use.
  • Spread the hazelnuts in a pie plate and toast for about 12 minutes, until fragrant. Transfer to a clean kitchen towel and let cool slightly, then rub together to remove the skins. Coarsely chop the hazelnuts.
  • On a large rimmed baking sheet, toss the squash with 2 tablespoons of olive oil; season with salt and pepper. Arrange in a single layer and bake for about 30 minutes, until softened and golden. Leave the oven on.
  • Meanwhile, lightly grease eight 8-ounce ramekins or gratin dishes with olive oil and arrange on a large rimmed baking sheet. In a large saucepan, heat the remaining 2 tablespoons of olive oil. Add the cabbage, season with salt and cook over moderate heat, stirring occasionally, until wilted, 10 to 12 minutes. Transfer the cabbage to the prepared ramekins and top with the roasted squash.
