  • Cool in the pan on a cooling rack for 30 minutes then turn onto the rack to cool completely.
  • To make the glaze. In a deep microwave safe bowl melt the butter in the microwave. Whisk the brown sugar and heavy cream into the melted butter then return to the microwave..
  • Cook on high for 2 minutes. Remove from the microwave and stir in the vanilla and 1/4 cup pecans. Allow to cool slightly then drizzle over the cake.

SOUTHERN PECAN BUTTERMILK POUND CAKE

Southern Pecan Buttermilk Pound Cake image

Southern Pecan Buttermilk Pound Cake is a traditional Southern pound cake with added flavor from pecans. Pound cakes are best know for their dense texture.

Provided by Jackie Garvin

Number Of Ingredients 11

4 sticks of unsalted butter (room temperature (1 pound or 2 cups))
3 cups granulated sugar
6 eggs (room temperature)
4 cups soft winter wheat flour (sifted and divided)
1 cup buttermilk
Report this ad
1 tablespoon vanilla extract
1 teaspoon almond extract
1 1/4 cups chopped pecans (divided)
2 tablespoons all-purpose flour
1 tablespoon turbinado (raw sugar)

Steps:

  • Cream the heck out of the room temperature butter and sugar using a stand mixer. Scrap down sides occasionally. Cream until smooth. It will take at least five minutes.
  • Add room temperature eggs, one at a time. Mix only until the yolks disappear.
  • Mix in 3 3/4 cups sifted flour and all the buttermilk, alternating, starting and ending with flour.
  • Stir in vanilla and almond extracts.
  • In a small bowl, add remaining 1/4 cup flour to 1 cup chopped pecans. Stir until pecans are coated then stir pecans into batter.
  • Pour batter into greased and floured tube pan.
  • In a small bowl, toss remaining 1/4 cup pecans with 2 tablespoons all-purpose flour. Add pecan mixture on top of pound cake batter. Sprinkle with turbinado sugar.
  • Bake at 325 degrees for 1 hour and 20 minutes or until a toothpick inserted comes out clean.
  • Cool in pan for 10 minutes.
  • Carefully remove cake from tube pan and place on a wire cooling rack. Completely cool before cutting.
  • Pounds cake are best if they cure for a day or two before eating, if you can stand it that long.

Time 55m

Number Of Ingredients 13

1/2 cup (1 stick or 113g) butter, (room temperature)
2 cups (400g) light brown sugar
2 large eggs, (room temperature)
2 cups (480g) buttermilk
2 teaspoons vanilla extract
3 cups (375g) all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
6 tablespoons butter, (melted)
1 cup (200g) light brown sugar
1/4 cup (61g) buttermilk
1/8 teaspoon salt
1 cup pecans (roughly chopped)

Steps:

  • Preheat the oven to 350°F. Prepare a 9x13 baking dish. (I used GOOP, click the recipe in the Notes)
  • In a large bowl, beat the butter and brown sugar together with a hand-held mixer until smooth.
  • Add the eggs one at a time, incorporating them into the butter mixture fully. Scrape the sides of the bowl if needed.
  • Pour in the buttermilk and vanilla extract. Mix until combined. (Make sure there are no lumps)
  • Add the flour, baking soda, and salt to the wet ingredients. Stir by hand with a spatula until ingredients are incorporated.
  • Pour the batter into the prepared pan.
  • Bake the cake for 30 minutes. Ten minutes before the cake is done, prepare the topping.
  • Stir the butter and brown sugar together in a small bowl. (I used a 2 cup measuring cup) Add the buttermilk, chopped pecans, and salt. You should easily be able to pour the glaze.
  • When you take the cake out of the oven, immediately pour the pecan glaze all over the cake. Then return it to the oven for 10 more minutes.
  • When the cake is done, the glaze should be bubbling and appear runny and seeping into every nook and cranny of the cake.
  • Serve warm.
  • (If you prefer to serve at room temperature, the glaze will have hardened a bit.)

It is a truly southern recipe, and one I think can't be topped-once people taste it, they won't go back to their other recipes with buttermilk. -Gracie Hanchey, De Ridder, Louisiana
