THE BEST BUTTERMILK WAFFLES
In creating this recipe, we tried out many different methods-folding in egg whites, milk versus buttermilk, a yeasted batter. But at the end of the day, this simple dump-and-stir was our favorite by far. Someone in the test kitchen may have even said this was the best waffle they'd ever eaten! The buttermilk makes this waffle ultra-light while the generous amount of butter makes for a super crispy exterior, leaving the inside custardy and soft. Finally, we kept the sugar to a minimum, making these the perfect foil for sweet toppings like maple syrup, berries or jam.

Steps:
- Preheat a waffle iron to medium-high.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk together the buttermilk, eggs and vanilla. Whisk the buttermilk mixture into the flour mixture until a batter is formed. Whisk in the butter until incorporated, being careful not to overmix the batter.
- Spray both sides of the preheated waffle iron with nonstick cooking spray. Pour in enough batter to lightly cover the surface of the iron, about 1/3 to 3/4 cup, depending on its size. (Take into consideration that the batter will spread once the lid is closed.) Close the iron and cook until the waffles are a deep golden brown and slightly crisp, about 5 minutes. Repeat with the remaining batter. (If the waffle iron has a well-seasoned or nonstick surface, it may not be necessary to spray it between each batch.)
- Serve the waffles immediately with butter, syrup, jam, berries or yogurt.
HOMEMADE BUTTERMILK WAFFLES
Steps:
- Heat a waffle iron according to the manufacturer's directions.
- Whisk together the flours, baking powder, baking soda, salt, and sugar in a medium bowl.
- Whisk the eggs and butter together in another bowl, and then whisk in the buttermilk.
- Add the wet ingredients to the dry and whisk to combine. Rest the batter for 5 minutes.
- Lightly coat the waffle iron with nonstick spray. Ladle the recommended amount of waffle batter onto the iron according to the manufacturer's recommendations. Close the iron top and cook until the waffle is golden on both sides and is easily removed from the iron. Serve immediately or keep warm in a 200ºF oven until ready to serve.
FLUFFY AND CRISP BUTTERMILK WAFFLES
These classic buttermilk waffles are easy to make and come out fluffy and crisp each and every time. It's a must-have recipe for turning an ordinary morning into something extra-special.

TENDER AND EASY BUTTERMILK WAFFLES

BUTTERMILK & BROWN BUTTER WAFFLES
This waffle recipe gets a deep and delicious flavour from first browning the butter. The recipe is from chow.com. I think it might work for pancakes too. TIP: To make these even fluffier, separate the yolks and whites. Put the yolks in as normal. When all other ingredients are combined, beat the whites until fluffy and fold into the batter.

- Melt butter in a medium frying pan over medium-low heat and cook until it browns and emits a toasted smell (the butter should be golden brown but not burnt), about 5 minutes. Remove butter from the pan and let cool to room temperature.
- Whisk together flour, brown sugar, baking powder, and salt in a large bowl to aerate and break up any lumps; set aside. Whisk together cooled brown butter, eggs, buttermilk, and vanilla extract in a separate bowl until evenly combined. BUTTERMILK-BROWN SUGAR WAFFLES
This recipe first appeared in The Times in a 2006 article Julia Moskin wrote about wedding registries and what items couples should (and shouldn't) include on theirs. A cookware set? No. Better to buy pieces individually according to a couple's needs. A waffle iron? Why yes, if there's any chance of children. These waffles are light, crisp and easy to throw together, like traditional waffles, but the buttermilk lends tang and the brown sugar an earthy sweetness. The secret ingredient here is wheat germ.
