I threw together this recipe to give some color to the dinner plate. I knew all my relatives liked green beans, so I added onion, bacon, toasted sesame seeds and a little vinegar for a nice tang. -Karen Darrell, Wood River, Illinois

6 bacon strips, chopped
1 medium onion, chopped
2 tablespoons cider vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
1-1/2 pounds fresh green beans, trimmed
1 tablespoon sesame seeds, toasted

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Pour off all but 1 tablespoon drippings. Saute onion in drippings until tender. Stir in vinegar, salt and pepper., Meanwhile, place beans in a large saucepan; add water to cover. Bring to a boil. Cook, covered, until crisp-tender, 4-7 minutes; drain., Place beans in a large bowl; toss with bacon and onion mixture. Sprinkle with sesame seeds.

2 (10 ounce) packages frozen butter beans
6 slices lean bacon
4 green onions, chopped
2 garlic cloves, minced
1/2 cup chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook butterbeans according to package directions, and set aside.
  • Cook bacon in a large skillet over medium-high heat until crisp; remove bacon, reserving drippings in skillet. Crumble bacon, and set aside.
  • Sauté green onions and garlic in drippings until tender.
  • Stir in beans, parsley, salt, and pepper; cook just until thoroughly heated. Sprinkle with bacon.
