BUST YOUR LIPS SOUTHERN BAKED BEANS.
I never realized my mom had something special with her homemade baked beans until I got older and tasted the inlaws, and other restaurants version of baked beans. I have yet to find anyone that can duplicate or make better. so I hope you enjoy it as much as we have. Also if you add whole or sliced hot dogs, you will have awesome homemade beenie weenies. (Southern slang for hotdogs and beans)

Steps:
- preheat oven to 350 degrees, use large baking dish. Be sure to foil line and parchment paper line with non stick spray on the parchment paper ( this is for easy clean up and the parchment lining is for non metal taste).
- mix all the above ingredients together in a large bowl, pour into baking dish, bake covered with once again, parchment paper then aluminum foil.
- bake for 45 minutes to 1 hour.
- before removing cover, let stand approximately 20 minutes due to dangerous heat. remove cover, stir and let stand another 10 minutes, this allows the sauce to thicken.
- Great hot or cold.
- If preparing this as a main dish, just add one pack of good name brand, beef hot dogs (such as Boar's Head) before baking and you will have a great main dish called "Beenie Weenies".

Steps:
- Peel and dice potatoes, put in large pot of water, bring to a boil, cook approx, 20 to 30 minutes. drain right away and let cool.
- put eggs in a small pot of water, put 3tsp. salt in water,(this will help with peeling them)bring to a medium boil for 5 to 7 minutes. drain, let cool, peel and chop.
- in a large bowl combine, thinly chopped onion, celery, mayonaise, mustard, relish, salt and pepper. mix together all ingredients.
- add cooked, diced potatoes, and chopped eggs. stir well, but not so much to damage the diced potatoes. serve warm or chilled.
- also please note this recipe is just as awesome if you replace the potatoes with any shaped cooked pasta.

SOUTHERN BAKED BEANS
My grandmother made these her entire life, where we all grew up, in the North Georgia Mountains. It's one of the few things I learned from her before she passed on. I have always just eyeballed the ingredients, and tasted it for flavor before popping it in the oven (before putting the bacon on, of course), so toy with it a little bit yourself if you'd like.

- Mix together the first 5 ingredients in an 8 x 8 inch baking dish.
- Break bacon strips in half and cover mixture.
- Bake for one hour.

Steps:
- Heat a skillet over medium high heat, add the bacon and cook until brown. Remove bacon with a slotted spoon. Strain all but 1 tablespoon fat.
- Add chopped onion and slowly cook, stirring in the love until caramelized; app 20 minutes.
- Add the bell peppers. Cook over low heat until cooked.
- Meanwhile mix together brown sugar, mustard, ketchup, Harissa and Emeril's essence.
- Combine this mixture with the onions, bacon and beans.
- Preheat oven 325*. Spray casserole with Pam; spoon in the bean mixture.
- Place in oven and bake for 45 minutes.
