1/2 medium yellow onion, roughly chopped
1 tablespoon chopped garlic
2 (15-ounce) cans black beans, rinsed and drained, divided
2 tablespoons freshly chopped cilantro leaves
2 teaspoons freshly chopped parsley leaves
1 egg
1/2 teaspoon red pepper flakes
1/2 cup bread crumbs
Salt and fresh ground black pepper
4 hamburger rolls
1 tomato, sliced
4 small Romaine lettuce leaves, or any other type you have on hand
1/4 cup ketchup

Steps:

  • Heat a grill or grill pan over medium-low heat.
  • In a food processor, pulse onion and garlic until finely chopped. Add 1 can black beans, cilantro, parsley, egg, and red pepper flakes and pulse to combine.
  • Transfer mixture to a large mixing bowl, add the remaining can of black beans and the bread crumbs. Season with salt and pepper, to taste, and mix until well combined.
  • Divide 2/3 mixture into 4 portions and form into patties. Save the remaining mixture for another use, like Black Bean Enchiladas. Place on hot oiled grill over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns on a grill. Place a burger on the bottom of each bun. Top with lettuce, tomato and ketchup. Cover the burgers with the top of the bun and serve.

1/4 cup uncooked white or brown rice
3/4 cup water
1 shallot, peeled and quartered
1 large beet, peeled and quartered
1 cup canned black beans, rinsed and drained
1 egg
1/2 cup breadcrumbs
2 tablespoons chopped fresh parsley
1 teaspoon cumin
1/4 teaspoon ground black pepper
1/4 teaspoon salt, or to taste
4 seeded rolls, split
1 cup baby arugula or other small salad greens
Tahini or tzatziki sauce, for serving

Steps:

  • Gather the ingredients.
  • Heat oven to 400 F. Add 3/4 cup of water to a pot and bring to a boil. Stir in rice, cover, reduce heat to low and cook for 15 minutes or until rice is tender and water has been absorbed. Set aside to cool.
  • Add quartered shallot and quartered beet to a food processor. Pulse a few times until mixture resembles rice. Add black beans and cooled cooked rice. Continue pulsing until mixture is mostly pureed, but still slightly chunky. Scrape batter into a large bowl.
  • Stir in egg, breadcrumbs, chopped fresh parsley, ground cumin, ground black pepper, and salt. Stir until combined.
  • Form into 4 equal sized patties or 8 smaller slider patties.
  • Put burgers on a parchment-lined baking sheet and bake for 15 minutes.
  • Flip and continue baking for an additional 15 minutes. Alternatively, you can also pan fry these in a skillet or cast iron pan.
  • Sandwich cooked patties in seeded rolls. Top with arugula and drizzle with a tahini or tzatziki sauce.

1 large beet (or 2 small; trimmed and peeled)
1/2 yellow onion (trimmed and peeled)
1 15.5 ounce can black beans (drained and rinsed)
1 egg (lightly beaten)
1/2 cup breadcrumbs
2 tsp smoked paprika
1 tsp cumin
1 tsp fine sea salt
1/2 tsp dried thyme
8 whole wheat burger buns (for serving)
Lettuce, tomato, onion, cheese, spreads (for serving)

Steps:

  • Preheat the oven to 400 degrees F. Lightly grease a baking sheet and set aside.
  • Use a sharp knife to cut the beets and onion into quarters. Place them in a food processor and pulse until roughly chopped. Add the black beans and pulse again until the mixture is sticky and well combined, but not overly processed. You want there to be small chunks of veggies and beans. Stop to scrape down the sides while pulsing as needed.
  • Transfer the mixture to a mixing bowl and add the eggs, breadcrumbs, paprika, cumin, salt, and thyme. Mix well with a spatula. Roll the mixture into 8 patties about 1/2-inch thick and place them on the baking sheet. Bake for 15 minutes, flip, then bake for another 5 minutes.
  • Serve the patties warm on hamburger buns with toppings of choice. Enjoy!

1 cup canned beans, such as pinto, kidney or black beans, rinsed and drained
1/2 cup walnuts
1/2 cup panko breadcrumbs
1 teaspoon kosher salt
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1 large egg, lightly beaten
3 tablespoons BBQ sauce
1 tablespoon olive oil
4 slices your favorite cheese, optional
4 burger buns
Desired toppings, for serving

Steps:

  • In a food processor, pulse the beans until coarsely chopped, then transfer to a large mixing bowl. Pulse the walnuts in the food processor until finely chopped, then transfer to the mixing bowl with the beans. Add the breadcrumbs, salt, onion powder, garlic powder, pepper, egg and 2 tablespoons of the BBQ sauce and mix well. Divide the mixture into 4 equal parts. Shape into burger patties and refrigerate for 30 minutes.
  • Heat a nonstick skillet over medium-high heat. Add the olive oil. Brush the top of each burger with the remaining 1 tablespoon BBQ sauce. Cook the burgers BBQ sauce-side down for 3 minutes. Flip and top each with a slice of cheese if using. Cover and cook until the cheese is melted and the burgers are heated through, about 3 minutes. Place the burgers on the buns and top with desired toppings.

2 cups canned seasoned black beans, drained
1 cup seasoned breadcrumbs
1/4 cup grated onion
1/2 teaspoon chili powder
1 large egg
Salt and freshly ground pepper
Canola oil, for the pan
4 slices Swiss cheese
1/2 cup mayonnaise
Hot sauce
4 burger buns, toasted
Lettuce and sliced tomatoes, for topping

Steps:

  • Mash the beans.
  • Using a fork, mash the beans in a medium bowl until they are mushy but still have some whole bean pieces throughout.
  • Make the burger mixture.
  • Mix the breadcrumbs, grated onion, chili powder, egg and some salt and pepper into the beans. Add a splash of water if the mixture looks dry. Set aside for 5 minutes. Preheat a large cast-iron skillet over medium-high heat and add a few tablespoons of canola oil.
  • Form the patties.
  • Divide the bean mixture into 4 equal balls and form into 4 nice, neat patties. Black bean burgers don't shrink when they cook, so whatever size you make them when they go into the skillet will be the size they are when they come out.
  • Cook the burgers.
  • Cook the burgers until browned, 4 to 5 minutes on each side. Add a slice of Swiss cheese to the top of each burger. Invert a second skillet on top of the first skillet and continue cooking, 2 minutes, until the cheese is melted.
  • Top the burgers.
  • Combine the mayonnaise and some hot sauce in a small bowl. Serve the burgers on toasted buns with the spicy mayonnaise, lettuce and sliced tomatoes.

1 cup black beans- cooked
1 cup brown rice- cooked
1 cup oatmeal
1 small onion- finely sliced
1/3 cup cooked beetroot- shredded finely
2 tbs chia and 3 tbs water
2 tbs tahini
2 tbs soy sauce
2 tsp mustard
Approx. 1/2 tsp hot chipoltle sauce (to taste)
1 tsp garlic powder
1/2 tsp chilli powder
1/2 tsp paprika

Steps:

  • Mash black beans and mix with all other ingredients until you have a well mixed but still textured (meaty) mixture. The mixture should be sticky but manageable. Form into burger patties approx. 1.5cm thick using your hands or use a cookie cutter as a mould to achieve neat edges (perfectionist!). Lay the burgers on a lined baking sheet and bake for approx. 10 minutes until they are just beginning to brown and then fry on a griddle pan for a few minutes each side to complete the cooking and achieve seared pan lines. Can be frozen.

75g wholemeal bread ,or sourdough
75g walnuts
400g sweet potato
400g can black beans, drained
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp onion granules
1 tbsp tomato purée
2 tbsp rapeseed oil, to fry
½ cucumber, halved, deseeded and sliced on an angle
2 large carrots (about 300g) peeled into ribbons
small bunch coriander, finely chopped
2 tbsp lime juice
1 tbsp rapeseed oil
4 sourdough burger buns
2 large tomatoes, thickly sliced
1 avocado, peeled, stoned and sliced
50g rocket
coconut yogurt or burger sauce of choice

Steps:

  • Put the wholemeal bread and walnuts in a food processor and pulse to make fine crumbs.
  • Prick the sweet potatoes with a fork and microwave for 5-10 mins until soft. Cut in half and scrape the cooked centres into the food processor with the bread and walnut crumbs. Make sure the beans are drained thoroughly then add them to the processor with the paprika, cumin, onion granules, and tomato puree. Season generously and pulse until the mixture is mostly smooth and holding together. Divide the mix into 4 patties and chill for 20 mins to firm up.
  • Meanwhile make the side salad by mixing the cucumber, carrot, coriander, lime juice and rapeseed oil together. Season and put to one side.
  • Heat the oil in a large non-stick frying pan over a medium heat. Add the patties and fry for 4-5 mins on each side until golden and hot through. Place a small handful of rocket into each burger bun. Top with the tomato slices, burgers, and then avocado. Add a dollop of coconut yogurt or burger sauce of your choice. Serve with the carrot and cucumber salad alongside.

1/4 cup dried, stemless porcini mushrooms
2 cups cooked or drained canned black beans
1 teaspoon roughly chopped garlic
3/4 cup rolled oats, or more if needed
2 teaspoons smoked paprika or chili powder
1 teaspoon cumin
1 tablespoon soy sauce
Salt and black pepper
Bean-cooking liquid, porcini soaking liquid or water
1/4 cup chopped cilantro
2 tablespoons olive oil

Steps:

  • Soak the mushrooms in hot water for 5 to 10 minutes; roughly chop.
  • Put the mushrooms, beans, garlic, oats, spices and soy sauce in a food processor with a sprinkle of salt and pepper. Let the machine run until the mixture is combined, not puréed, about 30 seconds. (Or use a potato masher.) Add oats to thicken, or liquid to thin, as needed.
  • Stir in the cilantro, and let sit for 5 minutes.
  • Shape into 4 large or 8 small patties; let them sit for 5 minutes.
  • Put the oil in a large skillet over medium-low heat. Cook until crisp on one side, about 5 minutes. Flip and cook until the burgers are crisp on the other side, another 5 minutes or so. Serve with the usual fixings.
