This cake was originated from the infamous "Oatmeal Cake". I decided to add chopped Apples and Dates. There are 2 different sizes in the photo: the Miniature Bundt cake & A Mini Bundt cake. They are great holiday treat. It puts a new spin on the traditional fruit cake.

1 1/4 c boiling water
1 c oatmeal, uncooked
1 stick butter
1 c brown sugar, firmly packed
1 c sugar
3 large eggs
2 egg whites
1 tsp vanilla
1 Tbsp baking powder
1 tsp baking soda
2 3/4 c all purpose flour
3/4 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1/3 c oil
2 large apples, peeled & chopped
1- 2 c dates, chopped
ICING
1 stick butter, melted
4 oz coconuts
2 oz pecans, chopped
1 c brown sugar, firmly packed
8 Tbsp evaporated milk

Steps:

  • 1. Preheat oven at 325. Cook Oatmeal according to instructions of Oatmeal box. 1 1/4 c. boiling water and 1 cup Oats. Stir Oatmeal until done. Set aside to cool. [20mins] While Oatmeal cools, cream butter, sugars. Add vanilla and [cooked] Oatmeal.
  • 2. In separate bowl, mix together dry ingredients: flour, baking soda, baking powder, salt, cinnamon, & nutmeg. Add chopped Dates. Dates may be sticky and stuck together. Be sure to pull apart dates and add to flour mixture. No clumps.
  • 3. In shifts, add dry mixture to Oatmeal mixture in 3 shifts. Add dry mix, add egg. Add dry mix, add egg. Add dry mix, add egg. Add the last of the dry mix to Oatmeal mixture and blend well. Add egg whites. Blend well.
  • 4. Add chopped apples to batter. Stir well. Pour batter into well greased 12 cup Bundt pan or a mini bundt pan or a miniature bundt pan. [your choice]
  • 5. Bake according to pan size. 12 Cup Bundt pan - 50 mins 6 serving Mini Bundt pan - 25 mins 12 serving Miniature Bundt pan - 20 mins Also perform the toothpick test for dryness
  • 6. ICING: Melt butter,add sugar, coconuts, and evaporated milk once cakes are done. If used the mini bundt pan, quickly remove bundt cakes out of its host, invert onto a greased baking sheet. Frost each mini bundt cakes with icing and place bake into oven and broil for max of 2 minutes. Immediately take out of oven. If used 12 cup bundt pan, follow same instructions. Invert whole cake onto greased baking sheet and quickly load icing generously on top of cake and replace in oven and broil for 2 mins or watch carefully to avoid scorching

1/3 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 pinch salt
4 tablespoons natural set low-fat plain yogurt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup unsweetened apple juice
1 teaspoon vanilla essence
2 small eggs (or 1 jumbo one)
500 g red apples, peeled cored and diced
1 tablespoon extra virgin olive oil
vegetable oil cooking spray
1 apple, grated
1 tablespoon natural set low-fat plain yogurt
1/2 teaspoon extra virgin olive oil
2 tablespoons rolled oats
1/4 cup plain flour
1/2 tablespoon brown sugar

Steps:

  • Lightly spray cake tin (round or square medium size) with spray vegetable oil. Preheat oven to 180 degrees celsius (moderate heat).
  • Cake: Combine in a bowl all dry ingredients (flour, oats, brown sugar, baking powder and baking soda, nutmeg, cinnamon, salt).
  • Combine in a small separate bowl yogurt and olive oil, then add to dry ingredients.
  • Add apple juice and eggs and beat until combined, then fold in the apples.
  • Spoon mixture into prepared cake tin.
  • Topping: Mix yogurt and olive oil in a bowl.
  • Combine oats, flour, sugar and grated apple.
  • Mix until it is a crumbly texture (If too moist you may add pinches of flour, however the crumble effect will still happen after cooked). Crumble mixture over top of cake batter and bake for 30-35 minutes or until cake is firm and bounces back when lightly touched.

1 cup quick-cooking oats
1 ¼ cups boiling water
1 ⅓ cups all-purpose flour
1 (0.81 ounce) package instant vanilla pudding mix (such as Jell-O®)
2 teaspoons ground cinnamon
1 ½ teaspoons salt
1 teaspoon baking soda
½ teaspoon ground cloves
½ teaspoon ground allspice
1 cup packed brown sugar
1 cup white sugar
½ cup butter
2 eggs
1 cup shredded coconut
1 medium Granny Smith apple - peeled, cored, and diced
½ cup butter
1 cup packed brown sugar
4 tablespoons reduced-fat coconut milk
1 cup shredded coconut
1 cup pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
  • Place oats into a bowl and cover with boiling water. Set aside.
  • Sift flour, pudding mix, cinnamon, salt, baking soda, cloves, and allspice together in a small mixing bowl. Set aside.
  • Beat brown sugar, white sugar, and butter together using an electric mixer until fluffy. Beat in eggs, 1 at a time, until combined. Stir in flour mixture and coconut until blended; stir in softened oats and apples until well blended, making sure not to overmix. Pour batter into the prepared pan.
  • Bake in the preheated oven until lightly browned on top and a toothpick or knife inserted into the center comes out clean, 35 to 40 minutes.
  • While cake is baking, melt butter in a medium saucepan over medium-high heat. Boil, stirring constantly, until butter begins to brown, 2 to 3 minutes. Reduce heat to low and stir in brown sugar and coconut milk until well blended; stir in coconut and pecans. Remove from heat.
  • Remove cake from the oven and immediately spread butter mixture over the top. Set an oven rack 2 to 4 inches from the heat source and preheat the oven's broiler.
  • Broil cake in the preheated oven until topping bubbles and browns, about 2 minutes, making sure not to burn. Remove pan from the oven. Let topping absorb into the cake before serving, about 10 minutes.

1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon

1 large egg
1-1/2 teaspoons vanilla extract
1 medium apple, peeled and chopped
TOPPING:
1/2 cup old-fashioned oats
1/4 cup all-purpose flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
3 tablespoons cold butter

Steps:

  • In a bowl, combine boiling water and oats; set aside. In a large bowl, combine the flour, baking soda, cinnamon and salt. In a bowl, combine the sugars and applesauce; beat well. Add the egg, vanilla and oat mixture; mix well. Stir into dry ingredients just until combined. Fold in apple., Pour into an 8-in. square baking dish coated with cooking spray. For the topping, combine the oats, flour, brown sugar and cinnamon. Cut in butter until mixture resembles coarse crumbs; sprinkle over batter. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1/2 teaspoon baking powder
1/3 cup apple juice

Steps:

  • Preheat oven to 350.

  • Cut in margarine with a pastry blender until mixture resembles coarse meal.
  • Reserve 1/2 cup of flour mixture for topping; set aside.

  • Beat mixture at medium speed until blended; fold in chopped apple.
  • Spoon batter into a greased 8-inch round cake pan and sprinkle with the reserved 1/2 c flour mixture over top.
