I had some leftover ingredients when I was making my Recipe #234329, so I sliced up a potato and gave it the same treatment. Turned out great.

1/2 cup flour
1/2 teaspoon cayenne
1/2 teaspoon garlic powder
1 teaspoon salt
1 tablespoon butter
1 tablespoon hot sauce
1 potato

Steps:

  • Cut peeled potato into 1/4 inch slices.
  • Dust in flour, cayenne, garlic powder and salt mixture.
  • Refrigerate 1/2 hour.
  • Dip both sides in melted butter/hot sauce mixture.
  • Bake (along with Buffalo Wings if applicable) at 400F for 40 minutes.

4 pounds large Yukon Gold potatoes, cut into 1-inch cubes
1 medium sweet yellow pepper, chopped
1 small red onion, chopped
1/2 cup Buffalo wing sauce
1 cup shredded cheddar cheese
Optional toppings: Crumbled cooked bacon, sliced green onions and sour cream

Steps:

  • Place potatoes, yellow pepper and red onion in a 6-qt. slow cooker. Add Buffalo wing sauce; stir to coat. Cook, covered, on low 6 hours or until potatoes are tender, stirring halfway through. Stir potato mixture; sprinkle with cheese. Cover and cook until cheese is melted, about 15 minutes., Transfer to a serving bowl. If desired, top with bacon, green onions and sour cream.

These potato croquettes are filled with a cheesy chicken buffalo mixture and coated with crushed up cheesy Doritos and it's going to be your next favorite appetizer.

1 lb russet potato, peeled and diced
4 tablespoons unsalted butter
1/4 cup whole milk
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup shredded chicken
1/2 cup buffalo, sauce
2 scallions, sliced
1/2 cup shredded cheese
1/2 cup flour
1 large egg
2 1/8 ounces nacho cheese tortilla chips, finely crushed
4 cups vegetable oil, for frying
1/4 cup Asian chili sauce, such as Sriracha
1 cup ranch dressing, for serving

Steps:

  • Place the diced potatoes into a saucepan filled with water. Bring to a boil and cook until the potatoes are fork tender, about 15 to 20 minutes. Drain and return to the pot. Add the butter, milk, salt, pepper, and garlic powder and mash until smooth. Set off to the side and let cool to room temperature.
  • In a small bowl, combine the shredded chicken, buffalo sauce, scallions and cheese until evenly mixed through. Set aside.
  • Using a ¼ cup measuring cup, scoop out the mashed potatoes onto the palm of your hand and flatten out slightly. Fill with about 2 teaspoons of the chicken mixture and then bring the mashed potatoes over the filling and shape into ball. Place on a baking sheet lined with parchment paper and continue filling the rest. Once all are shaped, place the pan in the freezer for about 20 minutes.
  • Place the flour into a shallow dish. Whisk the egg in a separate shallow dish. Pour the crushed chips into a third shallow dish.
  • Working with one potato ball at a time, dip each in flour, shaking off excess, and then into the egg and finally into the crushed chips. Return to the baking sheet and continue dredging the rest.
  • Fill a large pot with the oil and heat to 360 degrees F. Carefully place a few of the potato balls at a time and fry until evenly browned, about 2 to 3 minutes. Using a slotted spoon, carefully transfer out of the oil and place on a plate lined with paper towels.
  • Top with sriracha to make the lines of the basketballs. Serve with ranch.

2 cups tortilla chips
½ teaspoon buffalo seasoning
¼ cup buffalo sauce
1 pinch garlic powder
4 tablespoons tapioca flour
4 tablespoons unsweetened almond milk
2 medium yellow potatoes

Steps:

  • Preheat oven to 450°F.
  • Place tortilla chips in the food processor and blend into a fine crumb mixture.
  • Mix crumbs together with spices In a bowl. Stir and set aside.
  • Slice your potatoes.
  • Then coat slices in the tapioca flour, dip into almond milk, and then coat in the tortilla chips. Place on a sprayed or lined pan and bake for 30 minutes, flipping halfway through. Toss in the buffalo sauce after the potatoes have cooled for a few minutes.
  • Serve warm.

This is from Woman's Day. We had these for dinner tonight and thought they were very good. Be sure to dip them in the dressing -- it makes the recipe in our opinion. Next time I would double the hot pepper sauce but then we really like spicy. The recipe easily halves for two.

4 medium baking potatoes, scrubbed
2 tablespoons butter, melted
1 tablespoon hot sauce (can use more or less, we used Frank's)
1/2 sea salt (can use less)
1/4 teaspoon garlic powder (optional)
1/4 teaspoon onion powder
1/2 cup bottled blue cheese (lite may be used) or 1/2 cup ranch dressing (lite may be used)

Steps:

  • Heat oven to 350 degrees. Have a rimmed baking sheet ready.
  • Pierce potatoes in 3 or 4 places with a fork. Bake directly on oven rack 55 to 60 minutes or until tender when pierced with a fork. Remove to cool.
  • When baked and removed, increase oven temperature to 450 degrees,.
  • When cool enough to handle, cut each potato into quarters.
  • With a spoon, scoop pulp from skins, leaving at least 1/4 inch think shell. Reserve pulp for another use (I made mashed potatoes).
  • Place skin side down on ungreased rimmed baking sheet.
  • Mix butter, hot sauce, salt, garlic and onion powder in a small bowl.
  • Brush evenly on potatoes.
  • Bake 15 minutes or until browned at edges and crisp.
  • Serve with dressing for dipping.

1 -2 tablespoon olive oil

  • Spray a baking sheet with cooking spray.
  • Arrange potato wedges on sheet and drizzle with olive oil Sprinkle with salt, pepper, and garlic powder.
  • Bake at 375º for 30 minutes until tender.
  • Remove pan from oven.
  • Combine the hot sauce and butter in a microwave safe bowl and microwave on HIGH until melted.
  • Stir to combine.
