1 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup buttermilk
4 boneless skinless chicken breast halves (4 ounces each)
1 cup canola oil
1/2 cup hot pepper sauce
1/4 cup butter, melted
4 spinach tortillas (10 inches)
1 cup shredded lettuce
1 cup shredded cheddar cheese
2/3 cup chopped tomatoes
1/2 cup blue cheese salad dressing

Steps:

  • In a shallow bowl, combine the flour, salt and pepper. Place buttermilk in another shallow bowl. Dip chicken in buttermilk, then roll in flour mixture. , In a large skillet, cook chicken in oil for 4-5 minutes on each side or until a thermometer reads 170°. Drain on paper towels; cut into strips., In a small bowl, combine hot pepper sauce and butter. Dip chicken strips into mixture, coating both sides. Place chicken in the center of each tortilla. Layer with lettuce, cheese and tomatoes; drizzle with salad dressing. Fold ends of each tortilla over filling; secure with toothpicks if desired.

1 pound boneless skinless chicken breasts
2 Tablespoons olive oil
1/2 cup Frank's Hot Sauce
1/2 teaspoon paprika
1/2 teaspoon garlic powder
pinch of salt
4 large flour tortillas
1/2 cup Blue cheese or Ranch dressing
2 cups Romaine lettuces (, chopped)
1/2 cup carrot (, shredded)
1/2 avocado (, sliced)
1/2 cup shredded cheddar cheese

Steps:

  • Slice chicken breast into several long, thin strips.
  • In a small bowl, whisk together olive oil, hot sauce, paprika, garlic powder and salt. Add chicken and allow to marinate for at least 10 minutes (or up to 24 hours).
  • In a large non-stick skillet over medium-high heat, add the chicken strips. Cook until no longer pink, about 4-5 minutes.
  • Meanwhile, place tortillas on a plate and spread with a thin layer of bleu cheese or ranch dressing. Layer with lettuce, carrots, avocado, and cheese.
  • Arrange a few chicken strips down the center of each tortilla. Wrap tightly, like a burrito. Serve with a side of hot sauce or extra dressing, if desired! Enjoy!

1 pound skinless, boneless chicken breasts, cut into bite-size pieces
¼ cup hot sauce
4 (10 inch) flour tortillas
2 cups shredded lettuce
1 celery stalk, diced
½ cup blue cheese dressing

Steps:

  • Heat the vegetable oil and butter in a large skillet over medium-high heat. Place the chicken in the pan; cook and stir until the chicken is no longer pink in the center and the juices run clear, about 10 minutes. Remove the pan from the heat. I love buffalo wings, but I really don't like the hassle of preparing chicken. I found a can of chicken in the pantry and this is what I came up with. I made a wrap since I wasn't super hungry, but it would make a wonderful quesadilla if you prefer something heavier. La Tortilla Factory low carb wraps are perfect for this, they have lots of fiber and fewer calories than traditional flour or corn tortillas. I always use Frank's Buffalo sauce, but if you can't find it - 1 part Louisiana hot sauce and 1 part margarine works instead.

1 (12 1/2 ounce) can white chicken meat packed in water
2 tablespoons margarine
4 tablespoons buffalo wing sauce
1/4 cup monterey jack pepper cheese, shredded
2 low-fat low-carb whole wheat tortillas

Steps:

  • Heat the margarine and buffalo sauce over medium heat in a medium saucepan.
  • Open the can of chicken, drain the water, and dump it into the pan.
  • Simmer for about 10 minutes, using a spatula to "shred" the chicken (just mash it a bit and it will shred nicely).

1 flour tortilla
shredded cheddar cheese
3 frozen breaded chicken strips, cooked according to package directions
10 dashes Frank's red hot sauce
sliced green pepper
chopped tomato
lettuce
ranch dressing
salt and pepper

Steps:

  • Chop or slice cooked chicken strips.
  • Place cheese in a strip in the middle of the tortilla.
  • Place chicken on top of cheese.
  • Sprinkle chicken with Frank's Red Hot Sauce.
  • Top chicken with green pepper and tomato.
  • Top that with lettuce.
  • Pour ranch dressing over lettuce.
  • Sprinkle with salt and pepper to taste.
  • Roll up tortilla and enjoy.
