FROSTED FUDGE BROWNIES
A neighbor brought over a pan of these rich fudge brownies along with the recipe when I came home from the hospital with our baby daughter. I asked her how to make brownie frosting like that, and I've made them ever since for family occasions, potlucks and parties at work. -Sue Soderlund, Elgin, Illinois

- In a saucepan, melt butter. Remove from the heat. Stir in cocoa; cool. In a large bowl, beat eggs and sugar until blended. Combine flour, baking powder and salt; gradually add to egg mixture. Stir in vanilla and the cooled chocolate mixture until well blended. , Spread into a greased 13x9-in. baking pan. Bake at 350° until a toothpick inserted in the center comes out clean, 25-28 minutes (do not overbake). Cool on a wire rack. , For frosting, in a large bowl, cream butter and confectioners' sugar until light and fluffy, 5-7 minutes. Beat in cocoa and vanilla. Add enough milk for the frosting to achieve spreading consistency. Spread over brownies. Cut into bars.

- Combine the milk, butter, and sugar together in a saucepan and bring to a boil; allow to cook at a rolling boil for 30 seconds and immediately remove from heat. FUDGE FROSTED BROWNIES
There are a zillion brownie recipes out there. This one remains my favorite after nearly 40 years. Some of us have unsweetened cocoa powder and powdered sugar that have been sitting in the cupboard for a year or more, and with their age, can give baked goods and frosting a flat, cardboard taste. As with all recipes, the quality of ingredients determines the quality of the finished product. *Make sure to use cocoa powder, NOT hot cocoa mix in this recipe.*

- Grease a 9x9 inch pan and preheat the oven to 350*.
- Beat the butter and sugar together until fluffy.
- Beat in the vanilla, then the eggs one at a time.
- Sift together the flour, cocoa powder, and salt, and blend into butter mixture.
- Pour into greased pan and bake ABOUT 30 mins., depending on your oven. *BAKE LESS TIME IF YOU LIKE YOUR BROWNIES FUDGEY AND MORE TIME IF YOU LIKE THEM CAKEY*.
- While brownies are baking, make the frosting: In a saucepan over low heat, melt butter and stir in cocoa powder and milk.
- Off heat, beat in the sugar.
- Spread evenly over brownies while they are still warm (not immediately out of the oven).
- When cool, cut into small squares.
- The yield depends on how large you cut them.
- This recipe is easily doubled (bake in a 9x13 pan) and nuts may be added to both the brownies and the frosting.

BROWNIES WITH COOKED FUDGE ICING
This is a recipe my mom made when I was a kid. It is always a favorite when I make these. It is one of the few recipes, I don't try to skinny down.

- 1. For Brownies: Melt butter and chocolate together. About 3 minutes in the microwave.
- 2. Beat eggs in small bowl. Add sugar and vanilla. Mix until well blended. Add to melted butter/chocolate mixture. Mix well.
- 3. Sift flour and salt together. Mix with nuts(optional); add last to mixture.
- 4. Put into greased pan. Bake 25 minutes at 350º or until toothpick comes out clean. Let the brownies cool before icing.
- 5. Quick Fudge Icing Mix sugar and cocoa in saucepan. Stir in butter, milk, corn syrup and salt. Bring to full rolling boil. Boil vigorously for 3 minutes, stirring occasionally.
- 6. Cool for about 10 minutes. Beat in sifted confectioners sugar and vanilla. Pour over brownies. The icing will harden as it cools, so work quickly.
FUDGE FROSTING
Just like fudge candy - only for a cake. Use a palette knife to make pretty swirls after spreading and that is the only decoration needed!

COOKED FUDGE FROSTING
A Tradition in the South. Pour this frosting over a cooled yellow cake in which holes have been poked to allow all the goodness to saturate the cake. The frosting firms up after cooling and makes a wonderful cake topping.
