A single serving brownie in a mug recipe that's perfect for any time you're craving an easy chocolate dessert.

1 tbsp unsweetened cocoa powder
2 tsp dutch cocoa, (or additional regular)
3 tbsp spelt,
2 tbsp sugar, (or sub erythritol if desired)
scant 1/4 tsp baking powder
1/8 tsp salt
1 tbsp oil or nut butter ((some readers sub applesauce or banana))
3 tbsp milk of choice
1/2 tsp pure vanilla extract

Steps:

  • Notes: If you want to remove the cake before eating it, be sure to grease the mug before starting. If you can't find dutch cocoa, subbing additional regular will still work; it will just have less of a brownie flavor. I haven't tried subbing applesauce or banana for the fat and therefore can't vouch for the taste of that substitution.If baking, preheat oven to 350 F. Combine all ingredients in a mug or 1-cup dish (or two 1/2-cup dishes). Either bake around 14 minutes, OR microwave until set. Microwave times will vary depending on wattage and if using one or two dishes - I cooked mine for 1 minute, followed by two 10-second increments.   • Stir flour, sugar, cocoa powder, cinnamon, and salt together in a microwave-safe mug. Stir water, oil, and vanilla extract into flour mixture with a fork until smooth.
  • Microwave until set, 1 to 5 minutes.

Instead make this amazing chocolate brownie in less than 2 minutes. Indulging in a treat like this is perfect for those of you (me included) on a diet, who are craving dessert but don't want to go overboard by baking a dozen cookies or so. A single serving is very satisfying, and I've included 6 different variations so you can adjust the toppings/mix-ins to your taste. I tried the mounds one tonight and it was AMAZING! I also used hersheys special dark cocoa powder instead of regular cocoa, and it came out extra rich and chocolatey. This is a dense, moist and rich mug brownie, perfect with a glass of milk or a scoop of ice cream, enjoy!!!

1/4 cup flour
2 tablespoons cocoa
1 pinch salt
2 tablespoons vegetable oil or 2 tablespoons melted butter

Steps:

  • Add all of dry ingredients to mug.
  • Mix well with a fork or small whisk until blended.
  • Add oil or melted butter, water, and vanilla.
  • Mix well (add mix-ins if using).
  • Put in the microwave and cook on high heat for 1 minute 40 seconds - 2 minutes (less time for a more moist brownie, more time for a more cake-like brownie).
  • Add toppings or a scoop of ice cream and enjoy!
  • Variations:.
  • Mounds: add 1-2 tablespoons chocolate chips and a sprinkling of sweetened flaked coconut on top of cooked brownie.
  • Peanut Butter Swirl: add 1-2 tbsp creamy peanut butter into mix before microwaving, or add 1 tablespoons on top of brownie after its cooked (I've noticed the peanut butter swirl tastes best with peanut butter on top of the brownie after it's cooked).
  • Berry Jam: top cooked brownie with 1-2 tablespoons melted berry jam (strawberry, raspberry or blackberry is best. Just heat in microwave until melted then pour over brownie).
  • S'mores: top cooked brownie with mini marshmallows and graham cracker crumbs.
  • Candy Bar: mix in 1-2 tablespoons of your favorite chopped chocolate candy bar into the mix before heating, or add m&ms.
  • Caramel Sea Salt: drop 2 salted caramels into the middle of the mix before heating, and once done top with a light sprinkle of sea salt.

This makes a delicious brownie for one in about a minute. 60 seconds makes a molten center brownie. 75 seconds make a uniformly done brownie. Be careful not to overcook.

1 tablespoon flour (Use Whole Wheat or other flour for healthier alternative)
1 tablespoon sugar (Do not Substitute)
1 tablespoon unsweetened cocoa powder
1 pinch baking soda
1 pinch salt
1 -2 tablespoon low-fat vanilla yogurt
1 -3 tablespoon chocolate chips (optional)

Steps:

  • Mix flour, sugar, cocoa, baking soda, and salt in a mug.
  • Mix in 1 Tablespoon of Yogurt. If too thick, add 1 more Tablespoon and mix until you get a brownie batter consistency.
  • Mix in desired amount of your favorite chocolate chips (use semi-seeet or dark chocolate for a bit of a healthier alternative) this step is optional! If you have a different toppings you like to put in your brownies, add it now.
  • Microwave for 1:10 Seconds. All microwaves are different, so time may vary.
  • Sprinkle some more chocolate chips (or other topping) on top. (Optional).
  • Let cool for 1-3 Minutes.
