My husband, Alan, got this fantastic recipe from a college friend after his Alaskan fishing trip.

1 swordfish or halibut steak (about 1 inch thick)
1 tablespoon butter, melted
1/4 cup mayonnaise
1/4 cup shredded Parmesan cheese

Steps:

  • Place fish in a greased 1-qt. baking dish. Drizzle with butter. Combine mayonnaise and Parmesan cheese; spread over fish. , Bake, uncovered, at 425° for 16-20 minutes or until fish flakes easily with a fork.

Broiled Swordfish Steaks image

These broiled swordfish steaks pair perfectly with fresh parsley sauce and are a source of healthy fats. You may also use tuna, halibut, or salmon.

2 pounds swordfish steaks, about 1-inch thick
1 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon sweet Hungarian paprika
5 tablespoons butter, melted
Optional: chopped fresh parsley
Garnish: lemon wedges
For the Garlic Parsley Sauce:
1/2 cup fresh parsley, minced
1 tablespoon lemon zest
3 cloves garlic , minced
1/3 cup olive oil
3 tablespoons fresh lemon juice
Kosher salt, to taste
Black pepper, to taste

Steps:

  • Sprinkle the swordfish steaks with salt , pepper, and paprika and gently rub into the fish.
  • Preheat a greased broiler rack.
  • Place the swordfish steaks on the greased broiler rack and brush with the melted butter. Put them under the broiler, about 2 to 3 inches from the heat source. Broil the steaks for about 4 minutes.
  • Turn the swordfish steaks, brush with more melted butter, and broil for 4 to 5 minutes longer.
  • The fish should be lightly browned and will flake easily with a fork when done.
  • Transfer the swordfish to a platter or individual plates and sprinkle with chopped fresh parsley, if desired. Serve with lemon wedges and drizzle servings with a tablespoon or two of garlic parsley sauce (below), if desired.
  • Serve with rice or potatoes.
  • In a bowl, combine the 1/2 cup of chopped parsley with the grated lemon zest, minced garlic, olive oil, and 3 tablespoons of fresh lemon juice.
  • Season with salt and freshly ground black pepper, to taste.

For this delectable seafood dinner, Martha puts fresh swordfish steaks in a citrusy, herby marinade before cooking them under the broiler. For an extra lovely presentation, use cherry tomatoes on the vine.

3 tablespoons chopped fresh herbs, such as parsley or dill, or a combination
6 tablespoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest, plus 2 tablespoons fresh juice
Kosher salt and freshly ground pepper
3 cups cherry tomatoes (1 1/2 pints)
2 cloves garlic, minced (2 teaspoons)
Pinch of red-pepper flakes
3 swordfish steaks (each 1 inch thick; about 1 1/2 pounds total)

Steps:

  • Preheat oven to 425°F, with a rack 6 inches from heating element. Stir together herbs, 1/4 cup oil, and lemon zest and juice; season with salt and pepper.
  • Toss tomatoes with remaining 2 tablespoons oil; season with salt and pepper. Arrange tomatoes in a shallow nonreactive baking dish and roast, stirring once halfway through and breaking up some with back of spoon, until burst and beginning to collapse, 15 to 20 minutes. Stir in garlic and red-pepper flakes; roast 5 minutes more. Remove from oven and cover; switch oven to broil.
  • Meanwhile, season swordfish with salt and pepper and rub half of herb oil over both sides. Let stand 15 minutes. Arrange fish on a broiler-safe pan and broil, flipping halfway through, until cooked through and browned in places, 6 to 8 minutes total. Transfer to dish with tomatoes, slice, and serve, drizzled with remaining herb oil.

2 swordfish steaks, 1 1/2 inches thick, about two pounds in all
2 tablespoons creme fraiche
1 medium onion, chopped
2 cloves garlic, minced
3 tablespoons olive oil
4 cups canned Italian tomatoes, coarsely chopped
1/2 teaspoon hot pepper flakes
2 teaspoons fresh rosemary leaves
Coarse salt and freshly ground pepper to taste
1 pound cooked chick peas or two 8-ounce cans, rinsed and drained

Steps:

  • Preheat broiler. Spread the swordfish steaks on both sides with the creme fraiche. Set aside.
  • Soften the onion with the garlic in the olive oil. Add the tomatoes, hot pepper flakes, rosemary, salt and pepper. Simmer gently for 15 minutes. Add the chick peas and cook another 10 minutes.
  • Meanwhile, season the swordfish steaks with salt and pepper and broil, turning once, until medium rare. Serve with chick peas on the side.

4 8-ounce pieces swordfish (or 1 2-pound steak)
3 tablespoons olive oil
Juice 1 lemon
1 tablespoon fresh thyme leaves, chopped (or 1/2 teaspoon dried)
Coarse salt and freshly ground pepper to taste
2 shallots, coarsely chopped
4 ripe tomatoes, peeled, skinned and chopped (or 1 1/2 cups canned)
1 tablespoon fresh rosemary leaves, chopped (or 1 teaspoon dried)

Steps:

  • Wipe the swordfish dry with paper towels. Combine two tablespoons olive oil with the lemon juice, thyme, salt and pepper. Brush the mixture on the swordfish and marinate for one hour.
  • Preheat broiler to high.
  • Meanwhile, soften the shallots in the remaining tablespoon olive oil over low heat and add the tomatoes and rosemary. Cook for three to four minutes, stirring occasionally. Set aside.
  • Broil the swordfish for five to seven minutes, turn and broil for about three minutes longer. Place on a serving dish or individual warm plates and place the tomato-rosemary mixture on the side. Serve immediately.

I'm showing you how to grill what I think is the most delicious seafood named after a weapon (sorry razor clam!). Although, I'm going to be honest, this was really just an excuse to show you the white hot sauce.

1 habanero chile, seeded and thinly sliced
¼ teaspoon kosher salt
½ cup mayonnaise
1 tablespoon extra-hot prepared horseradish
2 teaspoons lemon juice
1 tablespoon apple cider vinegar, or to taste
¼ teaspoon ground white pepper
⅛ teaspoon garlic powder
2 (6 ounce) swordfish steaks
2 teaspoons olive oil
salt to taste
1 tablespoon sliced green onions

Steps:

  • Crush the habanero and kosher salt into a fine paste with a mortar and pestle before whisking in mayonnaise, horseradish, lemon juice, vinegar, white pepper, and garlic powder.
  • Strain sauce through a fine mesh strainer before using to remove the pepper skins and particles of horseradish. Set aside until needed.
  • Preheat a charcoal grill until coals are very hot.
  • Coat filets on both sides with olive oil and season with salt.
  • Place filets on the preheated grill, flipping as needed, until they spring back lightly to the touch. Remove from heat.
  • Plate fish as desired and top with white hot sauce and green onions.

  • Strip the rosemary sprigs and discard the stems. Finely dice the fresh rosemary, it should come to about 1 tablespoon or more. Add to the butter mixture and pour over the swordfish in a plastic zip bag or container to marinate for 20 minutes or up to an hour tops (See Note 1).
  • Preheat grill to 500°F. Place swordfish on a cleaned grill. Drop heat to 400°F and baste with reserved marinade. I like to get grill marks on mine and 2-3 minutes per side should do it for a tender, cooked through swordfish. (See Note 2)
