PARMESAN AND ALMOND CRUSTED SALMON
You'll love the crispy coating on almond crusted salmon. Parmesan cheese, crushed almonds, and butter star in this easy but fabulous baked salmon.

- Preheat oven to 425°F. Prepare shallow baking dish that can accommodate both fillets without overlapping by lightly spraying with cooking spray.
- Rinse salmon and pat dry with a paper towel. Place salmon fillets skin side down in baking dish.
- In a small bowl, melt butter in microwave. Add almonds, Parmesan cheese, garlic powder, salt and pepper. Mix well until the almonds and cheese are well coated with the melted butter. Top each salmon portion with the topping mixture, using half for each, pressing lightly to adhere.
- Bake for 20-25 minutes, until the crust has turned light golden brown and salmon is cooked. Internal temperature of salmon should be 145°F. Cooking time depends greatly on the thickness of your salmon fillets.
- Serve immediately.

- Position a rack in the middle of the oven. Preheat oven to 400°F | 200°C. Line a baking tray / sheet with a large piece of foil. Place the salmon fillet, skin side down, on the baking sheet; set aside.
- Mix together the breadcrumbs, parmesan cheese, parsley and garlic in a small bowl. Pour in the melted butter; season with 3/4 teaspoon salt and 1/3 teaspoon pepper (or to taste). Using your hands (it's easier than using a wooden spoon), mix the ingredients together until the breadcrumbs absorb the butter (about 40 seconds).
- Pour the mixture over the salmon, pressing it into the top until the fillet is completely covered. Lightly spray salmon with cooking oil spray for a golden crumb.
- Bake uncovered for 12-15 minutes (depending on the thickness of your fillet), until the crust is golden and the salmon is cooked and flakes easily with fork.
- Serve with lemon wedges and a squeeze of lemon (optional). Team with a salad, steamed vegetables, rice or mashed potatoes.

- Preheat the oven's broiler and set the oven rack about 6 inches from the heat source. Line a jelly roll pan with aluminum foil, and spray with nonstick spray.
- Place garlic and olive oil in a small microwave safe bowl and cook on High for 1 1/2 minutes. Melt the butter in a saucepan over low heat, and stir in the garlic mixture. Remove from heat; stir in the Worcestershire sauce, lemon juice, white wine, black pepper, garlic salt, and fines herbs.
- Place the salmon fillets skin-side down on the prepared pan. Spoon about 1/3 of the butter sauce over the fillets, and sprinkle evenly with the fresh dill.
- Broil in the preheated oven for 3 minutes. Turn salmon fillets so that the side of the fillet faces up, and baste fillets with about 1/3 of the butter sauce; broil for 3 minutes. Turn the fillets to place the opposite side facing up; spoon on the remaining butter sauce; broil until the fish flakes easily with a fork, about 3 additional minutes.

- Pour dressing over salmon in shallow dish. Refrigerate 20 min. to marinate.
- Heat broiler. Remove salmon from marinade; discard marinade. Place salmon on rack of broiler pan or in shallow baking pan. Broil, 6 inches from heat, 5 min. or until salmon flakes easily with fork. Meanwhile, steam green beans.

- Dry salmon before cooking. Place salmon filets on a paper-towel lined plate to dry. Let sit 5-10 minutes, then turn over and dry an additional 5-10 minutes. Season salmon on both sides with salt and pepper.
- Cook the zucchini. Preheat oven to 375 F. Place zucchini on a rimmed baking sheet, then drizzle with 2 Tbsp extra virgin olive oil and season with salt and pepper. Toss to combine, then roast until tender, about 15-20 minutes, stirring once halfway through.
- Make the couscous. Place 1 ¼ cups water in a sauce pan then bring to a boil. Add couscous, turn heat to a simmer, then cover and set aside until all water has absorbed, about 5 minutes. Fluff couscous with a fork, drizzle in remaining 2 Tbsp extra virgin olive oil, roasted zucchini, and pine nuts. Gently toss to combine.
- Cook the salmon. Heat oil in a large nonstick skillet over medium-high heat. When hot, add salmon skin side down. Cook until skin is crisp and salmon easily pulls away from the pan, about 4-5 minutes. Carefully flip and cook other side until salmon registers between 110 and 120 F for medium rare, about 3 minutes more. Cook longer as desired, but remember the fish will continue to cook a little after you remove it from the pan.
