- Arrange the salmon steaks in a buttered flameproof baking dish just large enough to hold them in one layer, brush them lightly with some of the butter, and season them with salt and pepper. Pour the wine around the steaks and broil the steaks under a preheated broiler about 4 inches from the heat for 4 to 5 minutes, or until they are almost cooked through. While the steaks are cooking, stir together well the remaining butter, the bread crumbs, the horseradish, and the scallion, pat the crumb mixture evenly on the steaks, and broil the steaks for 2 to 4 minutes more, or until they are just cooked through and the crumbs are golden.

- Check that all bones have been removed from filets. In a small bowl, cream together butter and horseradish with a spoon. Stir in breadcrumbs and combine well. Season salmon and mound breadcrumb mixture on top and press down to cover top of salmon. Preheat broiler. Heat oil in nonstick skillet. Lay salmon pieces into skillet and cook over medium high heat until browned on bottom. Slide under broiler and cook for 3-4 minutes or until golden brown on top. Keep warm in oven until ready for service.

- Heat oven to 200C/fan 180C/gas 6. Whizz the bread into crumbs in a food processor. Add the horseradish and thyme, then season and mix well.
- Put the salmon in one layer in a lightly oiled baking dish. Press the crumbs on to the flesh, then bake for 10-12 mins.
- Meanwhile, put the cabbage in a large pan with a little salt and pour in boiling water to come halfway up. Cover and cook for 8-10 mins until tender. Drain well, then return to the pan with the yogurt and plenty of black pepper. Reheat gently. Pile the cabbage onto plates and serve with the salmon.

- Rinse the salmon steaks and pat dry with paper towels.
- In a shallow dish, combine the worcestershire sauce, mustard, tabasco, salt and pepper and stir with a fork to combine.
- Set the salmon steaks in the dish and turn so that they are evenly coated with the mixture.
- Let stand for 15 minutes.
- Set the oven rack 3 to 4 inches below the element and preheat the broiler.
- Line the broiler pan or baking sheet with a piece of foil and lightly oil the foil.
- Using tongs, take the salmon steaks from the marinade, allowing excess to drip off, and arrange them on the foil with at least an inch between them; reserve the marinade.
- Broil the salmon until lightly browned, 3 to 5 minutes.
- Take the pan from the oven, turn the steaks and spoon on some of the reserved marinade.
- Continue broiling until the salmon is just barely opaque through the thickest part (cut to test), 3 to 5 minutes longer.
- Transfer the salmon steaks to individual plates, sprinkle with the minced parsley and serve.

- To make the horseradish mustard sauce, mix mustard, horseradish and scallions in a small bowl.
- If making roulades, debone the salmon stakes: Set the steak out flat on a cutting board and, using a sharp knife, cut out the thin layer of bones that run along the inner edge of each steak. Make sure to leave the cartilage at the top, that holds the two sides of the steak together. (see photos in post) Here’s a great video to show you how to debone a salmon steak.
- To stuff and roll up the roulades, lay all the steaks out in long strips with the inside (where the bones were) facing up. Divide the horseradish mustard mixture evenly among the four strips, coating the top of each strip from one end to the other. Carefully roll up each salmon strip and place it in the prepared baking dish. Drizzle a little olive oil over the rolls and sprinkle them with a pinch or two of salt and a few grinds of pepper.
- If using salmon fillets, set the fillets in the prepared pan, coat the tops with the horseradish mixture, drizzle with olive oil and sprinkle with salt and pepper, to taste.
