- Whisk together dry red wine, orange juice, garlic, shallots, rosemary, oregano, and olive oil in a small bowl. Pour mixture into a large heavy-duty zip-top plastic bag, reserving 1/4 cup; add lamb chops. Seal bag, and chill 2 hours.
- Remove chops from marinade, discarding marinade. Sprinkle with salt and pepper. Place chops on a lightly greased rack in a broiler pan.
- Stir together reserved 1/4 cup wine mixture and honey.
- Broil chops 3 inches from heat (with electric oven door partially open) 5 minutes on each side or to desired degree of doneness, basting with honey mixture after 3 minutes. If using loin chops instead of rib chops, broil loin chops 3 more minutes on each side.
BROILED LAMB LOIN CHOPS WITH OLIVE-MINT SALSA

- In a medium bowl, mix the olives, 3 Tbs. of the oil, the parsley, mint, shallot, vinegar, capers, and orange zest. Season to taste with salt and pepper. Set aside for 20 minutes to let the flavors meld. Position an oven rack 6 inches from the broiler and heat the broiler on high. Lightly oil the grate of a broiler pan and line the bottom of the pan with foil. Rub the lamb chops with the remaining 1 Tbs. oil and generously season all over with salt and pepper. Set the lamb chops on the prepared pan and broil until well browned, about 8 minutes. Flip the chops and continue to cook until the second side is well browned, about 3 minutes more for medium rare. Let the lamb rest for 5 minutes. Top each lamb chop with some of the olive salsa and serve.

This recipe was inspired by my dad, Mark Boone, who loves lamb chops and pistachios. In this dish, the nuts add richness to a riff on a classic salsa verde. The bright, herby sauce is the perfect accompaniment to grilled lamb chops.

- Make the Pistachio Salsa Verde:
- Pulse shallots, garlic, parsley, mint, pistachios, lemon juice, capers, red pepper flakes, and salt in a food processor until coarsely chopped. Scrape into a medium bowl and stir in oil.
- Cook the lamb chops:
- Season lamb chops with salt and pepper; allow to come to room temperature.
- Prepare a grill or grill pan for medium-high heat. Grill chops, working in batches if needed, until an instant-read thermometer inserted into the thickest part of the lamb registers 125°F for medium-rare, 2-3 minutes per side. Serve with Pistachio Salsa Verde.

- Pistachio Salsa Verde can be stored and chilled in an airtight container for up to 3 days.

- Clean your lamb chops and trim any fat from edges, if needed. Place lamb chops in large glass plate or container.
- Make the mint chimichurri marinade by placing all of the marinade ingredients (minus oil and salt and pepper) into the bowl of a food processor. If you prefer an extra spicy marinade, keep a few seeds from the serrano pepper and place in food processor with other ingredients.
- Process until well combined. Then slowly add in your oil and salt pepper while processing on low. The marinade should result in a thick sauce with small pieces of herbs still in it. See pictures in blog post.
- Next, marinate the lamb chops in half of the mint chimichurri sauce marinade for 1 hr to 24 hours. Save the other half for serving.
