Broccoli-Cheddar Latkes image

Latkes made with 1lb broccoli and 1 potato. Original recipe calls for 1/4 cup canola oil inside the batter, I may try this with melted butter instead. I would also squeeze out the grated potatoes and broccoli, because the dryer they are, the crispier they fry. Original recipe from Nina Safar on Yahoo Food.

Number Of Ingredients 12

1 lb broccoli floret, chopped and steamed
1 russet potato, peeled and grated
1 small onion, diced
1/2 cup panko breadcrumbs
2 eggs
1/2 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
2 tablespoons flour
1 cup shredded cheddar cheese
1/4 cup canola oil
vegetable oil, such that it reaches a 1/2-inch depth in the pan (for frying)

Steps:

  • Place broccoli in large mixing bowl. Add the potato, onion, breadcrumbs, eggs, pepper, salt, cayenne pepper, flour, cheese and canola oil and mix well.
  • Heat vegetable oil to about 360 degrees F in a large, heavy skillet. Shape broccoli-potato mixture into 3-inch patties and fry until golden brown, about 3 minutes on each side. Dry on paper towel-lined plates, and then serve!

Homemade soup! It's so quick and easy, it can be on your dinner table in 30 minutes.

2 cans (10 3/4 oz each) condensed Cheddar cheese soup
2 cups water
6 cups frozen broccoli florets
2 cups milk
1/2 teaspoon ground mustard
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 cups shredded Cheddar cheese (8 oz)

Steps:

  • In 4-quart saucepan, mix soup and water. Heat over high heat, stirring constantly, until boiling and smooth.
  • Add broccoli. Heat to boiling; reduce heat to medium. Cover; cook 8 to 10 minutes, stirring occasionally, until broccoli is tender.
  • Stir in milk, mustard, salt, garlic powder and pepper. Cook uncovered 3 to 5 minutes, stirring occasionally, until thoroughly heated. Stir in cheese until melted.
