5 cups broccoli florets (chopped into small bites)
1 apple (cored and diced)
1 pear (cored and diced)
1/4 cup red onion (diced)
1 cup cashews (toasted or roasted)
1 cup dried cranberries
1/2 cup mayonnaise
1/2 cup sour cream (or kefir or Greek yogurt)
2 tablespoons lemon juice
1/4 cup honey (softened or warmed up)
1/4 teaspoon salt

Steps:

  • In a large bowl, combine together chopped broccoli, diced apple, diced pear, diced red onion, cashews (toasted or roasted) and dried cranberries.
  • In a small bowl, stir together mayonnaise, sour cream (or kefir or Greek yogurt), lemon juice, honey, and salt. Note that honey should be soft and runny, warm it up if needed, so that it mixes easily. Whisk the ingredients until well combined and smooth. Add salt if needed.
  • Add the dressing to the broccoli salad and stir everything together.

1 pound bacon
1 cup mayonnaise
2 teaspoons cider vinegar
½ cup white sugar
2 pounds fresh broccoli, broken into florets
½ cup raisins
1 cup roasted cashews
¼ red onion, finely chopped

Steps:

  • Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Cool bacon and crumble into pieces.
  • Whisk together the mayonnaise, cider vinegar, and sugar in a mixing bowl until the sugar has dissolved. Add the broccoli, raisins, cashews, onion, and crumbled bacon. Stir until evenly coated. Cover and refrigerate the salad for at least 2 hours. Let stand at room temperature 15 to 20 minutes before serving.

Steps:

  • Cook and crumble the bacon. Set aside. In a large mixing bowl, combine mayonnaise, cider vinegar, and sugar. Whisk together until sugar is dissolved.
  • Add the broccoli, bacon, and cashews. Mix together until the salad is coated well in the mayonnaise mixture. Chill for 2 hours and let stand for 15 minutes before serving.

This is a favorite salad and goes very quickly at dinner parties and potlucks. It is similar to the broccoli salad that is served at Souplantations. The dressing can be double or reduced to suit your taste.

1 medium bunch broccoli, uncooked, washed, cut into florets
4 slices of cooked bacon, crumbled
½ cup cashews
1/3 cup golden raisins
¼ cup red onion, chopped
dressing:
1/2 cup mayonnaise
2 tablespoons of sugar
1 tablespoon of apple cider vinegar

Steps:

  • 1. In a large bowl, mix the broccoli, cashews, raisins, onions, and the cooked crumbled bacon.
  • 2. In a small bowl, mix the dressing ingredients with a whisk until smooth.
  • 3. Mix all or half of the dressing with the broccoli mixture to suit your taste. Chill to allow flavors to meld for about 30 minutes than serve.

A new recipe a neighbor gave us. What a hit with my family. Just the right mixture of garlic and cashews with our favorite side dish, broccoli. And, so very easy to make!! If in a pinch, you could probably use frozen broccoli too, but I haven't tried.

1 ½ pounds fresh broccoli, cut into bite size pieces
⅓ cup butter
1 tablespoon brown sugar
3 tablespoons soy sauce
2 teaspoons white vinegar
¼ teaspoon ground black pepper
2 cloves garlic, minced
⅓ cup chopped salted cashews

Steps:

  • Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
  • While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

2 tablespoons reduced-fat mayonnaise

Zest of 1 lemon
1/4 teaspoon garlic powder
Kosher salt
1 pound fresh broccoli, florets removed and separated
2 tablespoons melted butter
Freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • In a small bowl combine Parmesan cheese, cashews, lemon zest, garlic powder, and pinch of salt, and set aside.
