HEALTHY BROCCOLI CHEDDAR TOTS RECIPE BY TASTY

Steps:
- Grate the broccoli with a coarse cheese grater.
- Transfer the grated bits to a medium bowl and season with a ¼ teaspoon of the salt. Mix the broccoli until well incorporated.
- Let the broccoli sit for 20 minutes until the salt has drawn out some of the moisture.
- Preheat oven to 400°F (200°C).
- Pour the broccoli into a clean kitchen towel and twist to strain as much liquid as you can.
- Place the grated broccoli back into a bowl and mix with the breadcrumbs, chives, cheddar, garlic, remaining ¼ teaspoon of salt, pepper, and egg, and mix until well combined.
- Form the mixture into 15 even sized tots and transfer to a parchment lined baking sheet.
- Bake for 20-24 minutes, flipping each halfway through.
- Serve with your choice of dipping sauce.

Steps:
- Chop the broccoli into medium sized florets (leave a good amount of the stem for a nice shape; see the photo or How to Cut Broccoli).
- Add the olive oil to a large skillet and heat it on medium high heat. Add broccoli and salt. Cook 3 to 4 minutes until starting to brown, stirring occasionally.
- Sprinkle the grated Parmesan cheese over the broccoli, followed by the cheddar cheese. Add 1/4 cup water to the bottom of the skillet and cover with a lid. Cook another 1 minute until cheese is melted and the water cooks out. Serve immediately!
BAKED BROCCOLI CHEESE BALLS
You'll be surprised how much broccoli is crammed into these! They certainly don't taste healthy - but they are. They are juicy and moist inside, golden on the outside, they stay pretty round after baking, and are gorgeous to serve as a vegetarian main or as bites! Serves 3 - 4 as a main. - Preheat oven to 200C/390F (all oven types).
- Line tray with baking / parchment paper. (Note 2)
- Place all ingredients (except oil spray) in a bowl. Mix well to combine, mashing up the broccoli as you go (like when you are cooking mince).
- Scoop up a heaped tablespoon, then press in firmly. Flick out into your hand then form into a ball. Place on tray. Repeat with remaining mixture - should make 15 - 18 balls.
- Spray with oil then bake for 25 minutes, or until the surface is slightly crisp and golden.
- Serve with Lemon Yoghurt Sauce - it also goes great with ketchup!
- Sauce: Mix ingredients together then set aside for at least 20 minutes to allow the flavours to meld.

- Preheat the oven to 375°F (190°C).
- To make the flax egg, combine the flax meal and water in a small bowl and set aside.
- Over high heat, bring a small pot of water to a boil. Add the broccoli florets and cook for 4-5 minutes, or until tender. Remove with a slotted spoon and transfer to a cutting board.
- Finely chop florets to the consistency of rice.
- Transfer the broccoli to a medium bowl and add the quinoa, garlic powder, onion powder, salt, pepper, nutritional yeast, baking powder, flax egg, and flour. Stir well until the ingredients are evenly distributed.
- Use your hands to form bite-sized patties, about 1½-2 tablespoons each.

- Preheat the oven to 350 degrees F (175 degrees C). Cook broccoli according to package directions. Drain, and cool.
- In a large bowl, whisk together the eggs, onion, parsley, poultry seasoning, salt and pepper. Stir in the bread crumbs, Parmesan cheese, margarine and milk. Mix in the broccoli last. Let the mixture stand for about 10 minutes. It should thicken, but if not, add a little more bread crumbs. Roll the mixture into small balls, and arrange on a greased baking sheet.

- Heat oil in deep-fryer to 375 degrees F (190 degrees C).
- Place broccoli in a medium saucepan with 1 cup boiling water. Return to a boil. Cook covered until firm but tender, about 5 minutes.
- In a medium saucepan over low heat, melt the Cheddar cheese. Mix in the broccoli. Allow the mixture to cool and thicken approximately 15 minutes.
- In a medium bowl, mix the bread crumbs, salt and pepper. Spread the mixture onto a large piece of wax paper.
- Form the broccoli cheese mixture into balls and roll in the bread crumb mixture until thoroughly coated.
- Deep fry the balls until golden brown, about 5 minutes. Drain on paper towels.

- To make the sauce: In a small bowl, stir together the mustard and honey. Set aside.
- Chop florets into small pieces or pulse lightly in food processor. Toss in a mixing bowl with shredded cheese. Set aside.
- Beat egg and stir in the milk. Sift flour, baking powder, and salt together and combine them with the egg and milk mixture, beating well. Beat in 1/2 teaspoon oil as well. Pour mixture over broccoli and cheese and toss to coat well.
