PEARL ONION BROCCOLI BAKE

Steps:
- Preheat oven to 350°. Cook broccoli in 1 in. of water until almost tender; drain. Cook pearl onions in 1 in. of water until almost tender; drain. Transfer both to a greased 13x9-in. baking dish., In a large saucepan, melt 1/4 cup butter; whisk in flour, salt and pepper until smooth. Gradually whisk in milk. Bring to a boil; cook and stir until thickened, 1-2 minutes. Reduce heat; stir in cream cheese until blended. Add to vegetables; stir gently to coat. Sprinkle with cheddar cheese., Melt remaining butter; toss with bread crumbs. Sprinkle over casserole. Bake, uncovered, until topping is golden brown, 25-30 minutes.

BROCCOLI PEARL ONION CASSEROLE
Steps:
- Preheat oven to 350 degrees F.
- Bring a large pot of water to boil and add the broccoli. Cook for 4 to 5 minutes, or just until barely tender when pierced with the tip of a sharp knife. Use a slotted spoon to transfer the broccoli to a colander to drain and then transfer it to the prepared baking dish.
- Return the same pot to the heat (no need to change water) and return the water to a boil. Add the pearl onions and cook for 3 to 4 minutes, or until just tender. Drain and transfer to the baking dish with the broccoli.
- Melt 3 tablespoons butter in a large saucepan over MEDIUM-LOW heat. Whisk in the flour, garlic powder, salt and pepper until smooth. Gradually whisk in the milk. Increase heat as needed to bring to a boil and cook, stirring, until thickened, about 1 to 2 minutes. Reduce heat to MEDIUM-LOW and stir in the cream cheese until smooth. Pour the mixture over the broccoli and onions in the baking dish and stir gently to coat. Sprinkle with cheddar cheese.
- Tear the slices of bread into pieces and place them in the bowl of a food processor. Process until they are the consistency of bread crumbs. You should have 2 cups of crumbs. Transfer to a small bowl and toss with the Parmesan. Add 2 tablespoons melted butter and toss to combine. Sprinkle the soft bread crumbs evenly over the casserole.
- Bake, uncovered, until the topping is golden brown, about 25 to 30 minutes.

- Trim tough ends from broccoli stalks. Cut broccoli heads crosswise into 3 inch lengths. Cut stalks lenghtwise into 1/3 inch thick lices. Cut flowerets in half if they are thicker than 1 1/2 inches, leave smaller flowerets whole.
- In a large 6 quart pan cook broccoli, uncovered, in about 3 quarts boiling water just until barely tender when pierced (about 5 to 6 minutes). Drain well and arrange in shallow 4 quart casserole. Keep warm.
- While broccoli cooks blend cornstarch into 1 1/3 cups cold water, set aside.
- Wipe pan dry and add onions and oil Cook over high heat, shaking pan often, until onions are browned (about 6 to 8 minutes).
- Remove onions and set aside. Keep warm.
- In pan bring sherry, broth, vinegar, sugar, and currants to boil. Boil uncovered until mixture is reduced to 1 1/3 cups (about 6 to 8 minutes). Stir in cornstarch mixture; bring to boil, stirring. Season to taste with salt.
- Stir onions into hot sauce; Pour over broccoli.
- Can be served warm or at room temperature.
BROCCOLI AND PEARL ONION CASSEROLE RECIPE

- Make cheese sauce: heat milk, flour, butter, salt and pepper in 2 qt saucepan, stirring constantly. boiil and stir 1 minute. Stir in shreddedcheese until melted,; stir in sour cream Heat water to boiling in another saucepan. Add broccoli,k cook about 5 minutes. Remove with slotted spoon and drain well. In same saucepan with boiling water, cook onions about 2 minutes, drain and peel. Spoon broccoli and onions into shallow 2 qt baking dish. Pour cheese sauce over vegetables in medium bowl., mix melted butter and bread crumbs; spoon over broccoli mixture. Bake uncovered at 350 15-20 minutes. Sprinkle with bread crumbs.
SHERRY VINEGAR-GLAZED ONIONS
Traditional creamed onions and buttery glazed onions are perfectly nice, but the sparky tang of vinegar makes this version of the classic much more appealing. The sweet-and-sour flavors are a great foil for the rich, starchy dishes on a Thanksgiving table. Any leftovers can be chopped up to make a lively addition to winter stews and chunky soups.

- In a wide skillet with a lid, heat oil over medium heat until bubbling. Add onions and sauté over medium-low heat for about 10 minutes, gently rolling the onions about so they will brown as evenly as possible.
- Pour in vinegar and 1/4 cup water. Season with salt and a few grinds of pepper. Cover and simmer very gently until onions are perfectly tender but retain their shape. Start testing with a thin sharp knife after 15 minutes; depending on size, the onions may cook in 15 to 25 minutes. (Frozen onions will cook faster.) Taste one to make sure it is completely tender all the way through; do not undercook.
- Using a slotted spoon, transfer onions to a serving bowl. (Onions may be prepared up to this point 2 days ahead. Reserve onions and cooking liquid separately. Reheat onions in reserved liquid, adding water as needed, then transfer them to a bowl.)
- Raise heat and boil liquid to reduce it to a thick glaze. Taste and add salt, pepper and sweetener to taste. Stir in parsley and serve hot or warm.
ROASTED BROCCOLI WITH VINEGAR-MUSTARD GLAZE
On its own, roasted broccoli is a treat: caramelized and crisp-tender, with frizzled florets and sweet stems. To prevent overcooking, roast at a high heat and on one side the whole time. Flipping the broccoli to brown on both sides increases the chance that it will dry out or turn to mush before the outsides are as caramelized as you like. To give the broccoli a little pizzazz, this recipe takes inspiration from a classic mustard pan sauce, which makes chicken breasts or steaks sparkle. Toss the broccoli with butter, vinegar and Dijon mustard right out of the oven, and the heat from the sheet pan will meld them into a silky, bright sauce.

- Heat the oven to 450 degrees. On a baking sheet, toss the broccoli with the olive oil, salt and pepper. Arrange in a single layer, cut-sides down, and roast, without flipping, until browned and crisp-tender, 15 to 20 minutes.
- Add the butter, vinegar and mustard to the broccoli on the sheet pan and toss until the butter's melted, scraping up browned bits from the pan as you go. Season to taste with salt and pepper.
CARAMELIZED SHERRIED ONIONS
This is a kicked up version of my Recipe #51649. Garnish a steak or just top a good slice of bread as my DD would do. Top those burgers for the super bowl games. I do love caramelized onions but this is really good with the added sherry gives it a creaminess. This makes a great start to onions soup!

- Add onions and reduce the heat to medium-low.
