BROCCOLI CASSEROLE WITH RITZ CRACKERS

Number Of Ingredients 11

2 16 oz packages of Steamer broccoli florets (prepared)
1 cup milk
½ cup heavy cream
8 ounces Velveeta (cubed)
1 teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon black pepper
1 teaspoon Italian seasoning (divided)
1 cup shredded sharp cheddar cheese
1 sleeve Ritz crackers (crushed to fine crumbs)
1 tablespoon butter (melted)

Steps:

  • Preheat the oven to 350°F and prepare a 9x13 casserole dish by greasing it with nonstick cooking spray.
  • Prepare and drain the broccoli florets. Spread the cooked broccoli in an even layer in the dish.
  • In a large saucepan, heat the milk, heavy cream, Velveeta, garlic powder, onion powder, black pepper, and ½ teaspoon Italian seasoning over medium heat. Cook until the cheese is fully melted, stirring constantly.
  • Remove the pan from heat and stir in the sharp cheddar cheese until melted.
  • Pour the cheese sauce over the top of the broccoli in the pan. Bake in the preheated oven for 20 minutes.
  • While the casserole is cooking, combine the crushed Ritz crackers, butter, and remaining Italian seasoning. Stir until well mixed.
  • Remove the casserole from the oven and top with cracker mixture. Return to oven and bake for an additional 10 minutes, until crackers are browned.

32 ounces frozen broccoli florets
1/2 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
16 oz Velveeta cheese (cut into small cubes no larger than 1" in size)
1 cup sharp cheddar cheese (grated)
1 sleeve Ritz Crackers (crushed)
2 tablespoons salted butter (melted)

Steps:

  • Preheat the oven to 350 degrees. Prepare a 9X13 baking dish by spraying the bottom and sides with non-stick spray. Set aside.
  • Boil the broccoli florets in salted water for 3 minutes, drain them, and put them into a large mixing bowl.
  • Season the broccoli with salt, pepper, garlic and onion powder. Stir the Velveeta Cheese into the broccoli until fully incorporated and all the cheese is melted.
  • Pour the broccoli cheese mixture into the casserole dish and distribute evenly. Sprinkle the shredded cheddar evenly on top of the broccoli.
  • Mix the crushed ritz crackers with the melted butter then sprinkle on the top of the casserole. Bake for 25-30 minutes until the cheeses are bubbly. Remove from oven and serve immediately.

This classic Ritz Broccoli Casserole is quick and easy to prep, but turns into a truly special side dish!

2 pounds frozen broccoli, thawed
1 (10-oz) can cream of mushroom soup
1/2 cup mayonnaise (OR 1/4 cup mayo and 1/4 cup sour cream)
1 cup shredded cheddar cheese
2 teaspoons lemon juice
1/2 teaspoon garlic powder, or more to taste
2 sleeves Ritz crackers, crushed (about 6 ounces; more or less to taste)

Steps:

  • Heat oven to 350°F. Lightly grease a shallow 7x11 inch casserole dish.
  • Place thawed broccoli in large colander and rinse under warm water to remove any lingering ice. Drain well and gently pat dry with paper towels.
  • Combine broccoli with remaining ingredients (EXCEPT for Ritz crackers) in a large bowl, making sure not to break up broccoli florets. Spread mixture in prepared casserole dish.
  • Sprinkle with cracker crumbs, then bake for 30-35 minutes or until casserole is hot and bubbly and topping is golden. Serve immediately.

1 cup condensed cream of mushroom soup
2 (10 ounce) packages frozen chopped broccoli, thawed
1 cup shredded Cheddar cheese
1 onion, chopped
½ cup butter, cut into pieces
¾ cup crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat an oven to 325 degrees F (165 degrees C).
  • Beat the eggs in a mixing bowl; whisk in the mayonnaise, cream of mushroom soup, broccoli, Cheddar cheese, onion, and butter. Spoon into a 2 quart casserole dish; sprinkle with the crushed crackers.
  • Bake in the preheated oven until hot and bubbly, 30 to 40 minutes.

First Place Broccoli Casserole With Ritz Crackers image

This recipe won first place in 1978 at the county fair. I make it over the holidays and everyone raves about it. There are some similar recipes on Recipe Zaar, but this recipe is different enough in my opinion to make it slightly better. You can use fresh or frozen broccoli, although the recipe calls for 2 packages, frozen chopped broccoli.

1 cup grated sharp cheddar cheese
2 eggs, beaten
1 cup mayonnaise
1 (10 ounce) can celery soup
2 teaspoons chopped onions
frozen chopped broccoli, cooked and drained (I use around 6 cups)
1 stack Ritz cracker
1/2 cup butter

Steps:

  • Mix all above ingredients together, except butter and crackers.
  • Put into 2-quart casserole.
  • Melt butter in pan and saute stack of crumpled Ritz crackers.
  • Spread over casserole.
  • Bake at 350 degrees.
  • Bake 30-35 minutes.

1 head fresh broccoli
1 (10 3/4 ounce) can cream of mushroom soup
1 cup mayonnaise
1/2 medium onion, chopped
2 eggs
2 cups grated cheddar cheese
24 Ritz crackers (1 full tube, 24 is approx, I just guessed for the recipe)
3 tablespoons butter
salt, to taste
pepper, to taste
garlic salt, to taste

Steps:

  • Par boil the broccoli for approx 5-10 minutes, (Still"crispy", you dont want it mushy).
  • Cut broccoli into bite size pieces and put in 9x13 baking dish.
  • Mix mushroom soup, mayonaise, onion, eggs, cheese and seasonings together.
  • Pour over broccoli.
  • Top with crushed Ritz Crackers.
  • Dot with butter.
  • Bake at 350 degrees for 40 minutes uncovered.

This is a variation of the ones posted. It makes a large pan but can be easily halfed. For the topping you may want to add the melted butter one stick at a time to your taste...some people think four sticks makes it too buttery.

3 heads broccoli
12 ounces sliced fresh mushrooms
1 lb shredded cheddar cheese
2 (8 ounce) cans sliced water chestnuts, drained
Ritz cracker (four tubes)
1 lb butter or 1 lb margarine

Steps:

  • Preheat oven to 350 degrees.
  • Cook broccoli to beginning tender, drain and place in 9x13 pan.
  • Place sliced mushrooms over broccoli.
  • Place water chestnuts over sliced mushrooms.
  • Sprinkle cheese over vegetables.
  • Melt margarine/butter.
  • Smash crackers and mix with melted margarine/butter.
  • Place cracker mixture over vegetables and cheese.
  • Bake 45 minutes - 1 hour.
